SWEDISH MEATBALLS I
This is one of my husband's favorites. I created it using several other Swedish meatball recipes that didn't quite make the grade.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, whisk together the egg and the milk. Add the beef, cream of wheat and onion and mix well. Shape into 1 inch balls. Place balls on a lightly greased baking sheet.
- Bake at 350 degrees F (175 degrees C) for about 20 minutes.
- Drain meatballs on paper towels, if needed. Then place meatballs in a lightly greased 2 quart casserole dish. In a separate medium bowl, combine the soups with the evaporated milk, stirring until smooth. Pour over the meatballs.
- Bake uncovered at 350 degrees F (175 degrees C) for another 40 minutes. Sprinkle with parsley before serving.

- Grate onion using a standard box grater (see video).
- Scrape onion and juices into bowl. Add bread and mix well - onion juice should make bread soggy (if not, add a tiny splash of milk). Set aside to soak for 1 minute.
- Add remaining Meatball ingredients EXCEPT oil. Mix well.
- Using a tablespoon measure and measure out a heaped tablespoon (or use ice cream scooper which is what I do), dollop on work surface. Repeat with remaining mixture: 25 - 30 meatballs. Then roll into shape.

SWEDISH MEATBALLS (SVENSKA KOTTBULLAR)
Our family's traditional Christmas recipe, frequently doubled and kept warm in a crock pot. Worth the effort, and the meatballs are even better the next day! Reserve brown gravy and add sour cream to it the day you serve the leftovers.

- Preheat oven to 350 degrees F (175 degrees C).
- Place the bread crumbs into a small bowl, and mix in the cream. Allow to stand until crumbs absorb the cream, about 10 minutes. While the bread is soaking, melt 1 teaspoon of butter in a skillet over medium heat, and cook and stir the onion until it turns light brown, about 10 minutes. Place onion into a mixing bowl; mix with the ground beef, ground pork, egg, brown sugar, salt, black pepper, nutmeg, allspice, and ginger. Lightly mix in the bread crumbs and cream.
- Melt 1 tablespoon of butter in a large skillet over medium heat. Pinch off about 1 1/2 tablespoon of the meat mixture per meatball, and form into balls. Place the meatballs into the skillet, and cook just until the outsides are brown, about 5 minutes, turning the meatballs often. Insides of the meatballs will still be pink. Place browned meatballs into a baking dish, pour in chicken broth, and cover with foil.
- Bake in the preheated oven until the meatballs are tender, about 40 minutes. Remove meatballs to a serving dish.
- To make brown gravy, pour pan drippings into a saucepan over medium heat. Whisk the flour into the pan drippings until smooth, and gradually whisk in enough beef broth to total about 2 1/2 cups of liquid. Bring the gravy to a simmer, whisking constantly until thick, about 5 minutes. Just before serving, whisk in the sour cream. Season to taste with salt and black pepper. Serve the gravy with the meatballs.

- Start with your chicken meatballs. Preheat your oven to 400 degrees and spray a baking pan with non-stick spray. Once done, add all ingredients to a large mixing bowl. Using your hands, combine well. Using a spoon or just eyeballing it, roll about 20 meatballs and place on your prepared baking sheet. Bake for 25 - 30 minutes.
- While your meatballs are baking, make your sauce. To a large saucepan, melt butter over medium high heat and once melted, whisk in flour. Continue to cook flour while whisking it for the next minute before pouring in beef stock. Whisk to remove any flour lumps. Add in seasonings, soy sauce, Dijon mustard, Parmesan cheese, sour cream and bring gravy sauce to a low boil before reducing heat to low to simmer.
- Once your sauce is simmering, set a large pot of salted water to boil. Cook your noodles according to the packaging instructions.
- When your chicken meatballs are cooked, move them from the baking pan right into the gravy sauce and let simmer for about five minutes. Serve your meatballs over you noodles and garnish with a bit of fresh parsley.

SWEDISH MEATBALLS RECIPE

- In a bowl combine the panko crumbs with milk. Add remaining ingredients for the meatballs and mix well. Shape into 24 meatballs.
- Add 2 Tbsp oil to a large skillet over medium heat. Once hot, cook meatballs in 2 batches until golden brown and cooked through (6-7 minutes), turning as needed. Add more oil as needed. Remove from the skillet and cover to keep warm.
- In the same skillet, melt the butter. Quickly whisk in the flour and cook until golden.
- Stir in the broth, heavy whipping cream, Dijon and season with salt and pepper to taste. Bring the sauce to a simmer and cook it thickens.
- Add back the meatballs and toss in the gravy sauce. Cook until meatballs are heated through.

SWEDISH MEATBALLS

- In a large nonstick skillet, heat olive oil over medium heat and add onions and garlic. Sauté until onions are translucent, about 4-5 minutes. Add celery and parsley and cook until soft, about 3-4 more minutes. Set aside to cool.
- In a large bowl, combine beef, turkey, egg, onion mixture, breadcrumbs, ¼ teaspoon salt, pepper and allspice. Mix well and form into 16 meatballs.
- Add beef broth to the pan and bring to a boil. Reduce the heat to medium-low and slowly drop meatballs into the broth. Cover and cook about 20 minutes, until cooked through.
- Remove the meatballs with a slotted spoon and set aside in a serving dish. Strain the broth, transfer to a blender with cream cheese and blend until smooth. Return to the skillet with the meatballs and simmer

- In a large mixing bowl, combine the breadcrumbs with the milk, egg, onion, garlic, salt, pepper, and allspice. Let stand for 10 minutes.
- Add the ground beef and pork to the breadcrumb mixture. Mix with your hands until combined.
- Using a standard size cookie scoop, portion meat into balls. Roll in your hands to create a smooth, even ball. Set aside on a piece of parchment paper.
- In a large nonstick skillet set over medium heat, add the butter and oil. Once hot, place the meatballs around the pan, leaving about a 1/4 of an inch between each meatball, more if possible.
- Carefully fry the meatballs until golden brown on each side (ensuring that they are fully cooked throughout, a meat thermometer can help). Transfer to a paper towel-lined plate, set aside. Remove any large bits remaining in the pan with spoon.
- In the same skillet, add the butter for the gravy. Once melted, add the flour and whisk until it turns golden brown. Slowly whisk in the chicken broth, and beef broth. Bring the mixture to a low simmer. Add the dijon, worcestershire, soy sauce, salt, and pepper. Whisk in the half and half. Let thicken for a minute.
- Return the meatballs back to the pan and serve, or serve the meatballs alongside the gravy.

- Preheat oven to 400°F and line a baking sheet with a silicone mat
- In a large bowl combine meatball ingredients by hand
- Measure and roll approximately 40 (1 inch) meatballs and placed on your prepared baking sheet.
- Place baking sheet into preheated oven and cook for 30 minutes.
- In a large sauce pan over medium heat, melt butter and whisk in flour. Cook for about one minute until bubbly. Add chicken broth, pepper, Dijon mustard, sour cream, Parmesan cheese and stir to combine. Once a low boil is reached, reduce heat to low and continue to simmer until meatballs are done.
