Number Of Ingredients 14

1/2 cup unsalted butter (* room temperature (1 stick))
1 1/2 cups granulated sugar
2 large eggs
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp salt
1 tsp baking soda
1 tsp nutmeg
1 tsp cinnamon
3 cups chopped and paried apples (*small chunks, aout 2 1/2 med apples)
1/2 cup roughly chopped pecans
1 1/2 cups light brown sugar (*lightly packed)
2 tbsp milk (*or half and half)
3 tbsp butter

Steps:

  • Preaheat oven to 350℉ and grease a 9 inch springform pan. Set aside.
  • Cream butter with sugar. Add eggs and vanilla, beat well
  • In a seperate medium bowl sift flour, salt, spices and baking soda. Stir well.
  • Working in 2 batches add dry mixture to wet. Mix just until mixed making sure to scrape down sides of bowl.
  • Stir in apples and nuts.
  • Bake for 40 mins before adding topping.
  • After 30 mins of baking add caramel topping ingredients to a small sauce pan. Heat on low until butter is melted and sauce is well blended. (Note: The sugar in the sauce doesn not have to be melted. The ingredients just need to be well incorporated.)
  • Once the first 40 mins of baking is done, remove cake from oven and place springform pan onto sided cookie sheet (to help prevent any spillage from caramel sauce). Pour caramel topping evenly over the top of cake and return cake to oven. Bake for an addittional 20 minutes.
  • Let cool enough to eat. Serve either warm or cool.

FLUFFY SWEDISH APPLE CAKE

Fluffy Swedish Apple Cake image

This is a favorite cake in Sweden. It's a simple, buttery cake filled with cinnamon-sugar apple slices. It reminds me of a pound cake, but with a yummy apple cinnamon topping. The presentation is made really pretty by arranging the apple slices. You can serve this as a coffee cake or as a dessert. You can re-heat slices in the microwave if you like it warmed. SWEDISH APPLE CAKE - APPELKAKA

Swedish Apple Cake - Appelkaka image

Posted for ZWT6 Scandinavian Region - Sweden. Oh boy does this sound heavenly. I can't wait to try it out. If you do not have biscotti you can process into crumbs they state you can use almond rusk crumbs, zwieback crumbs, or fine dry bread crumbs (even though I don't think I'd like the idea of bread crumbs - just my opinion).

Provided by HokiesMom

Categories     Breakfast

Time 1h10m

Yield 1 cake, 10-12 serving(s)

Number Of Ingredients 11

3 tablespoons biscotti, crumbs
1 cup butter, at room temperature
1 cup sugar
3 tablespoons sugar
4 eggs
1 1/4 cups cake flour
1 teaspoon baking powder
2 teaspoons ground cinnamon
4 apples, pared
4 apples, sliced into 8 wedges
1/3 cup almonds, coarsely chopped

Steps:

  • Preheat oven to 350º. Butter the bottom and sides of a 10-inch spring-form pan or cake pan. Sprinkle the crumbs in the pan, being sure to coat the bottom and sides as evenly as possible.
  • In a mixing bowl, combine 1 cup sugar with butter. Add one egg at a time until all are incorporated.
  • Sift together the flour and baking powder. Gradually mix the dry ingredients into the bowl until a smooth batter is formed. Pour batter into pan.
  • Toss the apple slices in the cinnamon and 3 tablespoons remaining sugar, then press each one lightly into the batter to form a decorative pattern (pinwheel pattern is the prettiest). Scatter chopped almonds across the top.
  • Bake for 1 hour, or until a toothpick inserted in the center of the cake comes out clean.

APPLE STRIPS

Bar-sized apple pie. When I make this recipe, I sub greek yogurt for the sour cream and add more than stated - until it is a good texture to roll. Also, I roll between 2 sheets of waxed paper, peel the top piece, lay back down, flip over, peel the other sheet and flip onto pan.

I won 1st place in an apple bake-off contest with this recipe. It is the easiest and best apple pie I have ever tasted. It has no crust, believe me, it doesn't need one. I always use Granny Smith apples because they are the best apples for pies. Enjoy!!!!

  • Make the Tangzhong: Combine water, milk and flour in a medium saucepan. Whisk until combined and no lumps remain. Place saucepan over medium heat and cook mixture, whisking constantly, until it thickens, about 1-2 minutes. Set aside to cool.
  • Make the dough: While the Tangzhong is cooling, begin preparing the rest of the ingredients for the dough. Combine yeast, salt, sugar and flour in the bowl of a stand mixer. Whisk briefly by hand to combine.
  • Attach the dough hook to the mixer. Add melted and cooled butter, slightly warm milk, egg and the cooled Tangzhong (it can be slightly warm to the touch) to the dry ingredients. Mix on medium low until fully combined.
  • Increase mixer speed to medium and knead mixture for 3-4 minutes or until dough is slightly tacky but not sticky and clears the side of the bowl. It’s okay if it’s sticking to the bottom of the bowl slightly. If it seems too sticky, add another tablespoon of flour and mix for another 1-2 minutes. You can also mix and knead the dough by hand but it will take longer, more like 8-10 minutes.
