- Fill a large pan with cold water, add a good pinch of sea salt and put it on a high heat. Peel 1 large swede (roughly 1kg), and cut it into 2cm chunks. Once the water is boiling, add the swede and cook for 15 minutes. Meanwhile, peel 1kg of potatoes and cut them into 2.5cm chunks. When the 15 minutes is up, add the potatoes and cook for a further 10 to 15 minutes, or until everything is soft and cooked through. Drain, leave to steam dry for a minute, then mash with a good pinch of salt and white pepper and a knob of butter.

- Boil the vegetables in salted water for 10 minutes or until tender.
- Drain and let the vegetables steam dry for 5 minutes before mashing with the olive oil until desired consistency.
- Stir in the nutmeg and pepper. Serve immediately.

Steps:
- Heat oven to 200C/180C fan/gas 6. Toss the swede in olive oil in a shallow roasting tin, then season. Roast in the oven for 35-40 mins, tossing occasionally, until the swede is golden and soft.
- Stir in the honey and cumin seeds, and continue to roast for 10 mins until just starting to catch. Remove and stir through the chilli and coriander to serve.

- *NOTE: swedes are known in US as rutabagas. I've also used yams/sweet potatoes, turnips and fingerlings in this recipe. ~fyi~.
- Feel free to use any single vegetable or a mixture of your favorites. Cookgirl says that a mixture of root vegetables is the way to go!
- Peel the root vegetables then chop up into golf-ball sized pieces, place in salted boiling water and cook until very tender.
- Drain in a colander.
- Place the vegetables back in the pan and mash with a potato masher.
- You can mash them as smooth or as chunky as you like. Season with salt and pepper, then enrich the flavor with extra virgin oil or butter, or both, to taste. (I prefer using both olive oil and butter.).
- Jamie continues to say: once cooked, the mashed vegetables can be kept warm in a bowl covered with kitchen foil over simmering water. This is handy when cooking for a dinner party -- (especially when timing is of utmost importance.).
ROASTED SWEDE WITH PARMESAN
Make these chips as the perfect accompaniment to fish and also haggis. You might want to make extra, as these will be gobbled up in no time

- Heat oven to 220C/fan 200C/gas 7. Tip the swede, olive oil, 40g of the parmesan and the rosemary leaves into a shallow roasting tin. Season and toss well, arranging in one layer.
- Sprinkle over the remaining parmesan, dot with butter, then add the garlic cloves. Roast for 30-35 mins, turning halfway through cooking, until crisp and golden.
