SWEET POTATO & PARSNIP BAKE



Sweet potato & parsnip bake image

A make-ahead vegetarian side dish that's high in fibre and provides a good source of vitamin C

800g sweet potato , peeled and cut into chunks
800g parsnip , peeled and cut into chunks
200ml tub reduced-fat crème fraîche
2 tbsp shredded sage
4 tsp wholegrain mustard
butter , for greasing
1 slice granary bread , finely chopped
50g coarsely grated vegetarian-style parmesan
3 tbsp pine nut

Steps:

  • Boil the sweet potatoes and parsnips for 20 mins in salted water until tender. Drain really well, then roughly mash with half the crème fraîche and half the sage, the mustard and salt and pepper. Pile into a buttered ovenproof dish and smooth over.
  • Heat oven to 190C/170C fan/gas 5. Mix the breadcrumbs with the Parmesan, pine nuts and remaining sage. Spoon the remaining crème fraîche over the mash, scatter over the bread and cheese mixture, then bake for 35-40 mins from fridge-cold, 25-30 mins if not, until golden.

1 medium swede (about 600g), peeled and cut into chunks
500g parsnips , peeled and cut into chunks
25g butter , plus a little extra
4 tbsp golden syrup
200g fresh breadcrumbs
2 eggs , lightly beaten
1 tbsp olive oil
2 thyme sprigs, leaves stripped

Steps:

  • Bring a large pan of water to the boil, and add the swede chunks. Boil for 3 mins, then add the parsnips and boil the lot for 12 mins more or until tender. Drain well, then tip both together into a pan or bowl and mash well with the butter. Stir in the golden syrup, three-quarters of the breadcrumbs and the eggs with plenty of seasoning. Transfer to a baking dish and smooth the surface. Toss the remaining breadcrumbs with the oil, seasoning and thyme leaves, then scatter over the mash. Dot with a few knobs of butter. The dish can now be covered and chilled for up to 48 hrs, or frozen for up to a month - defrost completely before baking.
  • To serve, heat oven to 200C/180C fan/ gas 6 and bake for 40 mins or until piping hot and the crumbs are crisp.

  • Heat the oven to 220 ̊C, fan 200 ̊C, gas 7. Toss the parsnips with the honey, 1 teaspoon of mustard, 1⁄2 tablespoon of oil and some seasoning. Spread out in a large shallow roasting tin. Add the sausages, pricking each a couple of times with a fork. Roast for 20 minutes, turning halfway.
  • Meanwhile whisk together the remaining olive oil, mustard and vinegar to make a tangy dressing. Season to taste.
  • Tip the lentils and then the kale into the roasting tin. Sprinkle over 2 tablespoons of water then return to the oven for a further 3-4 minutes until the kale has wilted and the lentils are heated through. Pour in the dressing then mix everything together to serve
