Steps:
- Melt butter in 4-quart dutch oven.
- Add apples and onions, sauté slightly.
- Add finely shredded cabbage, red wine, cloves, sugar, and bay leaves.
- Simmer, covered, for 1 hour.
- Then add the remaining ingredients.
- Heat to melt the butter and serve immediately.
MY FAVORITE SWEET AND SOUR RED CABBAGE
I have tried several different versions of this recipe, but this is my favorite. I think the caraway and celery seed is what makes the difference. The recipe is from Taste of Home magazine and is credited to Karen Gorman.

Steps:
- In a small bowl, combine vinegar, brown sugar, caraway and celery seeds; set aside.
- Place cabbage and onion in a saucepan; add a small amount of water.
- Cover and steam until tender, about 15 minutes.
- Add vinegar mixture and toss to coat.
- Season with salt and pepper.
- Serve warm.

- In a heavy saucepan, cook the bacon, onion, and apples over medium-low heat until onions are limp, about 3 minutes. Add the cabbage. Cook about 10 minutes, uncovered, over medium heat until the cabbage wilts, stirring now and then. Add the remaining ingredients. Reduce heat to low, cover, and cook for 20 minutes. The cabbage should be moist, but not juicy. If liquid accumulates, remove lid at the end of the cooking period to cook off some liquid.
- If sauerkraut is not served at a holiday table, this might be a very delicious substitute. The addition of bacon to the traditional sweet-and-sour red cabbage gives it smoky undertones. This can be made in advance and reheated.
- For vegetarians, substitute a LITTLE smoke flavor for the bacon.

EASY SWEET AND SOUR RED CABBAGE SAUTE
Since red cabbage is one of my favorite veggies, I have collected many recipes, this is another easy favorite that makes a wonderful side dish to turkey, or beef. I like to add in chopped cooked bacon, but that is optional. The amounts can be doubled to serve more than 4.

Steps:
- Heat oil in a large saucepan over medium heat.
- Add in onion and saute until golden (about 7-8 minutes).
- Add in sliced cabbage, cider vinegar, sugar, celery seeds and black pepper; mix to combine and cook until the cabbage if crisp-tender and the liquid is reduced to a glaze (about 10-12 minutes).
- Season with salt.

SWEET-SOUR RED CABBAGE-GERMAN
I got this out of my (wedding gift) 1973 Betty Crocker Cookbook. I have been making it for years. My mother in law is German and she can't believe I didn't get this out of a German cookbook. I have to make it ever year at Thanksgiving for my Step Dad (he loves it). I like to prepare this the day before and reheat it. The flavors blend together so much better. Hope you enjoy!

Steps:
- Prepare and cook 5 cups shredded cabbage by heating 1/2 inch salted water (about 1/4 tsp) and 2 tbs vinegar, add cabbage. Cover and heat to boiling; cook about 10 minutes. Drain.
- Fry bacon until crisp; remove and drain.
- Pour off all but 1 tbs bacon drippings.
- Stir brown sugar and flour into bacon drippings in skillet.
- Add water, vinegar, the salt, pepper and onion.
- Cook, stirring frequently, about 5 minutes or until mixture thickens.
- Add bacon and sauce mixture to hot cabbage; stir together gently and heat through.
