CLASSIC JAPANESE SUSHI RICE
Perfect sushi starts with perfect rice. Here's an easy recipe for Japanese sushi rice, which is a sticky rice seasoned with vinegar and sugar.

Steps:
- Gather the ingredients.
- Put the rice in a large bowl and rinse it by covering it with cold running water and gently mixing it around using your hand. Carefully pour out the water and repeat rinsing until the water becomes almost clear.
- Drain the rice in a colander and set aside for 30 minutes.
- Place the rice in a rice cooker and add the water. Let the rice soak in the water for at least 30 minutes.
- Start the cooker and set it according to your cooker's instructions. When the rice is cooked, let it steam for about 15 minutes.
- Prepare the sushi vinegar by mixing the rice vinegar, sake-mash vinegar (if using), sugar, and salt in a saucepan. Put the pan over low heat and cook until the sugar dissolves. Set aside to cool.
- Spread the hot steamed rice onto a large plate or in a large bowl.
- Sprinkle the vinegar mixture over the rice and quickly fold the rice with a shamoji (rice spatula) or wooden spatula. Be careful not to smash the rice.
- To cool and remove the moisture of the rice, waft a handheld paper fan over the sushi rice as you mix it. This will give the sushi rice a shiny look.
- It's best to use the sushi rice right away to make rolls with your favorite fillings.

- Pour vinegar, sugar, and salt into a saucepan.
- Heat on a low flame, stirring constantly with a wooden spoon, just until the sugar and salt are dissovled.
- Cool to room temperature and add the kombu and sake. Pour into a mason or other jar with a cover. Keep out of sunlight in a cool dark place (refrigeration unnecessary). Keeps indefinitely.

- Prepare rice for the sumeshi. Place rice in a large bowl. Pour water to cover the rice. Wash it with your hand moving in circular motion then quickly discard the water. Repeat the process 5 to 6 times until water becomes clear. Drain well. Alternative way: Place rice in a fine mesh colander. Rinse under running water. Use a hand moving in circular motion to rinse thoroughly until water becomes clear. Drain well.
- Transfer the rice to preferably a cast iron pot with a heavy lid or something similar. Pour water and make the rice leveled. Place kombu sheet on top of the rice (submerge in the water) and cover with the lid.
- Cook over slightly higher than medium heat. In about 10-15 minutes, it starts almost boiling (you will see the bubbles.) At this point, open the lid and use a rice paddle to give a quick stir from the bottom. Make the rice leveled again then cover with the lid. Reduce the heat to low and continue to simmer for 10 minutes. After the 10 minutes, turn off the heat. Keep the lid on and let it stand for 10 minutes.
- While rice is still cooking, start preparing the toppings & condiments. For grapefruit, slice off the top and bottom end. Then place it cut-side down and carefully slice off the entire peel & membrane.
