SUSHI RICE MADE IN BAMBOO STEAMER

Sushi Rice Made in Bamboo Steamer image

Foolproof way to cook short grain rice; no more burnt pans to clean up! The only special equipment needed is a bamboo steamer and two dish cloths. I've found that soaking the rice for 8+ hours works best.

Provided by Galley Wench

Categories     Short Grain Rice

Time 35m

Yield 4 Cups

Number Of Ingredients 5

2 cups rice (use only short grain)
1/4 cup sugar
1/2 cup rice wine vinegar
2 tablespoons mirin
1 teaspoon salt

Steps:

  • Measure out the amount of rice desired into a mesh colander.
  • Rinse the rice grains three times with cold water.
  • Pour the rice into a bowl and cover it with cold water.
  • Cover the bowl and allow the rice to soak for two to eight hours. (The longer the rice soaks, the shorter the steaming time.).
  • Take the lid and upper baskets off of the bamboo steamer.
  • Line the bottom basket with a clean damp cloth (a dish cloth fits perfectly).
  • Drain the rice and pour the grains into the basket on top of the dish cloth. Place another damp dish cloth on top of the grains, folding the corners towards the center.
  • Replace the lid on the basket.
  • Fill a wok about halfway with water and bring the water to a boil.
  • Place the bamboo steamer on the wok; the steamer should not be immersed in the water.
  • Steam the rice for about 30 minutes; checking every 10 minutes during the cooking process to ensure that water has not evaporated and that the cloth has not dried out. ( I usually just pour a 1/4 cup of water over the cloth every 10 minutes);.
  • Check the rice for doneness after 15 minutes. adding more time if needed, being careful not to overcook.
  • Remove rice to a large bowl.
  • Slowly heat vinegar, mirin and sugar until very hot but not boiling.
  • Fold vinegar mixture into the hot rice, add enough so that the rice has a tart/sweet taste.
  • Rice should be shiny, not mushy.
  • Carefully clean inside rim of bowl with damp cloth, cover and let rest for 30 minutes before using.

LOW-CARB CAULIFLOWER RICE SUSHI ROLLS

Low-Carb Cauliflower Rice Sushi Rolls image

The perfect way to scratch your sushi itch if you're trying to limit your carbohydrate intake.

Provided by Tracy Quigley

Categories     Sushi

Time 2h

Yield 3

Number Of Ingredients 9

1 pound cauliflower, cut into florets
5 ounces cream cheese, softened
1 tablespoon rice vinegar
3 teaspoons monkfruit sugar substitute
6 ounces sushi-grade ahi tuna, cubed
1 dash Sriracha hot sauce, or more to taste
3 sheets nori (dry seaweed)
1 medium avocado - peeled, pitted, and sliced
2 tablespoons sesame seeds

Steps:

  • Pulse cauliflower florets in a food processor until riced.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower rice, cover, and steam, stirring occasionally, about 10 minutes.
  • Transfer cauliflower rice to a bowl and stir in cream cheese, rice vinegar, and sweetener. Place in the refrigerator to chill until cold, about 1 hour.
  • Mix the chopped tuna with Sriracha in a separate bowl to desired spiciness.
  • Spread 1/3 of the cauliflower mixture on a plastic wrap-covered bamboo rolling mat until you have a square roughly the size of a nori sheet.
  • Place one sheet of nori on top of the cauliflower rice square. Place 1/3 of the avocado slices and 1/3 of the tuna mixture along one edge on top of the nori. Carefully roll, starting from the edge with the fillings. Sprinkle with 1/3 of the sesame seeds and cut the roll into 6 slices with a sharp knife. Repeat with remaining cauliflower rice, nori, avocado slices, tuna mixture, and sesame seeds.

  • Washing the rice is an imperative step. Place rice in a large bowl with enough water to cover very generously. Agitate with your fingers swirling the rice around and watch the water go cloudy.
  • Put several pints of water in the steaming container to bring it to about 1/3rd to 2/5ths full. Water must not touch the underside of the bamboo steamer basket so be careful not to overfill. If the water touches the rice in the bottom of the basket then you will have a sticky ball of rice! Boil the water.
  • When the timer rings, remove the lid covering the rice and grab the ears of the bamboo basket, taking care as it will be a little hot.

2020-02-07 Making sushi rice correctly is the most important part of the sushi recipe. If you don’t have this correct, then it won’t stick together to make the rolls. I have used both a rice steamer and an instant pot. The rice steamer gives a slightly better texture. But the instant pot doesn’t leave bits stuck to the edge that isn’t usable in sushi…

Bamboo steamers have bottoms comprised of thin, parallel slats through which steam wafts and latticed lids that contain it. A few pieces of vegetable greens usually act as the barrier that prevents rice …

2019-07-19 To cook rice in a bamboo steamer, you’ll need to soak it in water first to remove some of the starch. Some people suggest soaking for one hour, and some suggest soaking it overnight. It’s completely a matter of choice, but soaking the rice in cold water for longer periods of time does reduce the cooking time in the steamer. In any case, once you are ready to cook the rice…

HOW TO USE BAMBOO STEAMER BASKET TO COOK RICE | BY WINTON ...

From medium.com
  • (Preparing to use Bamboo Steamer Basket) Wash the rice by rinsing it in a sieve under cold running water to remove some starch. This will lessen the stickiness after cooking.
  • Drain, then place the rice in the bamboo steamer basket that is lined with muslin, moist steaming cloth or large vegetable leaves such as bok choy or cabbage so that the rice doesn’t fall through, and to hold in the moisture.
  • Place 2 to 3 inches of water in the pot. Heat the water in the pot over a stove to make it boil. Slightly reduce the heat intensity so that the water is still boiling.
  • Steam the rice for about 35 minutes while adding water to the pot as it evaporates. Remove the steamer and use a wooden spoon to turn the rice over.
  • Remove the bamboo steamer from the pot. Place the rice out onto a counter or in a large tray. Use a long-handled wooden spoon to spread it out. Raise the sides to the center so as to build a round lump of rice.

SUSHI RICE IN A BAMBOO STEAMER? : ASKCULINARY
Sushi Rice in a Bamboo Steamer? Most recipes say to do it on the stove but I'm (very unhappily) on a pretty unreliable electric stove right now and don't trust it not to mangle the entire affair. I do have a rice cooker, but it doesn't have a sushi rice setting, so I'm also not sure how I'd make that work.
