SUSHI RICE DIP RECIPE BY TASTY
Here's what you need: sushi rice, water, rice vinegar, sugar, oil, shiitake mushrooms, soy sauce, dark soy sauce, brown sugar, green onion, black sesame seed, avocado, nori, oil sprayer

Steps:
- Wash and rinse the rice thoroughly to remove excess starch. Cook in a medium pot at high until the water reaches a boil. turn to low heat, and let it simmer for about 20 minutes.
- While there is still some water in the pot, add the vinegar and sugar. Stir and remove from heat.
- In a separate pan, add the oil and mushrooms. Cook until they begin to brown.
- Add the soy sauces, green onions, and brown sugar. simmer for 2-3 minutes, adding small amounts of water if necessary.
- Spray a square or round bowl with cooking oil, and press the rice into the edges with the back of a spoon.
- Layer avocado slices around the edges and bottom of the rice.
- Spoon in the mushroom sauce. Cover and pat down another layer of rice to seal in the goodness!
- Place a serving plate on top of the bowl and flip upside-down. Remove the bowl carefully.
- Sprinkle with black sesame seeds. Use a seaweed snack to grab.
- Enjoy!

- Combine all three ingredients in a small saucepan, whisk well to combine.
- Bring to a boil over medium-high heat, reduce heat, and simmer gently until sauce volume has reduced to about 3/4 cup. (If you boil it hard, you will end up with a caramel, not a sauce!)
- Remove from heat, allow to cool to room temperature.
- Once cooled, transfer to fridge and chill until you're ready to use it.
- To serve, spoon sauce into a pastry bag or a sauce bottle (pictured). Cut the tip off the pastry bag (if applicable), squeeze sauce over prepared sushi, as desired.

- Place the fruit on a cutting board lined with parchment. Trim the tops and bottoms of the melons and pineapple and sit them upright on the cutting board. Using a very sharp knife, cut away the rind, slicing lengthwise, working your way around the fruit. Cut about 24 very thin slices of melon in the same fashion, slicing from top to bottom, allowing the juices to collect on the parchment paper.
- Slice the pineapple lengthwise into 1/8-inch slices. Pile and cut into matchsticks.
- Pour the juices that have collected into a small bowl. Stir in the honey and set aside.
- To assemble the fruit sushi, lay the melon slices vertically on the cutting board. Place 3 pineapple matchsticks horizontally at the base of the melon slice and roll. Trim the base so that the rolls sit firmly on a dessert plate. Serve with the honey dipping sauce.

- Add the quinoa and water to a medium saucepan set over high heat. Bring to a boil, then lower the heat and cover. Simmer until the quinoa is mostly cooked through but still on the undercooked side, 15-20 minutes. The water will have absorbed but the quinoa won't quite be translucent. Meanwhile, set a small saucepan over medium heat and add the rice vinegar, honey and salt. Bring just to a simmer and keep warm until the quinoa is ready. Pour the vinegar mixture into the pan with the quinoa, stir well, cover and let sit until the quinoa absorbs the liquid. Remove the quinoa from the heat and let it cool completely.
- While the quinoa cools, mix together the Miso-Sesame Dipping Sauce. Combine the sauce ingredients in a small bowl. Taste and add additional honey if desired. Refrigerate until ready to serve.
- To assemble the sushi rolls, lay the bamboo mat on a flat surface and spread a piece of plastic wrap over the top. Lay one sheet of Nori on top of the plastic wrap. Spread 1/3 of the quinoa on top of the Nori, leaving a slight border at the edges. In the center of the quinoa, arrange 1/3 of the filling ingredients starting with the avocado, followed by cucumber, then the beets, and ending with the sprouts or microgreens.
- To roll, start with the end closest to you. Using the bamboo mat for help, bring the end up and tightly roll over the filling, pressing as you go. Press the edges together to seal. If edges are not sealing well, dip your fingers in a bowl of water and gently wet the edges of the Nori, then try again. With a very sharp knife, cut the sushi into 6-8 slices. Serve with the dipping sauce. Leftovers keep refrigerated in an airtight container for up to 2 days.
