Steps:
- LIne a 9x13 inch pan with parchment or waxed paper.
- In a microwave safe bowl, melt butterscotch chips in the microwave or over a double boiler, stirring every 30 seconds until smooth. Stir in the melted butter and peanut butter. Measure the marshmallows and rice cereal into a large bowl. Pour the butterscotch mixture over the marshmallows and cereal. Stir to coat evenly. Press onto the prepared pan.
- Chill for 20 to 30 minutes, until set. Cut into bars. Store leftovers in the refrigerator.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch pan. Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
- In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
- Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.

SURFER SQUARES

- Pre-heat oven to 350℉ (180℃). In large saucepan melt butterscotch pieces, sugar and butter over medium heat, stirring constantly. Remove from heat. Add egg; beat well. Add flour, baking powder and salt. Stir in remaining ingredients. Spread in greased 8-inch pan. Bake at 350℉ (180℃) for 20 to 25 minutes. Cool; cut into bars. Makes 24.

- Preheat oven to 350 degrees F. Grease a 9×9 square pan.
- In a medium bowl, toss chopped apples with cinnamon and brown sugar.
- In a mixing bowl, combine together 1 and 1/4 cups flour, 1 teaspoon baking powder, and 1/8 teaspoon salt.
- In a separate bowl, whisk together 1 cup of white sugar, vegetable oil, yogurt, and vanilla until very smooth. Add eggs and whisk until smooth.
- Add dry ingredients (flour mixture) into wet ingredients and mix until just combined.
- Pour half of the batter into the greased pan, top with half of the apples, then pour the remaining half of the batter on top of the apple layer. Top with the remaining half of apples.
- Bake the cake for about 45 minutes or 1 hour - until a toothpick inserted into the center comes out clean.
- Dust with powdered sugar before serving.

- Preheat oven to 350°F.
- Grease an 8 inch square baking pan.
- In a large saucepan over medium heat, melt butterscotch pieces, sugar and butter, stirring constantly until all is melted.

- Preheat oven to 350° F. Line a 9x9-inch baking pan with parchment paper and set aside.
- In a large bowl, whisk together flour, baking powder and salt. Add the cold butter and use a pastry cutter to create a crumb-like mixture. Alternatively, the mixture can be combined in a food processor pulsing until pea-sized crumbs form, about 20 seconds.
- In a separate large bowl, whisk together brown sugar, egg and vanilla until combined. Slowly add the flour mixture to the wet mixture and using a rubber spatula (or your hands!) combine ingredients into a crumbly mixture. Press 2/3 of the mixture into the bottom of prepared dish. Make sure it is compact so it creates a sturdy crust for the strawberries.
- In a separate medium bowl, stir together chopped strawberries, sugar and cornstarch. Spoon strawberry mixture over crust. Top with remaining crumble mixture.
- Bake for 40-45 minutes or until the crumble top is golden brown and the strawberry layer is bubbling at the edges. Remove from oven and allow to cool completely at room temperature. Cut bars into 1-1/2 inch squares and serve.

- In a medium saucepan, melt butter over medium-low heat.
- Add butterscotch chips, brown sugar, and stir until melted. Remove from heat. Allow to cool for 10 minutes.

Steps:
- Put marshmallows in large bowl
- Melt peanut butter and butter in saucepan on LOW heat, just until melted! Do not overheat.
- Remove from heat. Make sure mixture is not too hot before adding butterscotch chips or it will crystallize. (I stick my finger in to check that is not too hot)
- Stir in butterscotch chips, continue to stir until all is melted.
- Fold mixture into bowl of marshmallows. Combine well.
- Press into 8x8 greased baking pan.
- Refrigerate until firm.
- Cut into 16 large squares.
