2 6 oz. (170 g) piece prime steak
Salt

1 lb. (0.4 kg) snow crab legs (2 clusters)
Chopped parsley
3 tablespoons melted unsalted butter
Lemon wedges

Steps:

  • Season the steak with salt and pepper.
  • Steam the snow crab legs in a steamer for 5 minutes.
  • In the meantime, fire up a grill and grill each side of the steak for 3 minutes. Turn over to the other site and grill for 3 minutes, for medium well.
  • Plate the steak and the crab legs on two plates, garnish with parsley. Serve with melted butter and lemon wedges.

4 New York Steak strip steaks ((Porterhouse steaks))
Salt and pepper (to season)
1-2 tablespoons olive oil
3 tablespoons unsalted butter, (divided)
8 ounces (250 g) shrimp (deveined, tails on or off)
4 cloves garlic ((or 1 tablespoons minced garlic))
1/4 cup dry white wine (or low-sodium chicken broth)
3/4 cup heavy cream* ((thickened cream))
1/4 cup fresh shredded parmesan cheese
Salt and pepper (to taste)
1 tablespoon fresh parsley (chopped)

Steps:

  • Pat steaks dry with paper towel. Season with salt and pepper.
  • Heat a large cast iron skillet or grill over medium-high heat. Sear/grill steaks for 4-5 minutes each side until browned and cooked to desired doneness.
  • Transfer steaks to a warm plate; set aside.
  • Melt 2 tablespoons butter in the skillet (if using a skillet). Add shrimp to the skillet, season with salt and pepper and sear until just cooked and pink -- about 2 minutes. Transfer to a bowl; set aside.(For grill: grill seasoned shrimp while brushing with melted butter until done.)
  • To the same skillet, add the remaining butter, add the garlic, sauté until fragrant (about one minute). (If grilling meats, you will need to grab a pan or skillet for this step.)
  • Pour in the white wine (or broth), and allow to reduce to half, while scraping any bits off of the bottom of the pan.
  • Reduce heat to low-medium heat, add the cream and bring to a simmer, while stirring occasionally. Add in the parmesan cheese; allow to melt through the simmering sauce. Season with salt and pepper to your taste.
  • Add the shrimp back into the pan; sprinkle with the parsley, and stir through.
  • Serve with steaks.

1/4 cup chopped fresh parsley
2 tablespoons chopped fresh chives
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
6 jumbo shrimp, peeled and deveined (tails intact)
2 tablespoons extra-virgin olive oil
Juice of 1/2 lemon
2 teaspoons chopped fresh thyme, plus 2 to 3 sprigs
Freshly ground pepper
6 slices pancetta (about 2 ounces)
1 10-ounce piece beef tenderloin, trimmed
Sea salt
8 asparagus spears
1 tablespoon unsalted butter

Steps:

  • Make the herb oil: Pulse the parsley, chives and olive oil in a mini food processor until smooth. Thin with water, if necessary, and add 1/4 teaspoon each salt and pepper. Transfer to a small bowl, cover and set aside. (This can be done up to 2 hours ahead.)
  • Prepare the surf and turf: Toss the shrimp, olive oil, lemon juice, chopped thyme, and pepper to taste in a bowl. Wrap each shrimp with a piece of pancetta. Preheat the broiler. Arrange the shrimp on a foil-lined broiler pan. Season the beef with sea salt and pepper, press the thyme sprigs into the meat and set aside. Snap off the tough ends of the asparagus. Put the asparagus in a microwave-safe dish with 1/4 cup water and a pinch of sea salt. Heat a medium ovenproof skillet over high heat and add the butter. When the foam subsides, sear the beef until golden brown, about 3 minutes per side. Using tongs, hold the meat and brown the sides. Transfer the skillet to the broiler and cook until a thermometer inserted into the beef registers 125 degrees F for medium rare, about 4 more minutes. Transfer to a cutting board to rest while you cook the shrimp.
  • Broil the shrimp until the pancetta is crisp, about 2 minutes per side. Meanwhile, microwave the asparagus until tender, about 2 minutes. Slice the beef into 4 pieces. Serve with the shrimp, herb oil and asparagus.

  • In a small skillet, saute garlic in 2 teaspoons oil until tender; remove from the heat. In a small bowl, combine the parsley, green onions, thyme, lemon zest, salt, pepper, cayenne and reserved garlic. Set aside 1/2 cup for crumb topping. , Add softened butter to remaining herb mixture; mix well. Shape into a 1-in.-thick log; wrap and refrigerate for 30 minutes or until firm., For crumb topping, combine the bread crumbs, melted butter and reserved herb mixture; set aside., Preheat oven to 375°. Split lobster tails in half lengthwise. With cut side up and using scissors, cut along the edge of shell to loosen the cartilage covering the tail meat from the shell; remove and discard cartilage., Place lobster tails on a baking sheet; top with reserved crumb topping. Bake, uncovered, until meat is firm and opaque and crumbs are golden brown, 15-20 minutes., Meanwhile, sprinkle steaks with coarse pepper. In a large skillet over medium heat, cook steaks in remaining oil until meat reaches desired doneness, 4-5 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Unwrap herb butter; cut four 1/4-in. slices from log. 1 boneless, skinless chicken breast half
4 ounces flank steak
8 raw jumbo shrimp, peeled but tails left intact, deveined
Salt and freshly ground black pepper
6 scallions
3 tablespoons olive oil
3 tomatoes, quartered
2 cloves garlic, smashed
1/4 white onion, halved
1 teaspoon crumbled dried oregano
1 teaspoon cumin seeds
1 teaspoon tomato bouillon
A pinch of sugar
4 dried California or New Mexico chiles, stemmed, seeded and torn into pieces
2 slices panela cheese
Six to eight 6-inch corn tortillas, warmed

Steps:

  • Prepare a grill or grill pan to medium-high heat.
  • Sprinkle the chicken, flank steak and shrimp with salt and pepper. Grill the chicken until cooked through, about 6 minutes per side. Transfer the chicken to a platter and cover with aluminum foil to keep warm.
  • Grill the flank steak to the desired doneness, about 5 minutes per side for medium. Add it to the platter with the chicken.
  • Grill the shrimp until just cooked through, about 3 minutes per side. Add them to the platter.
  • Grill the scallions until brown, about 3 minutes per side. Add them to the platter.
  • Heat 2 tablespoons of the oil in a large, heavy saucepan over medium-high heat. Add the tomatoes, garlic and onions. Cook until the onions are golden, about 8 minutes. Add the oregano, cumin, bouillon, sugar and chiles. Stir until fragrant, about 2 minutes. Add 1 cup water to the saucepan and bring to a boil. Reduce the heat to medium low and simmer until the chiles are soft, 2 minutes. Let the mixture cool slightly. Transfer the mixture to a blender, add 1 cup water and blend until smooth. Strain the sauce into a medium bowl.
  • Heat the remaining 1 tablespoon oil in the same saucepan over medium heat. Return the sauce to the pan and simmer until slightly thickened, about 2 minutes. Season the sauce with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Place 2 molcajetes (see Cook's Note) in the oven and heat them for 10 minutes (or use 2 small to medium cast-iron skillets). Using oven mitts, remove them from the oven and carefully transfer them to a heatproof surface (be careful, as the molcajetes get extremely hot).
  • Bring the sauce to a boil. Cut the chicken and flank steak into 3/4-inch-wide strips. Arrange the chicken and steak strips, shrimp, scallions and cheese slices around the edges of the heated molcajetes. Pour the boiling sauce into the center. Serve very hot, with tortillas to make tacos.

6 tbsp Unsalted butter ((salted, or add salt to taste; softened))
2 cloves Garlic ((minced))
1/2 tsp Fresh parsley ((chopped))
1/2 tbsp Fresh rosemary ((chopped))
1/2 tbsp Fresh thyme
4 6-oz Sirloin steaks ((about 1/2 to 1 inch thick))
1 tbsp Olive oil
1/2 tbsp Sea salt
1/2 tsp Black pepper
12 oz Medium shrimp ((fresh, or frozen and thawed, peeled and deveined))

Steps:

  • In a small bowl, mash together the butter, garlic rosemary, thyme and parsley. Store in the fridge until ready to use.
  • If possible, take the steaks out of the fridge 30 minutes before cooking, to let them come to room temperature.
  • Brush steaks on both sides with olive oil. Season both sides generously with salt and pepper, patting to help the seasonings stick.
  • Heat a cast iron grill pan over medium-high heat for 2-3 minutes, until very hot.
  • Add the steaks and cook for 4-5 minutes, until browned on the bottom. Flip and cook for 2-7 minutes, until done to your liking.* Rare: 120 degrees (49 degrees C), 1-2 minutes* Medium Rare: 130 degrees (54 degrees C), 2-4 minutes* Medium: 140 degrees (60 degrees C), 4-6 minutes* Medium Well: 150 degrees (66 degrees C), 6-8 minutes* Well Done: 160 degrees (71 degrees C), 8-10 minutes
  • Remove the steaks from the pan. Cover to let them rest and keep them warm.
  • Turn off heat. Wait for the pan to stop smoking, then lightly wipe down the pan if it has any pieces left.
  • With the heat off but while the pan is still hot, add 2 tablespoons of garlic butter in smaller chunks. (Reserve the rest of the garlic butter for the steaks later.) Move the butter pieces around as they melt, so that the melted butter coats the pan evenly.
  • Once butter melts, turn on heat to medium. Quickly add the shrimp in a single layer. Cook for 1-3 minutes per side, until opaque and golden.
  • Serve steaks with a pat (1 tablespoon) of garlic butter on top. Serve shrimp alongside the steaks, with garlic butter from the pan poured over them, and a squeeze of lemon, if desired.

Steps:

  • Whisk 1 tablespoon olive oil, butter, onion, wine, Worcestershire sauce, lemon juice, parsley, seafood seasoning, garlic, and black pepper together in a bowl; add shrimp. Toss to coat evenly. Cover bowl with plastic wrap and refrigerate for flavors to blend, at least 15 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Coat steaks with 2 teaspoons olive oil; sprinkle with steak seasoning.
  • Cook steaks until they are beginning to firm and have reached your desired doneness, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Transfer steaks to a platter and loosely tent with a piece of aluminum foil.

2: 10 ounce New York Strip Steaks (about 1" thick)
½ teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon smoked paprika
1 teaspoon garlic powder
3 tablespoons salted butter
3 cloves garlic (crushed)
1 teaspoon worcestershire sauce
4 sprigs thyme
1 teaspoon lemon juice
2 medium lobster tails
1 shallot (roughly chopped)
2 cloves garlic
1 tablespoon chopped basil
5 tablespoons salted butter
1 lemon (juiced)
½ teaspoon kosher salt
½ teaspoon ground black pepper
½ teaspoon smoked paprika
½ teaspoon garlic powder

Steps:

  • Prepare steak rub: Add salt, pepper, paprika, and garlic powder to a small bowl and mix. Rub both sides of the steak generously with the seasoning. Let sit for 30 minutes to maximize flavor. Prep lobster tails while waiting
  • In a separate small bowl, melt the butter. Add worchestire, crushed garlic, and lemon juice. Whisk to combine.
  • Preheat the broiler for the lobster.
  • Heat a cast iron grill over high heat. Once hot, place both pieces of steak onto the grill. Cook for 3 minutes. Flip, and add the butter mixture to the pan on top of each steak. Top with 2 sprigs of thyme per steak. Cook for 3 minutes. Lower heat and cover. Cook steak to desired temperature. Check temperature before removing from heat, look for the temp to be 5° less than desired as it will raise about 5° as it rests. Rare will be done fairly quickly and will only need to cook an additional 1-2 minutes, reaching 115° before removing. Medium rare will take an additional 2-4 minutes, reaching 130° before removing. Medium will take 4-5 minutes, reaching 140° before removing. And medium well will take 5-6 minutes, or 145° before removing.
  • Note: times above are for a 1" thick steak. Because the cut and thickness may vary, the best practice is to sear both sides of the meat as instructed, cover, and use a meat thermometer to check desired temp.
  • Let the steak rest for 5 minutes.
  • Cut a rectangle down the top of the lobster tail shell and discard. Gently pull the lobster meat away from the sides and above the rectangle. Place onto a foil lined cookie sheet or into an oven safe pan.
  • Roughly chop shallot. Add to a food processor with garlic cloves, chopped basil, lemon juice, salt, black pepper, paprika, and garlic powder. Melt 3 tbsp butter and add to the food processor. Pulse for 15-20 seconds.
  • Top each lobster with 1 tablespoon of shallot butter paste. Place leftover paste into a saucepan with 2 tablespoons butter over low heat until melted. Set aside.
  • Place lobster under the broiler for 6 minutes.
  • Remove from the oven and pour 1 teaspoon of melted butter mixture onto the top. Serve with remaining butter as dip.
  • Plate lobster tails and steak with your favorite vegetables. Enjoy!
