FILET MIGNON WITH MUSHROOMS
This has turned out to be my wife's absolute favorite recipe for filet mignon with mushrooms. The original called for about a third of the liquid, but the sauce is so good that she always complained about not having enough to dip bread in. So the liquid measurements are tripled here from the original.

- Place bacon in an 8-inch cast iron skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Pour off excess fat from the skillet. Crumble bacon and reserve.
- Heat 1 tablespoon butter in a skillet over medium-low heat. Cook garlic in the hot butter, stirring, until softened, 1 to 2 minutes. Add mushrooms, salt, and pepper; cook over medium heat, stirring, until liquid from mushrooms starts to evaporate, 5 to 7 minutes. Add bourbon and boil until nearly evaporated. Stir in water, lemon juice, and Worcestershire. Boil until sauce is thickened slightly. Transfer sauce to a small saucepan and stir in reserved bacon and parsley. Keep warm.
- Pat steaks dry with paper towels and sprinkle with salt and pepper.
- Heat remaining butter in a skillet over medium-high heat until foam begins to subside. Sear steaks for 4 minutes; turn over and sear, 3 to 3 1/2 minutes for medium-rare. Divide between 2 plates and spoon sauce over them.

This is a simple way to make a special dinner any night of the week. You probably have most of the ingredients in your pantry already. Serve shrimp alongside steaks with your favorite sides.

- Whisk 1 tablespoon olive oil, butter, onion, wine, Worcestershire sauce, lemon juice, parsley, seafood seasoning, garlic, and black pepper together in a bowl; add shrimp. Toss to coat evenly. Cover bowl with plastic wrap and refrigerate for flavors to blend, at least 15 minutes.
- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Coat steaks with 2 teaspoons olive oil; sprinkle with steak seasoning.
- Cook steaks until they are beginning to firm and have reached your desired doneness, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Transfer steaks to a platter and loosely tent with a piece of aluminum foil.
- Remove shrimp from marinade and grill until they are bright pink on the outside and the meat is no longer transparent in the center, 2 to 3 minutes per side.

- About 30-40 minutes before cooking, remove the steaks and scallops from the fridge. Generously season the steak on both sides with Kosher salt and allow both the steak and scallops to come to room temperature.
- Heat the oil in a cast iron pan over medium high heat. Add fresh cracked pepper to the steaks. When the pan is very hot, add the steak and cook, undisturbed, for about 5-6 minutes. The bottom should have a nice golden sear on it.
- Flip the steaks and cook the other side for another 5-6 minutes for medium rare, or about 135 degrees. If you have a thicker steak, it might require an additional few minutes on each side to reach temperature.
- Remove the steaks from the pan to a plate and tent with foil while you cook the remaining ingredients.

- Place steak on a plate on the counter to warm up for about 30 minutes before starting to cook. Preheat oven to 400 degrees.
- For the steaks: Add rock salt, peppercorns, dried garlic, dried onion, fennel, and red chili pepper flakes to a mortar and pestle then coarsely crush seasonings. Alternatively you could use a spice grinder or use your favorite store-bought steak rub instead. Drizzle tops of steaks with extra virgin olive oil then generously sprinkle on spice rub and rub into steaks. Repeat on the other side.
- Heat a large, oven-safe cast iron or heavy-bottomed skillet over medium-high heat until very hot then add butter. Once melted, add steaks then sear until a golden brown crust has formed on the bottom, 2 minutes. Flip steaks then place entire skillet into oven and roast for 10 minutes for medium doneness (adjust roasting time up or down depending on how thick your steaks are - ours were 2" thick.) Remove steaks to a plate to rest while you prepare the rest of the dish.
- For the pan sauce: Place hot skillet back over medium-high heat then add shallots and saute for 30 seconds. Add rosemary, garlic, and wine then simmer until wine is reduced by half. Add beef broth then simmer until sauce is thickened and reduced, 7-9 minutes. Add butter, taste then add salt and pepper if necessary, and then set aside.

- In a saucepan, sauté the lobster legs, onion, garlic, and paprika in the butter for about 5 minutes or until the bottom of the pan starts to brown. Season with salt and pepper. Deglaze with the sherry. Add the broth and bring to a boil. Reduce by two thirds. Drain the sauce.
- In a large skillet, on the grill, or in a ridged skillet, grill the meat in the oil until the desired doneness. Season with salt and pepper. Set aside on a plate.
