1 (20 ounce) can crushed pineapple in syrup, undrained
1 (1 3/4 ounce) box Sure-Jell, fruit pectin
1/2 teaspoon butter (optional) or 1/2 teaspoon margarine (optional)
3 cups sugar, measured into separate bowl

Steps:

  • ADD enough water to undrained pineapple to measure 3-1/4 cups. Place in 6- or 8-quart saucepot. Stir in pectin. Add butter to reduce foaming. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • ADD sugar; stir. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • LADLE quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly.
  • Process 5 minutes in a hot water bath. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.).

Sweet, spicy, and a little sassy, this pineapple jam will brighten up cold winter days after you preserve it.

4 cups pineapple, peeled, cored, and chopped
½ cups jalapeños, de-seeded and minced
3/4-1 cup granulated organic cane sugar
2 teaspoons calcium water, (see Pomona's directions)
2 teaspoons Pomona's Pectin

Steps:

  • In a large saucepan, combine pineapple, jalapeños, and calcium water. Over medium heat, bring to simmer, stirring frequently. Cook until the pineapple softens and takes on some translucency, about 20-25 minutes.
  • Meanwhile, mix the sugar and pectin together in a small bowl. When the pineapple mixture is adequately cooked, add the sugar/pectin mixture to simmering fruit and stir until completely dissolved, about two minutes.
  • Ladle into sterilized half-pint jars leaving ¼" headspace. Wipe rims clean, and place prepared lids and rings onto jars finger-tight. Process in a water bath canner at a full rolling boil for 15 minutes.
  • After processing, remove jars from canner and allow to cool on a towel for 24 hours. Before storing, check for seal. Sealed jam will keep for a year in the pantry; store opened or unsealed jars in the refrigerator.

4-1/2 cups prepared fruit (buy 2 fully ripe medium pineapples)
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
5-1/2 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Peel and core pineapples. Finely chop or grind fruit. Measure exactly 4-1/2 cups prepared pineapple into 6- or 8-qt. saucepot. Stir in pectin. Add butter to reduce foaming. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.

8 cups of chopped fresh peaches, blanched, skinned, pitted and chopped or 8 cups canned peaches, chopped with the juice
1 (20 ounce) can crushed pineapple in juice (this is for canned pineapple, not fresh)
2 (6 ounce) packages orange Jell-O
2 (1 3/4 ounce) packages Sure-Jell
2 tablespoons margarine or 2 tablespoons butter
2 cups water
6 cups white sugar
1/2 cup chopped maraschino cherry (optional)

Steps:

  • Wash jars, place in 9X13 metal pan upside down with two cups of water in pan.Heat oven to 225*. Put pan in oven. Place seals in a saucepan, heat on low, seals should be hot.
  • In large stockpot, add 8 cups of chopped fresh peaches with any juice, or canned chopped peaches with juice.
  • Measure crushed pineapple and juice.
  • Add enough water to measure 3 1/2 cups.
  • Add to stockpot.
  • Add orange jello pkgs and sure-jell.
  • Add margarine or butter.
  • Stir with a wooden spoon to mix.
  • Add 2 cups water.
  • Heat to a boil.
  • Add sugar all at once.
  • Stir constantly so it does not scorch. Boil for one full minute, a rolling boil that you cannot stir down.
  • Take off heat.
  • Skim off foam.
  • Add maraschino cherries if desired. Stir.
  • Fill jars, 1/4 inch head room. Wipe the neck edge and top of each filled jar with damp clean cloth, seal and tighten with ring.
  • Have a canner ready to place jars in hot water bath for 10 minutes. Take out with tongs and place on towel padded counter.
  • You will hear a pop and the seal will be dented in when sealed.
  • 12-15 1/2 pint jars with seals and rings.
  • Remember thuis takes time to seal, it is hot when it comes out of the canner so let it cool. If not set up overnight, use the recipe Liquid Cement #151544. It is not mine but hats off to cook who make it, it works!

Old Fashioned Apricot Pineapple Jam - sweet and mellow with bright fruit flavors and just a hint of almonds. It is so good, you'll be enjoying it long after the apricots are gone!

4 cups apricots (chopped)
2 cups crushed pineapple (with juice)
4 cups sugar
1/4 cup lemon juice
3/4 tsp almond extract
1 box low sugar sure jell (this is the one in the pink box)

Steps:

  • Soak the apricots in water. Rinse them well. Then peel them apart to remove the stone. Roughly chop. Measure 4 cups.
  • Sterilize jars, rings and lids.
  • In a heavy stock pot, place the chopped apricots, crushed pineapple, lemon juice and almond extract. Stir to combine.
  • Measure 4 cups of sugar. Removing ¼ cup of sugar and mix it with the contents of the Sure-Jell.
  • Sprinkle the Sure-Jell/sugar mixture into the apricots, mix to combine and set it on the stove on high and bring to a boil, stirring constantly.
  • When it comes to a hard boil (a hard boil is a boil that cannot be stirred down) add the remaining sugar.
  • Continue stirring constantly and return it to a boil. When it comes back to another hard boil, set a timer and boil it for exactly one minute.
  • Remove from the stove & immediately ladle into sterilized jars.
  • Use a damp cloth and wipe off the top of the jars to remove any jam that may have spilled.. Place lids on jars and screw them on tightly.
  • Process in a hot water bath (boiling water) for 10 minutes to seal the jars. Makes 8 eight oz. jars.

3 cups crushed pineapple (from one 3 lb pineapple)
1 1/2 to 2 cups sugar

Steps:

  • Peel, core, and coarsely chop pineapple. Place pineapple in a food processor and pulse 2-3 times until it's very fine, but not completely pureed. (Alternately, start with canned crushed pineapple.)
  • Place pineapple in a jam pot or deep saucepan.
  • For every cup of crushed pineapple, add 1/2 to 2/3 cup sugar. A medium pineapple yields about 3 cups crushed pineapple and would require 1 1/2 to 2 cups sugar.
  • Bring the mixture to a boil over high heat, stirring to prevent scorching. Cook on high for 25 to 30 minutes until the mixture thickens.
  • Ladle into prepared jars leaving 1/4 inch headspace.
  • If canning, process in a water bath canner for 10 minutes, adjusting for altitude.

5 cups crushed plums, peaches, or nectarines (about 3 pounds fruit), any bruised spots cut away
1/3 cup fresh lemon juice (from 2 lemons)
2 1/2 cups granulated sugar
1/3 cup (1.75 ounces) powdered, no-sugar-needed pectin

Steps:

  • Thoroughly wash, rinse, and dry seven 8-ounce plastic freezer or glass jars with tight-fitting lids. You can also use zip-top freezer bags.
  • In a medium pot, combine fruit and lemon juice. Bring to a boil over medium-high.
  • In a bowl, whisk together sugar and pectin; add to fruit, stirring until sugar mixture dissolves and fruit returns to a full rolling boil. Boil 1 minute, then remove from heat.
  • Transfer to jars or bags, leaving a 1/2-inch space on top. Seal and let sit at room temperature until jam is set, 2 to 3 hours. To store, freeze, up to 6 months. To thaw jam, transfer to the refrigerator and use within 3 weeks.
