Steps:
- Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
- Peel and pit peaches. Finely chop fruit. Measure exactly 4 cups prepared fruit into 6- or 8-quart saucepot. Add lemon juice and fruit protector; stir until well blended. Stir in pectin. Add butter to reduce foaming, if desired. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
- Stir in sugar. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Remove from heat. Skim off any foam with metal spoon.
- Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 minutes. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

JALAPENO PEACH PEPPER JELLY RECIPE
Steps:
- Thoroughly wash mason or canning jars and lids and allow to heat in oven or in hot water inside a large canning pot
- Remove stems and seeds from peppers. (I recommend wearing latex gloves while handling hot peppers)
- Using a knife or herb sheers, finely dice peppers and place into a bowl
- In a large/deep pot, bring apple cider vinegar, sugar and peppers to a rolling boil
- Add in peaches and pectin and allow to boil for an additional 3-4 minutes
- Remove from heat and allow to cool for 2-3 minutes - skim off foam from top of jelly
- Remove jars and lids from oven or from hot water and dry thoroughly
- Pour jelly into hot jars and place lids on top
- Process jars in a hot water canner for 10 minutes
- Remove jars from canner and allow them to sit untouched on the counter until all lids properly seal
PEACH-BLUEBERRY JAM

- Immerse 8 pint jars in simmering water until jam is ready. Wash lids and rings in warm soapy water.
- Combine peaches, 5 cups sugar, and lemon juice in a large stainless steel or other nonreactive pot over medium heat. Bring to a low boil and cook for 10 to 20 minutes.
- While peaches are cooking, combine blueberries and remaining sugar in a separate pot over medium heat. Bring to a low boil and cook until just starting to thicken, 10 to 15 minutes.
- Add blueberries to the pot with the peaches and cook until thickened to the consistency of jam, about 10 minutes more. Remove from heat, add butter and almond extract, and stir well.
- Pack jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.

PEACH JELLY
Peach jelly captures the flavor of fragrant fresh peaches in a simple preserve that can be enjoyed year round.

Steps:
- Extract the juice from peaches or peach peels by boiling them in a small amount of water for about 20-30 minutes. Strain through a jelly bag, cheesecloth or fine mesh strainer. Measure out 3 cups for a batch.
- Bring the peach juice and lemon juice to a boil over high heat. Mix the sugar with the powdered pectin to distribute, and add together.
- Return to a boil and cook for 1 minute.
- Pour into prepared canning jars, leaving 1/4 inch headspace. Store in the refrigerator, or process in a water bath canner for 10 minutes.
- Turn off the canner and leave the jars in for another 5 minutes before removing to cool.
- Check seals, and store any unsealed jars in the refrigerator for immediate use.

CLASSIC PEACH JAM

- Place the peaches and lemon juice into a large pot. At this point, I like to take my potato masher and mash the peaches a bit. Measure the sugar into a separate bowl and set aside. Stir the package of pectin into the peaches and add the butter. Stirring frequently, bring the peach mixture to a full rolling boil (a boil that does not stop bubbling when stirred), then add the sugar. Stir to fully incorporate. Return the mixture to a full, rolling boil and boil for exactly 1 minute, stirring constantly. Remove the pot from the heat. Skim any foam from the surface. Ladle quickly into clean jars. (I like to use a wide funnel.) Wipe the rims of the jars with a clean cloth. Place the heated lids (lids that have been placed in simmering water for at least a minute) on the jars and tighten the bands. Place the jars in a canner and process (gently boil) for 10 minutes (water should cover the jars by an inch or two-add boiling water, if necessary), then remove the jars from the canner. Cool completely before storing. Make certain all lids have sealed properly before storing. If the lid springs back when pressed in the middle, it is not sealed and should be stored in the refrigerator.
PEPPER PEACH JELLY
Dreamgoddess needed a pepper peach jelly for a recipe she wanted to try, but none could be found in our small town. This is what I came up with. Just remember that for hotter jelly, cut the habaneros in half so that the heat can escape better or add another whole pepper. For less heat, use peppers that are not quite as hot. For just plain peach jelly, leave off the pepper all together.

- Cut up peaches and discard pits.
- Place in large sauce pan with whole habenoros.
- Add 1 1/2 cups water.
- Bring to a boil.
- Reduce heat; simmer 10 minutes, stirring constantly.
- Strain through cheese cloth.
- This should produce 5 1/2 cups juice.
- May need to add a little water to accomplish this measurement.
- Pour exact amount of juice into 6-8 qt. saucepan.
- Measure exact amount of sugar into bowl and set aside.
- Stir in Sure Jell and 1/2 teaspoon butter or margarine.
- Bring mixture to a full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat stirring constantly.
- Stir in sugar quickly.
- Return to a full rolling boil and boil for exactly 1 minute.
- Remove from heat and skim any foam off of top with a metal spoon.
- Ladle quickly into jars which have been preheated.
- Be sure rims are clean and place lids and rings on jars; be sure they are very tight.
- Invert for 5 minutes, then set upright to cool.

PEACH JAM
Steps:
- Have ready clean plastic or glass containers and lids.
- Peel and pit peaches. Finely chop or pulse fruit in a food processor until diced. Measure exactly 3 cups of diced peaches into a large bowl (You can eat any extra diced peaches leftover after measuring 3 cups.)
- Add one cup of sugar to the bowl and stir well. Rest for 5 minutes. Repeat with remaining sugar, adding it a little at a time and resting in between. Stir in lemon juice. Let mixture rest for 10 min.
- Taste the mixture and if it's still grainy from the sugar don't proceed until the sugar has dissolved! (If needed, you could place the heat-proof bowl or peaches over a saucepan of warm water on the stove. Gently stir the mixture and the heat will help the sugar to dissolve.)
- Meanwhile, add the water and pectin to a small saucepan and stir to combine. Bring mixture to a boil, stirring constantly. Boil and stir for 1 minute, then remove from heat and add to the peach mixture. Stir jam for 3 minutes.
- You should notice the jam has thickened a little. A will continue to thicken a bit more as it rests. (See notes, if it is still very runny).
- Fill your glass or plastic containers, leaving 1/2 inch headspace. Wipe rim of jars clean and cover with lids. Let stand at room temperature 24 hours. (This allows the jam time to set up, but feel free to enjoy one of the jars right away!)
- Store jam in the refrigerator for up to 3 weeks or freeze for up to 1 year.
- You might also like Strawberry Jam and Raspberry jam!

HOMEMADE PEACH PRESERVES RECIPE

- Take each peach and with a sharp knife cut an X into the bottom of the peach at the tip. Place the peaches in boiling water for about 1 minute.
- Remove from the water and immediately plunge the peaches into an ice bath to stop the cooking. Then carefully remove the peel, pit and chop the peaches finely.
- Measure out exactly 5 cups.
- Place jars, rings and lids into a large pot of water. Bring to a boil and boil for three minutes to sterlilize, keep warm.
- In a large stockpot, place the chopped peaches, lemon juice, ginger, curry, salt, fruit fresh (if using) and butter. Mix everything together well.
- Measure ¼ cup of sugar and mix it with the contents of the Sure-Jell. Sprinkle it into the peaches, mix well again and set it on the stove on high and bring to a boil, stirring constantly.
- When it comes to a hard boil (a hard boil is one you can't stir down with spoon) add the remaining cups of sugar.
- Continue stirring constantly and return it to a boil and when it comes back to a hard boil, continue boiling it for exactly one minute. (Set a timer to make sure you get it for a full minute).
- Remove from the stove & immediately ladle the hot mixture into sterilized hot jars. Be sure to leave 1/4 headspace. Wipe off the top of the jars with a wet paper towel.
- Place lids on jars, screw on tightly. Process in a hot bath (boiling water) for 10 minutes to seal the jars.
- Makes 4-5 eight oz. jars.
