A quick and easy jam recipe I copied from my friend's cookbook. I think it was published by the Idaho Fish and Game department.

1 quart huckleberries
5 cups sugar
1 1/4 cups water
1 (3 ounce) packet certo liquid pectin

Steps:

  • Wash huckleberries and check for stems.
  • Place berries and water in deep saucepan or pot.
  • Slowly bring to a boil.
  • Add the sugar all at once.
  • Bring to a roiling boil, then cook for 2 minutes.
  • Remove from heat.
  • Add the Certo packet and stir for 3-4 minutes.
  • Pour into jars (note: do this as quickly as possible- it will start to set almost immediately).
  • Seal using method of choice. Boil for 10 min (if your altitude is between 3,000 and 6,000) then let cool.

2 1/2 pints fresh huckleberries, or frozen thawed and drained
( or 3 cups crushed huckleberries)
5 1/4 cups sugar
1 (1.75 oz.) box sure*jell premium fruit pectin
3/4 cup water

Steps:

  • 1. Wash and rinse plastic containers with tight fitting lids. Use 1 to 2 cup size containers. I used glass canning jars. Crush 1 cup of berries at a time with a potato masher for best results. If using a food processor, pulse to very fine chop. DO NOT PUREE. Jam should have bits of fruit. *I used my potato masher. Measure exact amount of prepared fruit into a large bowl. Measure exact amount of sugar into a separate bowl. Reducing sugars or using sugar substitutes will result in set failure unless you use SURE-JELL FOR LESS OR NO SUGAR NEEDED RECIPES for no or low sugar jams and jellies. Stir sugar into prepared fruit or juice. Mix well. Let stand 10 minutes; stir occasionally. Stir 1 box SURE-JELL PREMIUM FRUIT PECTIN and ¾ cup water in small sauce pan. (Pectin may start out lumpy). Bring to a boil on high heat, stirring constantly. Boil 1 minute, stirring occasionally. Remove from heat. Stir pectin into fruit mixture. Stir constantly until sugar is completely dissolved and no longer grainy, about 3 minutes. (A few sugar crystals may remain.) Pour into prepared containers, leaving ½ inch at top for expansion during freezing; cover. I used glass canning jars, left room and had no problems freezing them. Let stand at room temperature 24 hours until set. Refrigerate up to 3 weeks. Otherwise, store in freezer up to a year. Thaw in refrigerator or it will get very runny. Always store in refrigerator, too, and not room temp. *I used frozen berries that I drained in a colander over a bowl to catch the juices. I saved the juices and added it to a pitcher of sweet tea!

Number Of Ingredients 6

5 cups huckleberries
1 tablespoon baking soda
1 1/2 tablespoon fresh lemon juice
4 cups granulated sugar
1 packet powdered fruit pectin
5-7 8-ounce mason jars and lids ((1/2 pint jars))

Steps:

  • Prepare the mason jars by placing them into a heavy bottom pot. Add water to the jars and the pot until it reaches over the top of the jars. Bring the water to a boil over high heat. Turn off the heat and leave the jars in the water until ready to use.
  • Remove the stems from the berries and discard any rotted or crushed berries. Rinse berries well to remove the dirt and debris until the waters runs clear. Transfer the berries to a large pot and cover with water 1 inch above the berries.
  • Add the baking soda and boil on high for 2 minutes to remove the bitterness of the berries. Drain and rinse berries before transferring them back into the pot.
  • Add lemon juice and crush berries with a potato masher until most of the berries are broken and chunky.
  • Lower the heat to medium, stir in the sugar and pectin, and bring to a low boil for 8 minutes stirring often.
  • Remove one jar from the canner at a time pouring hot water back into the canner. Place the jar on a soft towel or cutting board. Ladle the jam into the hot jar, leaving 1/4-inch headspace between the top of the jar and the jam. Using a damp paper towel, wipe the jar rim to remove any jam or residue around the lid. Repeat until all jars are filled.
  • Place the flat, round portion of the two-piece closure - in a small saucepan, cover with water and bring to a simmer over medium heat to sterilize the lids. Do not boil. Keep lids hot until you are ready to use them.
  • Carefully remove a lid from the hot water and place it on the jar. Place screw band on the jar. With your fingers, screw band down until resistance is met, then increase to fingertip-tight. Do not screw on tight.
  • Return the jar to the hot water-filled pot. Repeat lidding steps util all jars are in the canner. Adjust the water level in the pot so water is 1-inch above jars and bring water to a full rolling boil over high heat. Once the water is boiling hard and continuously, begin the timing process of 10 minutes.
  • Turn off the heat and let the jars rest in the water for 5 minutes before removing. Remove the jars, lifting them out of the hot water and transferring to the towel or cutting board to cool. Once cooled, tighten the screw band, label and store in a cool dark place for up to 2 years.

SURE-JELL LESS SUGAR STRAWBERRY FREEZER JAM



Sure-Jell Less Sugar Strawberry Freezer Jam image

Fresh, sweet and tart. The perfect Jam for your favorite Rolls, toast, ice cream or pb&j. The recipe says it makes 6 cups but it almost always makes 6½ when I do it.

2 lbs of strawberries (4 pints)
1 box Sure Jell Less or No Sugar Recipes Fruit Pectin
3 cups granulated sugar
1 cup water

Steps:

  • Prepare and clean your jars. You will need 3-4 pint jars or a combination of jars that will allow for 6-7 cups of jam between them.
  • Clean strawberries and remove the stems. Mash or chop them in a food processor until they are the consistency you desire. (I like mine very finely chopped) This should be approx 4 cups of smashed or chopped berries.
  • Exactly measure three cups of sugar into a large sauce pan. Add the box of Sure-Jell Less or No Sugar Recipes Fruit Pectin and stir well until thoroughly mixed.
  • Add one cup of water and stir and bring to a boil over medium high heat, stirring constantly.
  • Boil for 1 minute stirring constantly, remove from heat and quickly stir in the smashed berries (all four cups at once)
  • Stir until thoroughly mixed. Quickly pour into prepared jars making sure to leave at least ½ inch of space at top of container to allow for expansion during freezing.
  • Let jars sit without lids until completely cooled.
  • Once cooled clean tops and add lids, then allow jars or containers to sit out for 24 hours before freezing the jam.
  • Jam can be kept in refrigerator for up to 3 weeks or frozen for up to 1 year.

7 cups white sugar
4 cups huckleberries, crushed
1 (2 ounce) package powdered fruit pectin
4 1-pint canning jars with lids and rings

Steps:

  • Mix sugar and huckleberries together in a stockpot; bring to a boil, stirring constantly. Stir pectin into berry mixture and boil, stirring constantly, for 1 minute. Remove pot from heat and skim foam off the top using a metal spoon.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack jam into hot, sterilized jars, filling to within 1/4 inch of the top. Run a knife or thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Let stand at room temperature for 24 hours. Store in a cool, dark area.

Number Of Ingredients 6

4-1/2 cups prepared juice (buy about 2 qt. fully ripe huckleberries)
1 cup water
1/4 cup fresh lemon juice
1 box MCP Pectin
1/4 tsp. butter, margarine or oil
6 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Crush huckleberries thoroughly, one layer at a time. Place in saucepan. Add water and bring to full rolling boil (a boil that doesn't stop bubbling when stirred). Remove from heat. Place three layers of damp cheesecloth or jelly bag in large bowl. Pour prepared fruit into cheesecloth. Tie cheesecloth closed; hang and let drip into bowl until dripping stops. Press gently. Measure exactly 4-1/2 cups juice into 6- or 8-qt. saucepot. Add lemon juice.
  • Stir pectin into juice in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 2 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches; add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

Are you frustrated that your jelly or jam didn't set? Instead of putting up with runny jam, you can remake it easily it just takes a few minutes to save all your hard work.

No-sugar needed pectin (powdered or liquid)
Lemon juice
Sugar

Steps:

  • For each quart of jelly or jam that you are recooking, you will need 1/4 cup of water, 1/4 cup of sugar, 2 tablespoons of lemon juice, and 4 teaspoons of powdered pectin. Measure this into a large pot and mix together.
  • Then add the jelly or jam that you want to recook and bring it to a rolling boil over high heat, stirring constantly.
  • Boil hard for 1 minute then test a little on an ice-cold spoon to see if it sets up. If it doesn't boil for another minute, if it does remove it from the heat, skim the foam and fill your mason jars leaving 1/4 inch headspace.
  • Remove air bubbles, wipe the lids clean and add the lids finger tight and process in a water bath canner for 10 minutes or according to your altitude.
  • For each quart you are recooking you will need 3/4 cup of sugar, 2 tablespoons of liquid pectin, and 2 tablespoons of lemon juice.
  • Bring the jelly to a boil over high heat, stirring constantly.
  • Remove it from the heat and quickly add the remaining ingredients, stir to combine.
  • Return the pot to the stove and bring the mixture back to a boil and boil it for 1 minute.
  • Test to see if the jelly is setting. If not then boil for another minute, if it is then remove it from the heat, skim the foam and fill your jars leaving 1/4 inch headspace.
  • Remove air bubbles, wipe the rims clean and add the lids finger tight and process in a water bath canner for 10 minutes or according to your altitude.
  • Pour the soft jam or jelly into a medium-sized pot and add 2 tablespoons of lemon juice for each quart of jelly you measured.
  • Bring it to a boil over medium-high heat for 3 to 4 minutes
  • Test to see if it's setting, if not continue to boil for 1 more minute if it is then remove it from the heat and skim off the foam.
  • Fill your jars leaving 1/4 inch of headspace and remove air bubbles.
  • Wipe the rims, add lids finger tight, and process in a water bath canner for 10 minutes or according to your altitude.

GOOSEBERRY JAM

This is a jam recipe was given to me by my mother in law. She made it every year and would send us a pint because we could not get gooseberries where we lived.

2 quarts fresh gooseberries
6 cups white sugar
½ (6 fluid ounce) container liquid pectin

Steps:

  • Remove blossom and stem ends from gooseberries. Force berries through food mill. Measure 4 cups of the berry mash into a large pot. Stir in the sugar. Bring to a full rolling boil over high heat, and boil hard for 1 minute, stirring constantly. Remove from heat, and stir in pectin at once. Skim off any foam with a large metal spoon.
  • Sterilize jars and lids in boiling water for at least 10 minutes. Take turns with skimming foam, and stirring the berry mixture for 5 minutes to let it cool slightly. Ladle into hot sterile jars, leaving 1/4 inch headspace.
  • Process in a boiling water bath for 10 minutes.

For the non-pectin route: Stir in about 1 teaspoon of fresh lemon juice for every cup of huckleberries and simmer the jam over low heat for about an hour or until an instant read thermometer shows 220 degrees F. For canning follow the same instructions as with the pectin route.Makes a little over a cup.

  • Sterilize the jars by washing in the dishwasher on the sterilize cycle or immersing in boiling water for 10 minutes. Place clean jars on a clean towel. Put 2 small ceramic plates in the refrigerator, because you will need them later to test the thickness of the jam.
  • Wash the blueberries, and pick off any stems. Mash them with a potato masher, or process carefully with a food processor to get the texture you want. Measure the sugar, and reserve ¼ cup to mix with the pectin.
  • Place the blueberries in a large cooking pot, and add the pectin mixture. Over medium high heat, bring everything to a full boil that does not go down when stirred. Stir the entire time so the jam does not burn. At this point, add the rest of the sugar, stir well, and bring the jam back to a full boil for one minute. Turn off the heat and test the thickness of the jam by putting a small spoonful on a cold ceramic plate. If it’s thick enough, it’s done. If it’s too runny, add ¼ package more pectin, bring to a hard boil again for 1 minute, and test again with the second cold plate.
