Steps:

  • Preheat waffle maker on medium heat.
  • In a large bowl, mix cake mix, eggs, and 2 cups milk. Whisk until fully combined and smooth.
  • In a medium bowl, combine cream cheese, powdered sugar and remaining milk. Using a hand mixer, mix until smooth. Add more powdered sugar for a thicker glaze if desired.
  • Spray waffle iron with nonstick cooking spray. Pour batter into waffle iron and cook until done, about 6 minutes.
  • Plate waffles and drizzle over cream cheese glaze. Sprinkle with mini chocolate chips and serve.

½ cup shortening
1 ½ cups white sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon butter flavored extract
3 tablespoons cocoa powder
½ ounce red food coloring
2 ½ cups all-purpose flour
1 cup buttermilk
1 teaspoon salt
1 teaspoon baking soda
1 tablespoon distilled white vinegar
3 tablespoons all-purpose flour
½ teaspoon salt
1 cup milk
½ cup butter
1 cup white sugar
½ cup shortening
2 teaspoons vanilla extract
2 teaspoons butter flavored extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease and flour three 10 inch round pans.
  • Cream 1/2 cup of shortening, 1 1/2 cups of white sugar, eggs, 1 teaspoon of vanilla extract, and 1 teaspoon of butter flavored extract in a large bowl. Make a paste of cocoa and food coloring in a small bowl and add to shortening mixture. Pour in 2 1/2 cups flour alternately with the buttermilk, mixing until just incorporated. Mix 1 teaspoon of salt, baking soda, and vinegar in a small bowl, and while fizzing fold into the batter; mixing just enough to evenly combine. Pour the batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
  • To make frosting: Cook 3 tablespoons of flour, 1/2 teaspoon of salt, and milk in a skillet over low heat, stirring constantly, until thick. Let cool completely. Cream butter, 1 cup sugar, and 1/2 cup shortening in a separate bowl. Stir in 2 teaspoons each of vanilla extract and butter flavored extract. Then add flour mixture to bowl and cream together. Frost cooled cake.

A delicious waffle recipe I got from my sister-in-law over 15 years ago. The only thing she knew how to cook. (seriously) Absolutely delicious. I make it as pancakes as well sometimes.

2 cups flour
4 teaspoons baking powder
1 teaspoon salt
2 cups milk
4 eggs, separated
1 teaspoon vanilla
1 cup melted butter

Steps:

  • Sift flour, baking powder and salt in large bowl.
  • Combine and mix milk, egg yolks and vanilla in a medium bowl.
  • Beat egg whites until stiff in a large bowl.
  • Add milk and egg yolk mixture to dry ingredients. Beat with electric mixer at high speed just enough to moisten dry ingredients.
  • Stir in slightly cooled butter. Fold in egg whites, leaving little fluffs of them showing in batter.
  • Pour batter onto center of heated waffle iron. Pour in center of griddle until it spreads to about 1" from edges and cook until browned and done. My iron takes about 6 minutes but I know they will vary.
  • Makes 8 waffles.

1/3 cup (5 1/2 tablespoons) unsalted butter, melted and cooled
2 large eggs
2 teaspoons vanilla extract
1/2 teaspoon distilled white vinegar
2 tablespoons red food coloring
Nonstick cooking spray

Steps:

  • Make the cream cheese glaze: Whip the cream cheese and butter together in a large bowl until smooth and fluffy. Gradually whisk in the confectioners' sugar, then add the vanilla add the milk and whisk until the glaze is smooth. Stir in the nuts if using.
  • Make the red velvet waffles: Whisk the flour, sugar, baking powder and cocoa in a large bowl. Beat the buttermilk, melted butter, eggs, vanilla and vinegar together in separate medium bowl until smooth, then stir in the red food coloring. Add the buttermilk mixture to the dry ingredients and whisk until smooth.
  • Heat a waffle iron according to the manufacturers' instructions. Spray the waffle iron with nonstick cooking spray and then pour a scant 1 cup of the waffle batter onto the waffle grid. Close the iron and cook until the waffle is deep red and crisp on the outside, about 3 minutes. Repeat with the remaining waffle batter. Serve each waffle drizzled with the cream cheese glaze.

1/4 cup bourbon
Pinch salt
Toasted pecans, for garnish
Powdered sugar, for garnish

Steps:

  • For the waffles: Whisk together the buttermilk, cream, butter, food coloring and eggs in a large bowl. Mix together the flours, sugar, cocoa, cornmeal and baking powder in another bowl. Mix the dry ingredients into the wet ingredients in thirds, stirring just until incorporated. Do not over-mix. Let rest, covered with plastic wrap, overnight in the refrigerator.
  • For the cream cheese mousse: Mix together the cream cheese, sugar, vanilla and orange zest using a mixer until smooth and creamy.
  • For the compote: Combine the cherries, molasses, bourbon and salt in a saucepan and heat until the cherries are softened. Serve warm like a chunky syrup.
  • Fire up the waffle iron and get cooking. Pour the batter onto the hot waffle iron and cook to desired doneness. Garnish with bourbon cherry compote, cream cheese mousse, toasted pecans and powdered sugar.

Liberally spray the iron with cooking spray to prevent any sticking. Scoop about 1/4 of the batter to just cover the bottom of the iron, then close it and let it cook for about 5 minutes.
  • When it is done, remove it to a plate and repeat the process with the remainder of the batter to get 4 waffles total. While the waffles cook, prepare the cream cheese drizzle. Combine the cream cheese, milk, maple syrup, granulated sugar and cinnamon in a bowl. Use a hand mixer to whip it up into a uniform mixture.
  • When the waffles are all done and plated, simply scoop a big dollop of the cream cheese mixture on top. Then add an extra decadent touch by shaving bittersweet chocolate with a fine grater on top! Serve immediately and enjoy dessert for breakfast.
