2 eggs
2/3 cup salad oil or 2/3 cup vegetable oil
3/4 cup sugar
1/4 cup molasses
1 1/2 cups flour (sifted)
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups quick-cooking oats
1/2 cup gumdrop (cut in small pieces)

Steps:

  • Beat eggs till well blended. Stir oil into eggs; blend in sugar till mixture thickens.
  • Stir in the molasses.
  • Sift flour, baking powder and salt together. Add to egg mixture with the oats and gumdrops.
  • Mix until well blended.
  • Drop a teaspoon at a time, 2 inches apart, on a greased cookie sheet.
  • Sprinkle a very small amount of sugar on each cookie.
  • Bake at 400 degrees 8 to 10 minutes.
  • Remove from cookie sheet immediately.

1 3/4 c brown rice flour
1 c rolled oats
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
3 Tbsp chocolate-flavored whey protein powder
1 c butter, room temperature
3/4 c brown sugar
3/4 c white sugar
1 1/2 tsp vanilla extract
1 tsp lemon juice
2 eggs
1/2 c golden raisins and dried cranberries
1/2 c chocolate chips
1/4 c chopped walnuts

Steps:

  • 1. Preheat oven to 350 degrees. Prepare cookie sheet with parchment paper.
  • 2. Combine flour, oats, cinnamon, salt, protein powder and baking soda in medium bowl, blend, and set aside.
  • 3. In a large bowl, cream the sugars and the butter together. Add the eggs, lemon juice and vanilla.
  • 4. Stir in the dry ingredients with the wet until well blended. Add the raisins, cranberries, chocolate chips and walnuts.
  • 5. Form balls approximately 1 inch in diameter and place on cookie sheet. Bake for 10-12 minutes. Cool on wire rack, and serve when ready.

¾ cup butter, softened
½ cup white sugar
1 cup packed brown sugar
2 egg whites
1 egg
1 teaspoon vanilla extract
1 ½ cups whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
½ teaspoon salt
3 cups quick-cooking oats
½ cup peanut butter chips
½ cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, white sugar, and brown sugar until light and fluffy. Add the egg whites and egg one at a time, beating well with each addition, then stir in the vanilla. Combine the flour, baking soda, cinnamon, nutmeg and salt; gradually stir into the creamed mixture. Then stir in the quick oats, peanut butter chips and chocolate chips. Drop by rounded spoonfuls onto an ungreased cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

When it's time for breakfast, pour boiling water over a bowl of your Superstition Surprise cover and wait 2 minutes and you got oatmeal. I found this recipe on Campfire Cookbook. I have not tried this recipe, but I'm posting the recipe for safe keeping.

1/3 cup mixed chopped nuts (optional)
1/2 cup brown sugar

water

Steps:

  • Mix all dry ingredients in a zip-lock bag before hitting the trail.
  • Pour boiling water over a bowl of Superstition Surprise and cover.
  • Wait approximately two minutes.
