Superfood Green Smoothie image

The deliciousness of this smoothie disguises the fact that it contains 6 superfoods--yogurt, spinach, kale, flaxseed, blueberries, and green tea! Serve immediately or store in a sealed container in the refrigerator for up to one day.

1 cup spinach leaves
1 cup shredded kale
½ pear, cut into chunks
½ large ripe banana, sliced
½ cup frozen blueberries
⅓ cup plain yogurt
4 ice cubes
2 tablespoons ground flax seeds
½ cup brewed green tea, chilled, or more to taste

Steps:

  • Combine spinach, kale, pear, banana, blueberries, yogurt, ice cubes, and ground flax seeds in a blender; pour in tea. Blend on high until mixture is smooth. Mix with a wooden spoon to redistribute ingredients if needed.

  • Chop a small head of broccoli and add to a bowl. Remove the stems and chop the kale leaves, then add to the broccoli. Chop 1/4 of green cabbage, add to the bowl. Slice Brussels sprouts, add to the bowl. Add 1/2 cup of dried cranberries and 1/2 cup of pumpkin seeds to the bowl. Mix all together.

This beet smoothie is one of my all-time superfood smoothies. Made with coconut milk, it is delicious, healthy and satisfying.

2 small or 1 big beet - red (yellow, or both - peeled and cut into cubes)
1 (14 oz.) can of whole coconut milk
1 frozen banana (in small pieces)
12-14 red seedless grapes
1 tablespoon lime juice (freshly squeezed)
1 cup baby spinach or kale (rinsed (optional))
1 cup ice

Steps:

  • Place beets, coconut milk, banana, grapes, lime juice, spinach (or kale) and ice in a blender. Blend until smooth. Divide it in between 2 glasses and serve immediately.

Number Of Ingredients 17

2 cups white spelt flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cardamom
1/2 teaspoon ground ginger
1/2 teaspoon salt
1 tablespoon arrowroot or 1 tablespoon cornstarch
1/2 cup chopped pistachios
6 large medjool dates
1/2 cup liquid sweetener (I used fruit sweetener)
1/2 cup mashed avocado (about 1 avocado)
2 cups packed washed and blanched kale
1 tablespoon vanilla extract
1/2 cup soft coconut oil
1/2 cup soy milk mixed with 1 tablespoon apple cider vinegar

Steps:

  • In a bowl, mix all of the dry ingredients together. In a food processer, process the first 6 wet ingredients until smooth. Add the soy milk mixture and process again. Pour the wet ingredients into the dry and mix thourougly. Oil a 8×8 or 9×9 baking dish with coconut oil and dust flour evenly over the oil. Press the dough into the pan and bake at 350 F or 180 C for about 35-40 minutes or until a toothpick comes out clean. Let cake cool for 10 minutes then remove cake from pan and let cool completely on a wire wrack. Cut cake in half diagonally and frost with the cashew sour cream frosting in my ebook, or leave cake whole and frost as is.
