SUPERB HAM AND SAUSAGE LOAF W/BASTING SAUCE
This is so good you'll want to double the recipe so you can bake one now and freeze the other for another day. The basting "sauce" really enhances the loaf with extra good taste. Recipe from local newspaper Sunday Magazine.

Steps:
- Preheat oven to 350 degrees.
- In large bowl combine meats and breadcrumbs.
- Mix in eggs, sour cream, lemon juice, and the next five spices.
- Dump mixture into greased 9"x13"x2" pan.
- Form into loaf shape.
- Bake, uncovered, for 45 minutes.
- Meanwhile, prepare basting sauce:.
- Combine brown sugar, water, vinegar and pepper in small saucepan and heat to boil then remove from heat. Remove ham loaf from oven; drain excess fat from pan. Pour sauce over loaf and bake another 15 minutes, basting occasionally.
- Note: Cut ham into small chunks and chop coarsely in food processor. Also, make fresh breadcrumbs in processor.

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

- Set outdoor grill for medium-high heat, then lightly oil the grates.
- In a bowl combine the lemon juice with brown sugar and horseradish; heat in microwave for 1-1/2 minutes or until warmed.
- Score slices of ham, then season very lightly with black pepper if desired.
- Place on preheated grill.
- Baste continuously with the horseradish sauce while grilled.
- Grill time should take about 7-8 minutes per side.

- Preheat oven to 400 degrees F (200 degrees C).
- Whisk beer, brown sugar, and Dijon mustard together in a bowl.
- Place ham cut side up in a large roasting pan; pour beer mixture over ham.
- Bake in the preheated oven until ham begins to brown, about 15 minutes, basting 4 to 5 times.
- Reduce oven temperature to 350 degrees F (175 degrees C). Cover roasting pan with lid or aluminum foil.
- Continue to bake until ham is heated through, about 90 minutes more, basting frequently.
- Remove lid and bake until ham is well browned, about 15 minutes more. Allow ham to rest for 10 to 15 minutes before carving.

EASY ORANGE BASTING SAUCE
Cooking meat with fruits is a special treat. This sauce has NO FAT, NO SODIUM, and NO sugar added, and you can make it a few days ahead and store it in your fridge until you're ready to cook.

- Peel all oranges. Chop enough of the rind (peelings)to equal 1/2 cup. Discard remaining peelings.
- Insert your 1/2 cup of orange rind into your food processor.
- Slice the orange into quarters and place in food processor with the rind.
- Peel and wash your garlic cloves, then place in food processor. You can save time by purchasing peeled and washed garlic cloves pre-packaged in your produce section.
- DO NOT use garlic soaked in oil which is sold in a jar in the spices section of your grocery store. The oil is just another fat product.
- Add all other ingredients to food processor, then puree for about 1 minute until you get a marmalade-like texture.
- This recipe makes about 24 oz of sauce, which is enough to baste about 12 to 15 pieces of chicken.
- I usually baste meats at the start time, and again halfway through cooking. Spritzing the meat with a bit of water during cooking keeps it moist and will not affect the flavor of this particular sauce.
