Fresh Summer Salsa image

This fresh-tasting combination is great with chips or grilled salmon, chicken or pork chops. But it's so good, sometimes I just eat it with a spoon! -Lindsay Anderson, Inman, Kansas

Yield 4 cups.

Number Of Ingredients 13

4 medium tomatoes, chopped
1 medium mango, peeled and chopped
1 medium ripe avocado, peeled and cubed
3/4 cup fresh or frozen corn, thawed
1/2 cup minced fresh cilantro
1/2 cup canned black beans, rinsed and drained
1/4 cup chopped red onion
1 jalapeno pepper, seeded and chopped
3 tablespoons lime juice
1 tablespoon olive oil
2 garlic cloves, minced
1/4 teaspoon salt
Baked tortilla chip scoops

Steps:

  • In a large bowl, combine the first 12 ingredients. Chill until serving. Serve with tortilla chips.

I'm asked to bring this to every picnic or 4th of July gathering in the summer. It's definitely a favorite among my family. It's quick and super easy to make!

Number Of Ingredients 8

1 (12 ounce) jar jalapeno peppers
6 medium ripe tomatoes, finely chopped
2 bunches green onions, finely chopped
3 medium white onions, finely chopped
2 (4 ounce) cans chopped green chile peppers
1 bunch fresh cilantro, finely chopped
2 medium limes, juiced
salt to taste

Steps:

  • Drain jalapeno juice into a large bowl. Finely chop jalapenos and add to the juice. Add tomatoes, green and white onions, chile peppers, and cilantro. Add lime juice over top and mix everything together. Season with salt.
