1 1/4 cups (150 g) walnuts, coarsely chopped
2 cups (240 g) all-purpose flour
1 cup (200 g) brown sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
3 (1 1/2 cups or 450 g) large overripe bananas, mashed
1/4 cup (4 tablespoons) plain whole fat yogurt
2 large eggs, beaten lightly
6 tablespoons unsalted butter, melted, plus more for greasing
1 teaspoon vanilla extract
2 tablespoons rum, optional (Captain Morgan brand)

Steps:

  • Preheat the oven to 350°F (175°C). Grease a loaf pan (9x5 inch loaf pan).
  • Add the walnuts on a rimmed baking sheet, slide in the oven and toast until fragrant, 5 to 10 minutes. Let cool.
  • In a large bowl, combine the flour, walnuts, brown sugar, baking soda and salt. In a medium bowl, stir the mashed bananas, yogurt, eggs, butter and vanilla with a spoon. Add rum, if using. Lightly fold the banana mixture into the dry ingredients with a rubber spatula, mixing just until combined. The batter should be thick and chunky. Scrape the batter into the loaf pan.
  • Bake the banana bread until the surface appears golden brown and a cake tester inserted in the center comes out clean, about 55 minutes. Let cool the banana bread in the pan for 5 minutes. Remove from the loaf pan, slice and serve warm.

3 large (ripe bananas)
1 cup granulated sugar
1 stick unsalted butter
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips

Steps:

  • Preheat your oven to 350 degrees and line a cookie sheet with parchment paper.
  • Beat together the butter and sugar until light and fluffy, then add your eggs, vanilla and bananas.
  • On low speed, mix in the flour, baking soda, and salt, until just combined. Stir in chocolate chips.
  • Drop by teaspoonfuls onto your lined cookie sheet, about 2 inches apart. Batter will be very wet - don't worry if you aren't able to form the dough into balls.
  • Bake for 12 minutes, until the edges begin to turn a light golden brown.

Steps:

  • Preheat oven to 350 degrees. Spray a loaf pan with non-stick cooking spray or grease with butter and set aside.
  • Add the stick of butter to a large bowl and microwave for 1 minute, or until melted.
  • Add the bananas to the same bowl and mash with a fork.
  • Add the vanilla extract and egg to the bowl and use the same fork to mash and stir until no yellow streaks of egg remain.
  • In a second large bowl whisk together the flour, sugar, baking soda, salt, and cinnamon.
  • Add the dry ingredients to the wet ingredients and mix together with a spatula just until combined.
  • Pour the batter into prepared loaf pan and bake for 45-55 minutes until a toothpick inserted in the center of the bread comes out clean.

4 oz dark chocolate chunk, or your preference

Steps:

  • In a large bowl, whisk together the sugars, salt, and butter until a paste forms with no lumps.
  • Whisk in the egg and vanilla, beating until light ribbons fall off the whisk and remain for a short while before falling back into the mixture.
  • Sift in the flour and baking soda, then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  • Fold in the chocolate chunks, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.

Steps:
