This sweet and spicy green soup is easy to prepare and works great as a simple yet nutritious meal (vegan option available). I like serving it with different extras like nuts, olives or my favorite soft cheese.

100-125 g frozen broccoli
100-125 g frozen green peas
100-125 g frozen green beans
2 slices butter
5 slices leeks
1/2 green chili pepper
white pepper (to taste)
black pepper (to taste)
1 tsp Himalayan salt
1 tsp dried dill or parsley
water

Steps:

  • Boil together broccoli, green peas and green beans. This doesn't take more than a few minutes.
  • Remove from heat, remove water and set the boiled vegetables aside to cool down a bit.
  • Next step it to puree the ingredients in the blender. In a blender add cooked vegetables - that's broccoli, green peas and green beans.
  • Next, add butter, leeks and green chili.
  • Blend on medium speed until you reach a creamy consistency.
  • Finish by adding salt, plus and black pepper to taste.
  • Mix for another 20 seconds until the spices have incorporated into the cream soup.
  • DONE! Wasn't that easy?! Transfer into a soup casserole and decorate with fresh herbs (parsley or dill). Serve and enjoy life!

This super simple, very green soup is a warming, cozy way to get your greens in! It can be made with any greens that you have at home. It's easy to make and so healthful.

Number Of Ingredients 12

1 tablespoon olive oil
1 white or yellow onion (chopped)
2-3 cloves garlic (minced)
2-3 teaspoons minced ginger (to taste)
2 medium yellow or yukon gold potatoes (peeled and roughly chopped (about 3/4-1 pound))
1 teaspoon salt
4 cups low sodium vegetable broth
2 heaping cups broccoli stems or florets (or chopped asparagus, chopped baby bok choy, or roughly chopped zucchini)
4 cups tightly packed (roughly chopped kale, Swiss chard, beet greens, or spinach)
1 cup unsweetened soy or almond milk
Black pepper to taste
For serving: white beans (cooked rice, cooked quinoa, coconut bacon, toasted chickpeas, toasted pepitas, fresh herbs, etc.)

Steps:

  • Heat the olive oil in a large stock or soup pot over medium heat. Add the onion. Saute onion for 5 minutes, or until it's clear and soft. Add the garlic and ginger and cook for another minute, or until the garlic is very fragrant.
  • Add the potatoes, salt, and broth to the pot. Bring to a boil. Reduce to a simmer. Simmer, covered, for 10 minutes, or until the potatoes are fork tender. Add the broccoli (or other vegetable). Simmer for 5-10 minutes, or until the vegetables are tender. Stir in the kale or other leafy greens, cover, and simmer for 5 minutes, or until the kale is bright green and wilted.
  • Transfer the soup to a blender in batches to puree thoroughly, adding water as needed if the soup is too thick (remember that you'll also add some soy or almond milk after blending). Return the soup to the pot and stir in the plant milk and black pepper to taste, as well as a pinch of salt if desired. Serve with toppings of choice.
  • Soup will keep in an airtight container for up to three days and can be frozen for 2-3 weeks.

VERY GREEN BROCCOLI SOUP

1 1/2 pounds broccoli
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
2 tablespoons minced garlic
1 cup (1/4-inch) diced onion
1/2 cup (1/4-inch) diced celery
Gray salt
Freshly ground black pepper
2 teaspoons finely chopped fresh thyme leaves
5 cups chicken stock or canned low-salt chicken broth
2 cups packed spinach
2 teaspoons freshly grated lemon zest
1 cup heavy cream or buttermilk (if using buttermilk, cut the lemon zest in half)

Steps:

  • Cut the broccoli florets from the stems. Peel the tough outer skin from the stems and trim off the fibrous ends. Cut the stems lengthwise into slices about 1/2-inch thick and then crosswise into 1/2-inch pieces.
  • Heat the olive oil and butter in a soup pot over medium-high heat until hot. Add the garlic and cook until light brown. Add the onion and celery, lower the heat to medium, and season with salt and pepper. Cook the vegetables slowly until tender, about 10 minutes. Regulate the heat so the vegetables cook without taking on color.
  • Add the thyme and stir. Add the broccoli stems, stock, and salt and pepper, to taste, and bring to a boil. Cook, uncovered, for about 3 minutes. Add the florets and continue to cook until very tender, about 5 minutes more.
  • Puree the soup in a blender in small batches. Add some of the spinach and some of the lemon zest to each batch and then puree it. (The soup can be made to this point, covered, and refrigerated for up to 1 day or frozen for up to 1 month.)
  • Return the soup to the pan and reheat over gentle heat. Stir in the cream. Taste and adjust the seasoning with salt and pepper. Keep warm.
  • Chef's Note: When I plan on finishing a dish with the addition of a dairy product, as I do here with cream, I often add a dairy product early in the cooking, too, as I do with the butter in the initial cooking of the vegetables. It melds the flavors.

1 cup chopped onions
1/2 cup chopped carrot
1/2 cup chopped celery
4 teaspoons finely chopped garlic

1/4 teaspoon dried sage leaves
1/4 teaspoon ground black pepper
1 can (19 oz) Progresso™ cannellini beans, drained, rinsed
6 cups Progresso™ reduced sodium chicken broth (from two 32-oz cartons)
1 container (5 oz) mixed baby hearty greens (kale, Swiss chard or spinach)
1 small (7 oz) baguette, cut into 12 slices
6 tablespoons finely grated Parmesan cheese

Steps:

  • Heat oven to 375°F. Line rimmed baking pan with foil.
  • In 5-quart Dutch oven, heat 2 teaspoons of the oil over medium heat. Cook onions, carrot and celery in oil 9 to 12 minutes, stirring occasionally, until carrots are just tender. Stir in garlic, salt, dried herbs and pepper; cook about 1 minute or until garlic is fragrant. Add beans and broth. Increase heat to high; heat to simmering. Cover; reduce heat to medium-low, and simmer 15 minutes. Stir in baby greens; simmer 4 to 5 minutes or until greens are tender.
  • Meanwhile, place baguette slices on pan; brush with remaining 4 teaspoons oil. Bake 8 to 9 minutes or until crispy and lightly browned.
  • To serve, divide soup among bowls; top with Parmesan cheese, and serve with baguette.

1 tablespoon olive oil
2 large onions, chopped
8 cups vegetable broth
½ cup uncooked long-grain wild rice
4 cloves garlic, minced
1 pound fresh kale, chopped
12 ounces fresh spinach, chopped
2 ounces goat cheese, crumbled
1 tablespoon lemon juice
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a small frying pan over medium-high heat. Cook and stir onions in the hot oil until until translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 30 minutes more.
  • Pour vegetable broth into a pot and place over medium heat. Add rice and minced garlic; stir in kale and spinach, adding more broth if necessary. Add onions to the pot. Allow the greens to reduce and rice to fully cook, about 45 minutes.
  • Use an immersion blender to blend to desired consistency. Add goat cheese and use the blender again to create a creamy texture. Stir in lemon juice, salt, and pepper.

SUPER HEALTHY 'GREEN' SOUP

This recipe was given to me by a friend. She got it from her dietician when she was trying to lose weight. It is really healthy and very tasty, and the lemon juice highlights the flavor of the vegetables. To make it more filling you can add the lentils, though this is surprisingly filling even without them, considering there's little other than vegetables in the soup. Feel free to vary the green vegetables you put in - it's never failed for me no matter what green matter has gone in the pot! Spinach and asparagus both work very well in here too. If you're using a non stick pot you can omit the olive oil in step 1 as well; I use my large Scanpan Dutch oven and never need to add the oil. Enjoy. :)

1 large leek, well washed and finely sliced (onion works fine as an alternative)
1/2 bunch celery, sliced (use the leaves too)
1 large head of broccoli, washed and broken into florets
3 medium zucchini, sliced
1 green capsicum, chopped
1 liter chicken stock (vegetable stock works as well)
1 cup water
1/3 cup lemon juice (or to taste)
2 teaspoons garlic, crushed
2 tablespoons grainy mustard
1 teaspoon fresh chili pepper, finely chopped (or to taste, feel free to omit if you like)
240 g canned lentils, drained

Steps:

  • Place a large pot over medium heat on the stove. Add some olive oil, the garlic, chilli and leek (or onion, if using). Saute gently for 2 minutes. Do not allow leek to change colour; remember the soup is a 'green' soup so the vegetables should stay as green as possible - we don't want them browned!
  • Add the celery and saute gently for another 2 minutes.
  • Add broccoli, zucchini and capsicum, stirring all ingredients together. Saute gently for approximately 10-15 minutes, stirring regularly. Use your best judgement at this point; vegetables should be softened but not mushy, and they should not be changing colour.
  • Add chicken stock, water and lemon juice and seeded mustard. Cover pot and bring to boil. Allow to simmer for 20-30 minutes, or until vegetables are soft but not disintegrating.
  • Puree the soup well, using either a stick blender or carefully blending batches in a food processor. If soup is too thick, add more water until you achieve the consistency you prefer.
  • Once pureed, transfer soup back to pot and add lentils (if using). Bring to boil and simmer gently for another 5 minutes. Taste and adjust seasoning as necessary (I never add salt but some might feel it is necessary to put some in).
  • Enjoy!

2 -3 onions, sliced
1/2 tablespoon olive oil
2 bunches kale (Use any mixture of greens you like-kale, beet greens, whatever you have- I used a mix of kale, bok c)
1 -2 cup fresh parsley
2 -4 cups fresh spinach
2 carrots, diced
1/4 cup arborio rice
3 cups vegetable broth (or stock, can use chicken)
2 cups water (optional, add to your taste)
1/2 cup nutritional yeast
1 teaspoon cayenne

Steps:

  • Caramelize onions over medium low heat in a large stock pot or dutch oven with lid on, stirring occasionally. Cook until deep brown and cooked down, 30+ minutes.
  • Add carrots, arborio rice and 2 C broth. Bring to a boil, stir, and then simmer for 15 minutes.
  • Wash greens, removing tough stems from kale and beet greens. Add to pot with remaining broth. Stir and cook over medium heat until greens are cooked, about 15 minutes.
  • Add nutritional yeast, cayenne and salt and pepper to taste. Add additional water as needed depending on whether you want a thick stew or thinner brothier soup.
  • Blend using immersion blender or in blender until soup is smooth and creamy.
  • Top with a squeeze of lemon and/or a dollop of Greek yogurt.
