This salad is made with marinated raw broccoli in a garlicky sauce for numnums! A recipe from my grandma.

4 cloves garlic, peeled
1 ½ teaspoons salt
1 bunch broccoli, cut into florets
⅓ cup olive oil
¼ cup red wine vinegar
1 tablespoon Dijon mustard
½ cup grated Parmesan cheese, or to taste

Steps:

  • Place garlic in a mortar dish or on a cutting board, and sprinkle with salt. Mash with a pestle, or use the flat side of a knife to mash garlic and salt into a paste. Transfer to a medium bowl, and stir in olive oil, vinegar, and mustard. Add the broccoli, and stir to coat. Chill for 3 hours to marinate, stirring occasionally. Sprinkle with Parmesan cheese before serving.

1 bunch broccoli (about 1 1/2 pounds), cut into florets, stems peeled and sliced or diced
2 tablespoons extra-virgin olive oil
3 cloves garlic, sliced
Kosher salt and freshly ground pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Toss the broccoli florets with the olive oil, garlic, salt, and pepper on a baking sheet. Spread them out and then roast, without stirring, until the edges are crispy and the stems are crisp tender, about 20 minutes.
  • Serve warm.

Turn a ho-hum side of broccoli into a dish that will have everyone asking for seconds.

1 tablespoon olive oil
1 to 2 teaspoons minced garlic
Kosher or coarse salt and freshly ground pepper (to taste)
6 cups broccoli florets and 1-inch pieces of peeled stem (about 1 head broccoli)
Red pepper flakes (to finish, optional)

Steps:

  • In a medium skillet with a lid, heat the olive oil over medium high heat, then add the garlic (1 teaspoon for a milder garlicky flavor, 2 teaspoons for a full-on garlicky flavor) and swish it around for about 30 seconds until you can smell it. Add the broccoli and stir and toss to coat with the oil. Season with salt and pepper, add 1/4 cup of water, cover the pan, and steam until the water is evaporated and the broccoli is tender. Sprinkle with the red pepper flakes if desired. Serve hot.

1 clove garlic, minced
¼ cup grated Parmesan cheese, plus more for serving
salt to and freshly ground black pepper to taste

Steps:

  • Place broccoli in a microwave-safe dish and microwave on high until defrosted, 3 to 4 minutes; they should be defrosted but not cooked all the way.
  • Add 1/4 cup Parmesan and garlic, stir, and cook for another 2 to 3 minutes. Season with salt and pepper and stir.
  • Serve with extra Parmesan sprinkled over top.

1 1/2 pounds fresh broccoli, stem on (about 3 large heads or 6 heaping cups florets)
3 tablespoons olive oil
1/2 teaspoon kosher salt
2 tablespoons grated Parmesan cheese (the powdery kind)
1/2 cup shredded cheddar cheese

Steps:

  • Chop the broccoli into medium sized florets (leave a good amount of the stem for a nice shape; see the photo or How to Cut Broccoli).
  • Add the olive oil to a large skillet and heat it on medium high heat. Add broccoli and salt. Cook 3 to 4 minutes until starting to brown, stirring occasionally.
  • Sprinkle the grated Parmesan cheese over the broccoli, followed by the cheddar cheese. Add 1/4 cup water to the bottom of the skillet and cover with a lid. Cook another 1 minute until cheese is melted and the water cooks out. Serve immediately!
