This is a very old recipe for egg custard. If you like cooking vintage recipes for a taste of the old life, this one is for you. You can also convert this recipe to make tarts or a pie. You can add nutmeg and other spices to taste, or you can bake a pie crust and pour custard into that as well.

8 eggs, beaten
2 cups white sugar
1 gallon whole milk
1 tablespoon vanilla extract

Steps:

  • Whisk eggs and sugar together in a large pot. Gradually add milk, whisking constantly. Stir in vanilla.
  • Heat milk mixture over low heat, stirring constantly. Cook, stirring occasionally, until mixture thickens and coats the back of a wooden spoon, about 30 minutes. Pour into a serving dish and allow to cool.

2 cups whole milk
2 eggs (preferably free-range)
2 egg yolks
1/3 cup sugar
1 teaspoon vanilla extract
Freshly grated or ground nutmeg

Steps:

  • 1. Preheat oven to 300°F.
  • 2. Place six 4-ounce ovenproof cups (you can use ramekins, or coffee cups marked as oven-safe) in a deep baking pan just large enough to hold them.
  • 3. In a medium saucepan, bring the milk to a simmer over medium-low heat.
  • 4. Meanwhile, in a separate bowl, whisk together the eggs, yolks, sugar, and vanilla.
  • 5. Slowly pour the egg mixture into the simmering milk, whisking gently to combine.
  • 6. Pour the mixture through a fine strainer into the cups (if the strainer clogs, use a spoon to scrape it clean), then sprinkle lightly with the nutmeg.
  • 7. Pour hot (not boiling) water into the pan until it reaches halfway up the sides of the cups.
  • 8. Bake until the custard is just set (it can still be a little loose), 30 to 35 minutes.
  • 9. Let the custard cool in the water bath for about 2 hours before serving.

Egg custard is an old Southern recipe. I think this one is foolproof and also quick and easy--just blend, pour into a pie plate and bake. I always have these staples on hand, so I can make this delicious custard at a moment's notice.

  • Preheat oven to 325°. In a blender, combine all of the ingredients. Cover and process until well blended. Pour into a greased 9-in. pie plate. Bake until a knife inserted in the center comes out clean, 55-65 minutes. Serve warm or chilled. Refrigerate leftovers.

I couldn't find my mother's recipe, and i was running low on milk, so i created this one that is so simple, and easy on the pocket book! good for a sweet breakfast treat, or dessert if you please! serve either cold or warm from the oven!

6 large eggs
1 can(s) sweetened condensed milk
3 c milk, i use 2%
1 tsp vanilla extract
scant sprinkle of cinnamon or nutmeg, to taste

Steps:

  • 1. crack eggs into large bowl and beat with mixer well. whites should be thoroughly blended in.
  • 2. add one full can of sweetened condensed milk and mix well again.
  • 3. add in vanilla and regular milk, mix thoroughly again.
  • 4. spray pans with pam lightly, and place in a pan of water. (water bath)
  • 5. pour in custard mix to no more than 3/4 full.
  • 6. sprinkle lightly with either cinnamon or nutmeg to taste.
  • 7. place in oven at 350 degrees for approximately 45 minutes. check doneness with a knife. when an inserted knife comes out of the center of the custard clean, it is done.

2 cups milk
2 eggs, beaten
½ cup white sugar
1 pinch salt
1 dash vanilla extract
1 pinch ground nutmeg

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Whisk milk, eggs, sugar, salt, and vanilla together in a bowl until completely combined. Pour egg mixture into 6 custard cups; sprinkle tops with nutmeg. Place cups in a baking pan and fill pan with enough hot water to reach halfway up the sides of the custard cups.
  • Bake in the preheated oven until custards are set, about 1 hour. Cool completely.

3 eggs, plus 1 yolk, lightly beaten
1 vanilla pod, split lengthways and seeds scraped out or 1 tsp vanilla bean paste
60g caster sugar
215ml whole milk
215ml double cream
nutmeg, to grate

Steps:

  • Heat the oven to 150C/130C fan/gas 2. Beat together the eggs, vanilla and sugar with a wooden spoon until combined. Mix in the milk and cream and pour into a medium-sized dish. Finely grate over a generous grating of nutmeg.
  • Half-fill a roasting tin with water to make a bain-marie. Place the dish in the tin so that the water comes about three-quarters of the way up the sides of the dish. Bake for 45-50 mins, or until just set with a slight wobble in the centre. Serve warm or leave to cool in the fridge overnight. Serve with poached fruit.

  • Keep the milk at low flame. Beat eggs yolks in a bowl. Take another bowl and mix cornstarch and sugar. Add egg yolks to the cornstarch and sugar mixture and stir to combine. Mix the egg yolks, cornstarch, and sugar when the milk starts to boil. Do not add them too far in advance.
  • Combine 1 cup from the hot milk and mix it carefully. Now, add the mixture to the remaining warm milk and cook on low heat. Keep stirring for about 3-5 minutes with a wooden spoon or until the custard thickens.
  • Turn off the flame and then, add butter. Butter will make the custard thick once it cools down. Combine the vanilla extract and mix it again, then remove it from the stove.
