I'm one of those people who need chocolate on a regular basis. I looked high and low for a rich brownie recipe that called for cocoa instead of chocolate squares...and this is it. 1 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
1/2 cup butter, melted
1/2 cup all-purpose flour
1/3 cup baking cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
FROSTING:
3 tablespoons baking cocoa
3 tablespoons butter, melted
2 tablespoons warm water
1 teaspoon instant coffee granules
1-1/2 cups confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, beat the sugar, eggs and vanilla. Beat in butter. Combine the flour, cocoa, baking powder and salt; gradually add to batter and mix well. , Pour into a greased 8-in. square baking dish. Bake until a toothpick inserted in the center comes out clean, 25-30 minutes. Cool on a wire rack. , For frosting, combine the cocoa and butter. Combine the water and coffee granules; add to cocoa mixture. Stir in sugar until smooth. Frost brownies.

1 ⅛ cups all-purpose flour
¾ teaspoon baking powder
¾ teaspoon salt
1 cup white sugar
1 ½ cups unsweetened cocoa powder
⅔ cup vegetable oil
1 teaspoon vanilla extract
¾ cup evaporated milk
½ cup evaporated milk
⅓ cup sweetened cocoa mix
1 teaspoon butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square baking pan.
  • In a large bowl, combine the flour, baking powder, salt, sugar and unsweetened cocoa. Stir in the oil, vanilla, and 3/4 cup of evaporated milk until well blended. Spread the mixture evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
  • To make the frosting: In a small saucepan, combine the remaining evaporated milk, sweetened cocoa, and butter. Cook over medium heat until almost boiling, remove from heat and chill until brownies are ready. When brownies are completely cool, frost with the chilled icing and cut into bars, or frost them individually.

1 cup butter, melted
3 cups white sugar
1 tablespoon vanilla extract
4 eggs
1 ½ cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon salt
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
  • Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
  • Sift the flour, cocoa powder, and salt in a bowl. Gradually stir flour mixture into the egg mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.
  • Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove, and cool pan on wire rack before cutting.

Adapted from "Everyday Food". I used bittersweet (60% cocoa) chips and special dark cocoa powder for a dark, rich brownie; if you put the powder in with the chips and butter to melt it smooths out any lumps in the cocoa powder. Prep/cooking time do not include cooling time.

1/2 cup unsalted butter, cut into pieces, plus more for pan
1 cup all-purpose flour, spooned and leveled
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
8 ounces semisweet chocolate or 8 ounces bittersweet chocolate, chopped
1 1/4 cups granulated sugar
3 large eggs
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Brush a 9-inch square baking pan with butter; line the bottom and 2 sides of the buttered pan with parchment paper (leaving a 2-inch overhang for lifting), then butter the paper and set pan aside (this makes for easy removal; it's worth the time!).
  • In a small bowl, whisk the flour, cocoa powder, baking powder, and salt; set aside.
  • Place the chocolate and butter in a large heat-proof bowl set over (not in) a saucepan of gently simmering water.
  • Heat, stirring occasionally, until smooth, 2 to 3 minutes.
  • Remove bowl from saucepan.
  • Add sugar and mix to combine.
  • Add eggs and vanilla and mix to combine.
  • Add flour mixture; mix until just moistened (do not over-mix unless you like your brownies tough).
  • Transfer to prepared pan; smooth top.
  • Bake until a toothpick inserted in center comes out with just a few crumbs attached, 50 to 60 minutes.
  • Cool in pan for 30 minutes.
  • Using paper overhang, lift brownies out of pan, leaving on paper to cool completely on a wire rack.
  • Using a dampened serrated knife, cut into 16 squares.
  • Store in an airtight container at room temperature for up to 2 days.

I adapted this from one of my most favorite cookie recipes (#53301). I just always thought it would make a yummy brownie. This recipe doubles well, just use a 9x13 pan. Cook time may need adjustment.

1/4 teaspoon salt
1 cup semisweet chocolate chunk (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, mix together the butter and sugar. Add the egg and vanilla.
  • Blend in the cocoa. Add baking soda and salt. Mix well.
  • Add flour to the creamed mixture and then add the chocolate chunks.
  • Pour into a greased 8x8 baking dish and bake for 25-30 min at 350 degrees.
