A rich and moist cake flavored with chocolate and coffee.

3 cups all-purpose flour
2 ⅔ cups granulated sugar
3 tbsp cocoa powder (nice quality)
1 tsp kosher salt
1 tbsp baking soda
1 ½ tsp baking powder
½ cup sour cream
1/2 cup buttermilk
3 eggs (large)
1 1/4 cups coffee (hot, strong)
1/2 cup water
¾ cup veggie oil
1 lb butter (unsalted)
2 lb confectioners sugar
1 tbsp cocoa powder
1 tbsp espresso powder
1 tbsp vanilla
3 tbsp heavy cream
1/2 tsp salt
1/2 cup dark chocolate (chopped)
1/4 cup heavy cream
1/2 cup chocolate covered espresso beans

Steps:

  • Preheat oven to 350F.
  • Butter and flour three 9-inch cake pans. I highly recommend using cake strips for a more even bake.
  • Sift together the dry ingredients (including the sugar) into the bowl of a stand mixer and whisk to combine.
  • Add the wet ingredients into a large bowl and whisk together.
  • Add the wet ingredients to the dry ingredients.
  • Whisk to combine then mix on level 2 for two minutes.
  • Distribute batter evenly to the three pans and bake for about 35-40 minutes at 350F or until a toothpick inserted in the center comes out clean. I recommend rotating the pans halfway through the bake.
  • Allow time to cool for 5 minutes, then invert onto wire racks to cool fully.
  • Sift the confectioners' sugar, salt, cocoa and espresso powder into a bowl.
  • Whip the butter for about 5 minutes using a paddle attachment (in a standing mixer).
  • Beat in the sugar mixture slowly.
  • Add vanilla and drizzle in the cream while beating until desired consistency is reached. If the you want the buttercream to have a stronger espresso taste, add as much as you would like!
  • Warm the cream and pour over the chocolate. Set aside for a few minutes and whisk together. If there's a few bits of unmelted chocolate just microwave it for 10 seconds on half power and whisk again.
  • Pipe buttercream on the first layer, add a swirl of the ganache then a sprinkle of chopped espresso beans.
  • Add the second layer on and repeat the process.
  • Add third layer on and cover cake with buttercream. Smooth using an offset spatula.
  • Drizzle ganache on top of cake, smooth the top and allow to set.
  • Pipe dollops of buttercream on the edge using a large closed star tip.
  • Top each dollop with a chocolate covered espresso bean.

1/2 cup all-purpose flour
1/4 cup whole wheat pastry flour (plus 2 tablespoons)
1 cup granulated sugar
1/4 cup unsweetened cocoa powder (plus 2 tablespoons, plus extra for the pan)
2 teaspoons espresso powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon kosher salt
1/2 cup low fat buttermilk
1/4 cup coconut oil (melted and cooloed)
1 large egg (at room temperature)
1 teaspoon pure vanilla extract
1/2 cup freshly brewed hot coffee
4 ounces reduced fat cream cheese (at room temperature)
3 tablespoons unsalted butter (at room temperature)
1 tablespoon brewed coffee (at room temperature or cold)
1 teaspoon espresso powder
1/2 teaspoon pure vanilla extract
1 1/2 cups powdered sugar
1/4 cup unsweetened cocoa powder
1/8 teaspoon salt
Chopped chocolate covered espresso beans (for decorating)

Steps:

  • Preheat the oven to 350 degrees F. Butter and lightly dust with cocoa powder a 6-cup bundt pan or an 8-inch x 2-inch round cake pan, tapping out the excess. If using a round cake pan, line the bottom with parchment paper, then butter and dust with cocoa again.
  • Into the bowl of a standing mixer fitted with the paddle attachment or a large mixing bowl, briskly whisk together the all-purpose flour, whole wheat pastry flour, sugar, cocoa powder, espresso powder, baking soda, baking powder, and salt until well combined and no lumps remain.
  • In a separate bowl, combine the buttermilk, oil, eggs, and vanilla until well blended. With the mixer running on low speed, slowly pour the wet ingredients into the dry. Then, keeping the mixer running on low, pour in the coffee and mix gently, just until combined. Scrape the bottom of the bowl with a rubber spatula to ensure all ingredients are blended.
  • Pour the batter into the prepared pan and bake for 35 to 40 minutes, until a toothpick inserted in the center of the cake comes out clean (either of the two pans will bake in this amount of time). Remove from the oven, place the pan on a wire rack, then let the cake cool in the pan for 30 minutes. Carefully invert onto a serving plate.
  • Prepare the frosting: in a large mixing bowl, beat together the cream cheese and butter on medium speed until light and fluffy.
  • In a small bowl, stir together the coffee, espresso powder, and vanilla extract so that the espresso powder dissolves, then add the mixture to the bowl with the cream cheese and butter and beat until combined. In a separate bowl, sift together the powdered sugar, cocoa powder, and salt. With the mixer on low, slowly add the powdered sugar mixture to the cream cheese. Mix until well blended. Add a little more liquid coffee or powdered sugar as needed to reach the desired consistency. Spread over the cooled cake. Sprinkle immediately with chopped chocolate covered espresso beans. Dive in!

2 1/2 cups ground chocolate wafer cookies (from about 1 1/3 9-ounce packages)
1 1/2 tablespoons instant coffee powder
6 tablespoons (3/4 stick) unsalted butter, melted
For fillings
12 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
6 tablespoons (3/4 stick) unsalted butter, cut into pieces
6 teaspoons instant coffee powder
1/2 cup sugar
3 tablespoons water
5 large egg whites
2 3/4 cups chilled whipping cream
1/4 cup powdered sugar
1/4 teaspoon ground cinnamon

Steps:

  • Make crust:
  • Preheat oven to 350°F. Blend ground cookies and coffee powder in processor. Set aside 3/4 cup cookie crumb mixture. Add butter to remaining crumb mixture and process until crumbs are moist. Press mixture onto bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Bake crust until just firm to touch, about 10 minutes. Cool completely.
  • Make fillings:
  • Stir chocolate, butter and 1 teaspoon coffee powder in heavy medium saucepan over medium-low heat until melted and smooth. Transfer to large bowl. Set chocolate mixture aside while preparing meringue.
  • Stir 1/2 cup sugar and 3 tablespoons water in small saucepan over low heat until sugar dissolves. Increase heat and boil syrup without stirring until candy thermometer registers 240°F, tilting pan to submerge bulb, about 4 minutes.
  • Meanwhile, using electric mixer, beat whites in large bowl to soft peaks.
  • Gradually beat hot syrup into whites. Continue beating until medium-stiff peaks form, about 3 minutes. Fold 1/3 of meringue into lukewarm chocolate mixture to lighten. Fold in remaining meringue. Set chocolate meringue aside.
  • Combine 1/4 cup cream and 5 teaspoons coffee powder in large bowl; stir to dissolve. Add 2 1/2 cups cream, powdered sugar and cinnamon and beat until firm peaks form. Fold 1 1/2 cups coffee whipped cream into chocolate meringue, forming mocha mousse.
  • Spoon half of mocha mousse over bottom of crust. Sprinkle 3 tablespoons reserved crumb mixture over mousse. Spoon half of coffee whipped cream over crumbs. Sprinkle with 3 tablespoons crumbs. Repeat layering with remaining mocha mousse, crumbs, coffee whipped cream and crumbs. Cover and refrigerate until set, about 4 hours. (Can be made 2 days ahead; keep refrigerated.) Run knife around pan sides to loosen torte. Remove pan sides and serve.

Steps:

  • TO PREPARE CAKE:.
  • Preheat oven to 350°F.
  • Combine flour and next 6 ingredients(through salt) in a large bowl.
  • Add mayonnaise and oil beat with a mixer at low speed until well blended.
  • Slowly add brewed coffee and vanilla, beat with a mixer at low speed 1 minute or until well blended.
  • Stir in chocolate; pour batter into 9x13" baking dish coated with cooking spray.
  • Bake for 30 minutes or until wooden pick inserted in center comes out clean.
  • Cool completely in pan on wire rack.
  • TO PREPARE MOCHA CREAM:.
  • Combine water and granules in a large bowl stir until granules dissolve.
  • Add marshmallow creme; beat with a mixer at low speed until smooth.
  • Fold in whipped topping.
  • Spread mocha cream over top of cake; drizzle with chocolate syrup and sprinkle with nuts.

Steps:

  • Arrange rack in center of oven and preheat oven to 350 degrees F. Spray a 9 by 13-inch cake pan with cooking spray and set aside.
  • Whisk together flours, cocoa, salt, baking soda and baking powder in a medium bowl, then sift ingredients through a fine mesh strainer.
  • In a large mixing bowl, whisk together melted butter and oil. Add eggs and egg whites and whisk to incorporate. Fold in yogurt, vanilla, sugar and dissolved espresso powder. Melt the chocolate in the microwave for 90 seconds or over a double boiler. Fold chocolate into batter.

  • Filling:.

  • Make cake layers:
  • Preheat oven to 350°F with rack in middle. Butter 1 sheet pan and line bottom with parchment paper, then butter parchment. Dust with flour, knocking out excess.

  • Fold one third of whites into chocolate mixture to lighten, then fold in remainder gently but thoroughly. Spread batter evenly in lined sheet pan.
  • Bake soufflé layers:
  • Bake until puffed and a wooden pick inserted into center comes out with a few crumbs adhering, 25 to 30 minutes. Transfer pan to a rack, then cover top of soufflé with 2 layers of damp paper towels. Let stand 5 minutes. Remove towels and cool soufflé completely in pan (soufflé will deflate as it cools). Sift cocoa over soufflé, then loosen edges with a sharp knife.
  • Halve soufflécrosswise, cutting through parchment, to form 2 (10-by 7 1/2-inch) layers.
  • Make meringue layers:
  • Toast hazelnuts, then cool, wrapped in a kitchen towel, and rub off any loose skins.
  • Reduce oven to 250°F
  • Finely chop nuts.
  • Beat whites with salt and cream of tartar using electric mixer until they just hold soft peaks. Beat in sugar, 1 tablespoon at a time, and beat until meringue is stiff but still glossy.
  • Line bottom of third sheet pan with parchment. Put small dabs of meringue under corners of parchment to secure to baking sheets.
  • Fold nuts into meringue and spread evenly in pan. Bake until set and pale golden, 25 to 30 minutes.
  • Halve meringue crosswise, cutting through parchment, to form 2 (10-by 7 1/2-inch) layers. Return to oven and bake until crisp, 45 minutes to 1 hour more. Cool in pan, then peel off parchment.
  • Make syrup and assemble cake:
  • Bring water, sugar, and espresso powder to a boil, stirring until sugar has dissolved. Cool.
  • Loosen edges of 1 cake layer with a knife and invert onto a flat platter. Carefully peel parchment from cake and brush with some of syrup. Spread with 1 1/4 cups mocha buttercream.
  • Top with 1 meringue layer and spread with 1 1/4 cups coffee buttercream.
  • Carefully invert 1 soufflé layer onto buttercream and peel off parchment, then gently spread with 1 1/4 cups coffee buttercream.
  • Repeat layering, ending with coffee buttercream (there will be some left over). Chill at least 1 hour (after that, wrap in plastic wrap). Trim all around cake with a long sharp knife to neaten edges. Bring to room temperature (about 1 hour) before serving.
