4 tablespoons unsalted butter, room temperature, plus more for pan
1 cup sifted cake flour, (not self-rising), plus more for pan
1/2 teaspoon baking soda
1/4 teaspoon baking powder
Pinch of ground cloves
1 very ripe large banana, mashed (about 1/2 cup)
1/4 cup buttermilk
1/2 teaspoon pure vanilla extract
1/2 cup firmly packed dark-brown sugar
1 large egg
1/4 teaspoon salt
1/4 teaspoon ground cinammon
1/3 cup chopped toasted pecans
Confectioners' sugar, for dusting
Sweetened whipped cream, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 6-by-2-inch round cake pan. Line bottom with parchment paper; butter, and dust with flour. Set aside. Into a bowl, sift flour, baking soda, baking powder, salt, cinnamon, and cloves. In another bowl, whisk banana, buttermilk, and vanilla.
  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg. Add flour mixture in two batches, alternating with banana mixture. Stir in pecans. Pour into pan; bake until golden brown, about 45 minutes. Let cool 10 minutes. Run a knife around edge; invert onto a wire rack. Reinvert cake; let cool. Dust with confectioners' sugar, and serve with whipped cream if desired.

3 cups all-purpose Flour
1½ tsp Baking Soda
½ tsp Salt
4 large very ripe Bananas, ( mashed*)
3 tbsp Lemon Juice and zest of 1 Lemon, (or 4 Tablespoons fresh Orange juice plus zest of 1 Orange)
3/4 cup unsalted Butter, (softened)
1½ cups brown Sugar, ( can use white, too but the cake will be paler in color)
3 large Eggs
2 tsps Vanilla Extract
1½ cups Buttermilk
1 cup Pecans, (chopped)
½ cup unsalted Butter, (softened)
1 (8oz) package cream cheese, (softened)
3½ cups Confectioners or Icing Sugar
1 tsp Vanilla Extract

Steps:

  • Preheat the oven to 300 F (yes, that's the right temperature). Grease a 9 x 13 baking dish. Set aside. If you are in a hurry you can also preheat to 325 F.Whisk together the flour, baking soda and salt in a bowl. Set aside.
  • In a separate bowl, mix the mashed bananas with the orange juice and zest. Set aside.Cream the butter and sugar until light and fluffy. Beat the eggs one at a time then add the vanilla extract. Stir in the banana-orange mixture. On low speed, alternately add the flour and the buttermilk to the mixture, beginning and ending with the flour. Gently fold in the nuts.
  • Transfer the batter to the prepared baking dish and bake in the preheated oven (300 F) for about 50-55 minutes or until a toothpick inserted in the center comes out clean. If baking at 325 F, check cake around 45-50 minutes to see if it's done. Oven heating varies so please adjust baking time accordingly.

0.5 (3 7/8 ounce) package vanilla pudding mix
3 bananas, ripe and mashed
3/4 cup water
4 eggs
1/2 cup water
1/2 cup vegetable oil
1 teaspoon vanilla
3/4 cup pecans, chopped

Steps:

  • Preheat oven to 325 and grease 2 round cake pans or one large cake pan.
  • Mash bananas and mix all ingredients except pecansin a large bowl.
  • Use a hand mixer and beat ingredients for about 3 minutes.
  • Pour batter into baking pans (split evenly) or into large baking pan.
  • Bake for 40-50 minutes or until tester comes out somewhat dry.
  • I recommend frosting this with a nice cream cheese frosting.

2 eggs, beaten
1 teaspoon baking soda
¼ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square baking dish.

1 (18.25 ounce) package butter pecan cake mix
1 ¼ cups water
⅓ cup vegetable oil
3 eggs
2 bananas, mashed
½ cup chopped pecans
½ cup toffee baking bits
½ cup butter
1 cup brown sugar
¼ cup milk
3 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease and flour a 9-inch fluted tube pan (such as a Bundt®).
  • Mix butter pecan cake mix, water, vegetable oil, eggs, bananas, pecans, and toffee baking bits in a bowl until thoroughly combined. Pour batter into prepared tube pan.
  • Bake in the preheated oven until cake is lightly golden brown and a toothpick inserted into the center comes out clean, 30 to 40 minutes. Cool the cake in the tube pan for 15 minutes. Place a serving platter on top of the pan and invert pan. Gently lift pan from cake and let cake finish cooling.
  • Melt butter and brown sugar in a saucepan over low heat, stirring until combined. Bring to a boil, stir in milk, and return to a rolling boil. Remove from heat; beat confectioners' sugar and vanilla extract into butter mixture to make a smooth frosting. Spread over cooled cake and allow to stand until frosting has set, about 15 minutes.

1 cup mashed bananas
1 teaspoon vanilla extract

PECAN FILLING:
1/2 cup sugar
2 tablespoons all-purpose flour
1/2 cup half-and-half cream
2 tablespoons butter
1/2 cup chopped pecans

1 teaspoon vanilla extract
FLUFFY FROSTING:
1/4 cup shortening
1/4 cup butter, softened
2 cups confectioners' sugar

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine, flour baking powder, soda and salt. Add alternately to the creamed mixture with buttermilk. Stir in nuts. , Pour into two greased and floured 9-in. round baking pans. Sprinkle with coconut. Bake at 375° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes before removing to wire racks to cool completely. , For filling, combine the sugar, flour, cream and butter in a saucepan. Bring to a boil over medium heat; cook and stir for 1-2 minutes or until thickened. Remove from the heat. Add nuts, salt and vanilla; cool. Spread filling over one cake layer with coconut side up.   • Preheat oven to 180C/fan
  • Mash the bananas in a bowl
  • In a separate bowl, put in the eggs, caster sugar and margarine
  • whisk or mix for about a min
  • add flour and bicarbonate of soda and mix
  • and vanilla and bananas and mix
  • divide into 2, 15cm round cake tins lined with grease proof paper
  • Place in oven for 25 mins on middle shelf
  • When cooked leave for 5 mins to cool before transfering to wire rack to cool completly
  • Once cooled, mix butter, milk and icing together, once mixed add a nice thick layer to one half and a nice layer of jam to the other half and place together.

1 teaspoon bicarbonate of soda
2 tablespoons milk
120 g margarine or 120 g butter
1 1/2 cups self raising flour

  • Preheat oven to 180 degrees.
  • Place in a saucepan the sugar, mashed banana, bi-carb soda, milk and margarine/butter. Stir until it is a caramel colour. Cool mixture.
