12 ounces ground beef or 12 ounces ground chuck
salt & freshly ground black pepper
1 tablespoon unsalted butter
1 tablespoon olive oil
1 large shallot, finely chopped
2 garlic cloves, smashed
2 ounces mushrooms, sliced (button or assorted)
3/4 cup sweet marsala wine
1/2 cup low sodium beef broth
1 fresh rosemary sprig
4 ounces sharp cheddar cheese or 4 ounces provolone cheese
French baguette (toasted)

Steps:

  • Heat a cast iron skillet over medium high heat.
  • Shape the ground beef into 4 oblong patties, about 4 inches long each. Drizzle the patties with a little olive oil and sprinkle with salt and pepper; repeat on the opposite sides. Cut the french bread into pieces a little shorter than each of the patties and set aside.
  • Brown the patties in the skillet on both sides until the burgers are medium rare. Transfer the burgers to a plate and keep warm; leave the juices in the pan.
  • Melt 1 tablespoon of butter and 1/2 tablespoon of oil in the skillet. Add the shallot and garlic. Saute until fragrant, about 30 seconds.
  • Add another 1/2 tablespoon of the olive oil, if necessary, then add the mushrooms and saute until tender and the juices evaporate, about 3 minutes. Season with salt. Add the Marsala. Simmer until the Marsala reduces by half, about 2 minutes. Add the broth and the rosemary sprig. Simmer until reduced by half, about 4 minutes. Return the burgers to the skillet. Cook burgers until they are medium, turning to coat, about 1 minute. Season the sauce with salt and pepper, to taste. Add 1 oz of cheese to the top of each burger and cover the pan to allow the cheese to melt, about 2 minutes.
  • When the cheese has melted, remove the burgers from the pan and place on the French bread. Top the burgers with Marsala sauce and then the top of the French bread. Serve hot.

Super Easy Chicken Marsala - made out of mushrooms, garlic, chicken breast and white wine. This Easy Chicken Marsala Recipe tastes amazing!

4 skinless boneless chicken breasts (pounded)
salt and pepper (to taste)
1/2 cup flour
2 tablespoons avocado oil
3 tablespoons butter
16 ounces mushrooms (sliced)
1/2 cup onion (finely chopped)
1 clove garlic (finely chopped)
3/4 cup white wine (Chardonnay wine)
3/4 cup chicken broth
parsley for garnish

Steps:

  • To make chicken marsala, using a meat pounder, pound chicken breasts under plastic food wrap until about 1/4 inch thickness. After, season pounded chicken breasts with salt and pepper on both sides.
  • In a mixing bowl, combine 1/2 cup flour, salt and pepper to taste and mix well. Coat chicken breast with flour mixture, on both sides.
  • Using a large skillet, preheat 2 tablespoons of avocado oil and 2 tablespoons of butter over medium/high heat. Next, add 2 chicken breasts and saute for about 4 minutes or until golden brown on each side.
  • Transfer chicken to a plate and keep warm using a lid from the pot or a foil paper. Cook another 2 chicken breasts until golden color and transfer to a plate.
  • Into the same skillet add 1 tablespoon of butter, 16 oz. of sliced mushrooms and 1/2 cup of chopped onion. Saute for 10 minutes, stirring few times.
  • Next, add 1 clove of finely chopped garlic and saute for about 1 minute, stirring continuously. After pour in 3/4 cup of white wine and 3/4 cup of chicken broth, simmer until mixture reduce in half, scraping up browned pieces from the bottom of the skillet. Season with salt and pepper to taste, if needed.
  • Now add browned chicken breasts back to the skillet, cover with sauce, cook until heated thru, about 2 minutes. Garnish with freshly chopped parsley and sprinkle of back pepper. Serve with Quick Mashed Potatoes. Enjoy!

1 pound ground chicken
½ medium onion (diced finely)
3 garlic cloves (pressed)
1 teaspoon ginger (grated)
2 green chilies (minced)
1 tablespoon ground coriander
1 teaspoon garam masala
½ teaspoon ground cumin
½ cup quinoa (cooked (optional))
½ cup cilantro (chopped)
1½ teaspoons kosher salt
1 tablespoon olive oil
4 burger buns
2 lettuce leaves
1 tomato (sliced)
1 medium red onion (sliced)

Steps:

  • Preheat the oven or grill to 375 degrees. Line a large baking tray with parchment paper and spray olive over it. Keep aside.
  • In a medium mixing bowl add all the ingredients for burger patties and mix well.
  • Flatten the mix in the bowl and then make 2 cross slits in the middle to divide the mix into 4 quarters.
  • Use a spoon or spatula shape each quarter into a round ball and drop it on the lined tray, 3 to 4 inches apart from each other Shape into a round circle with a spoon and then gently press the meat into a flat 3 to 4-inch patty. Press the middle of the patty with your thumb or back of a spoon, this will allow the patty surface to cook flat and not puff up.
  • Lightly spray over the burgers and cook in the preheated oven for 25 minutes. No need to turn halfway over.

2 large carrots, finely chopped
½ bell pepper, finely chopped
½ cup corn
½ cup edamame
½ cup oats
½ teaspoon ginger
½ teaspoon turmeric
1 teaspoon garam masala
¼ teaspoon mustard seed
½ teaspoon cayenne pepper
2 cloves garlic
1 tablespoon olive oil
½ teaspoon salt
1 tablespoon oil

Steps:

  • Finely chop two red potatoes, and two large carrots. Sauté in a little oil for a few minutes.
  • Add the bell pepper, corn, and edamame. Continue to cook until the potatoes are soft.
  • In a food processor, grind the oats until they are a grainy powder.
  • Add the veggies, olive oil, and spices. Blend.
  • Shape the mixture into patties, and fry, grill, bake, or freeze them for later!
  • Serve with toppings of choice! (Topping in this video: Vegan mayo, mustard, ketchup, dill pickles, onion, lettuce, tomatoes, and avocado.)

This super juicy chicken burger is topped with marsala mushrooms and lots of cheese!

2 lbs. ground chicken
1 egg
1/4 cup bread crumbs
2 tablespoons marsala wine
2 teaspoons minced onion
1 1/2 teaspoons garlic powder
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/4 cup mayonnaise
12 slices of white American Cheese
6 hamburger buns
lettuce or flat-leaf parsley for garnish
16 oz. mushrooms, cleaned and sliced
2 tablespoons butter
2 tablespoons marsala wine
1 tablespoon oyster sauce
1/4 teaspoon ground black pepper
1/2 cup mayonniase
1 tablespoon dijon mustard
1 tablespoon marsala wine
1 tablespoon minced onion
pinch of salt

Steps:

  • Melt the butter in a large skillet until bubbling then add in the sliced the mushrooms.
  • Cook for 10 minutes until browned, stirring often.
  • Add in the marsala wine to deglaze the pan, stir, and then add the oyster sauce and pepper.
  • Remove from the heat and set aside.
  • Put all of the ingredients (except the buns and lettuce) for the chicken burgers into a large bowl.
  • Mix together with your hands and then form into 6 oz. patties. It helps if you spray your hands with cooking spray before you make the patties so the chicken doesn't stick.
  • Heat your grill to medium-high heat.
  • Spray your grill with cooking spray and then add the chicken burgers.
  • Grill for four minutes per side and then add two slices of cheese to each burger and close the lid to melt the cheese for one minute.
  • Place some lettuce or parsley on the bottom of each bun.
  • Put a chicken burger on top and then cover with a big scoop of the mushrooms.

1 large shallot, minced
3 tablespoons fresh sage, finely chopped
1/4 cup fresh flat leaf parsley, finely chopped
3 garlic cloves (2 finely chopped, 1 cracked away from skin)
1 tablespoon Worcestershire sauce
1 tablespoon mccormick's McCormick's Montreal Brand steak seasoning
2 tablespoons extra virgin olive oil, plus more
extra virgin olive oil, for liberal drizzling
1/3 lb italian Fontina cheese, sliced
1 tablespoon unsalted butter, cut into small pieces
1 medium onion, quartered lengthwise, then thinly sliced
4 portabella mushroom caps, thinly sliced
salt
fresh ground black pepper
1/2 cup marsala
4 crusty rolls, split

Steps:

  • Heat a grill or large nonstick skillet over med-high heat.
  • Place meat in a bowl; add in shallots, sage, parsley, chopped garlic, Worcestershire, grill seasoning, and a healthy drizzle of olive oil; mix gently but thoroughly.
  • Score mixture into 4 quarters; for each portion into 1-inch thick patties.
  • Cook the patties for 5-6 minutes on each side.
  • Place the cheese on top of the patties in the last 2 minutes of cooking time and loosely tent the pan with foil to melt the cheese.
  • While the burgers cook, heat a skillet over med-high heat; add in 2 tablespoons olive oil and the butter; when the butter melts, add ¾ of the sliced onions and the sliced mushrooms; cook about 8-10 minutes, until the mushrooms are a deep brown, stirring often.
  • Season the mushrooms with salt and pepper after they brown.
  • Add in the Marsala; cook it down to glaze the mushrooms with its flavor; remove pan from heat.
  • Brown the split rolls under the broiler and rub lightly with the cracked garlic.
  • Drizzle the rolls lightly with olive oil and top with cheese covered burgers and a pile of Marsala mushrooms.
  • Set roll tops in place and serve.
