These are tasty, healthy waffles with the addition of superfoods spinach and chia. Top with peanut butter, whipped cream and honey, sugar and cinnamon, or choose your favorite toppings.

2 eggs
1 cup packed fresh spinach
¾ cup oats
½ cup cottage cheese
⅓ cup applesauce
1 tablespoon chia seeds
1 teaspoon baking powder

Steps:

  • Preheat a waffle iron according to manufacturer's instructions.
  • Combine eggs, spinach, oats, cottage cheese, applesauce, chia seeds, and baking powder together in a smoothie blender (such as a NutriBullet®); blend until smooth, about 5 minutes.
  • Pour mixture into the preheated waffle iron in batches if needed, and cook until each waffle is golden brown and the iron stops steaming, about 5 minutes.

1 pinch salt
1 ¾ cups milk
1 teaspoon vanilla
½ cup oil
2 eggs

Steps:

  • Mix the dry ingredients till just combined.
  • Add the wet ingredients and mix till small chunks are visible
  • Put ¾ -1 cup of batter in a waffle iron. Cook for 3-4 minutes.
  • Top as desired and serve.

2 teaspoons baking powder
1 teaspoon kosher salt
1 cup whole milk
½ cup buttermilk
4 tablespoons unsalted butter, melted and cooled
½ teaspoon vanilla extract
2 large eggs, separated
⅓ cup sugar
nonstick cooking spray, for greasing
butter, for serving
maple syrup, for serving

Steps:

  • Preheat a waffle iron to medium-high.
  • In a large bowl, whisk together the flour, baking powder, and salt. Make a well in the center and pour in the milk, buttermilk, melted butter, vanilla, and egg yolks. Whisk until the batter just comes together (there will be some lumps).
  • Add the egg whites to a medium bowl and beat with an electric hand mixer until foamy. With the mixer running, gradually add the sugar and continue beating until stiff peaks form. Gently fold the egg whites into the batter until just combined.
  • Spray the heated waffle iron with nonstick cooking spray. Ladle the batter into the waffle iron, close the lid, and cook according to manufacturer's instructions until the waffle is golden brown and crisp, 5-6 minutes. Transfer the waffle to a plate and repeat with the remaining batter.
  • Serve the waffles hot, with butter and maple syrup alongside.

SUPER EASY, SUPER TASTY VEGAN WAFFLES



Super Easy, Super Tasty Vegan Waffles image

Yes, I know there are dozens of recipes for vegan waffles here on zaar, but these are so good, I just had to share them here as well. They only require the most basic pantry staples and come out fluffy on the inside with a nice crunch to the outside. I was given this recipe by a friend of a friend, who made these at a party and was impressed! I hope youll like this as much as we do! :) Feel free to use different flavours of non-dairy milk.

Number Of Ingredients 7

500 g flour (~4 cups)
1 (7 g) packet baking powder (enough for 500 g/4 cups flour)
1/2 teaspoon salt
125 g sugar
500 ml soymilk (or other non-dairy milk, I used vanilla rice milk)
100 ml sparkling water
2 tablespoons oil

Steps:

  • Combine all of the dry ingredient in a big bowl.
  • In a second bowl mix oil, soy milk and water.
  • Add this mixture to the dry ingredients and using an electric mixer mix on medium speed until a smooth batter has formed. The dough should be soft and rather thick close to pancake batter. If its too thick add in a tad more milk or water.
  • Allow the dough to sit for 10 minutes before using. If youre in a hurry you can skip this step, the waffles will still turn out great.
  • Bake the dough in a pre-heated waffle iron until the waffles are golden and cooked through. How long this takes will vary greatly from waffle iron to waffle iron.
  • Enjoy with topping of your choice. :).

2 slices bacon
1 clove garlic, minced
2 cups Birds Eye Super Sweet Corn, cooked according to package instructions and drained
¼ cup green onion, plus more for garnish
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
2 tablespoons mayonnaise
½ cup sour cream
2 cups shredded pepper jack cheese, divided
¼ cup white corn tortilla chips, crushed

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a large cast iron skillet over medium heat, cook the bacon until it is fully cooked and crispy, 3-4 minutes. Remove from the pan and let cool, then crumble.
  • Add the garlic to the pan and cook for about 1 minute, or until lightly browned and fragrant. Remove the pan from the heat.
  • Add the Birds Eye Super Sweet Corn, crumbled bacon, green onions, salt, black pepper, mayonnaise, sour cream, and 1½ cups of pepper Jack cheese to the pan with the garlic and stir well to combine. Spread in an even layer and smooth the surface.
  • Transfer the pan to the oven and bake for 10 minutes, or until the corn mixture is completely heated through and bubbling in the center. Remove the pan from the oven.
  • Turn the broiler on high.
  • Top the baked corn mixture with the remaining ½ cup of pepper Jack cheese and the crushed tortilla chips.
  • Place the pan under the broiler for 1-3 minutes, or until the cheese is bubbling and slightly browned.
  • Garnish the corn skillet with sliced green onions and serve immediately.
  • Enjoy!
