SUPER SEED ENERGY BARS



Super Seed Energy Bars image

Crunchy seeds, chewy honey and sunflower seed butter, savory nuts, and sweet cranberries make these energy bars are the whole package.

Nonstick cooking spray
¾ cup unsweetened shredded coconut
½ cup chopped raw pecans ((or walnuts or cashews))
⅓ cup sesame seeds
¼ cup raw pumpkin seeds
¼ cup ground flax seeds
¼ cup unsweetened dried cranberries ((or unsweetened dried fruit like apricots, blueberries, raisins, or cherries))
¼ tsp. sea salt ((or Himalayan salt))
¼ cup raw honey
¼ cup sunflower seed butter

Steps:

  • Preheat oven to 350° F.
  • Line an 8 x 8-inch pan with parchment paper. Lightly coat with spray. Set aside.
  • Cook coconut, pecans, sesame seeds, and pumpkin seeds in a medium nonstick skillet over medium-low heat, stirring frequently, for 4 to 5 minutes, or until toasted.
  • Place coconut mixture, flax seeds, cranberries, and salt in a large mixing bowl; mix well.
  • Add honey and sunflower seed butter; mix well.
  • Place mixture in prepared pan. Press down hard to pack mixture evenly in pan. (Packing the mixture will prevent the bars from crumbling.)
  • Bake for 14 to 16 minutes. Cool bars completely before cutting.
  • Lift parchment paper from pan; cut into 12 bars.

This was given to me by a friend, I was really surprised at how much it really helps when I feel tired. I keep mine in the freezer then pull a couple out when I need a pick-me-up and they are ready for me to eat. You can substitute almond butter for peanut butter, if desired.

1 cup rolled oats
½ cup miniature semisweet chocolate chips
½ cup ground flax meal
½ cup peanut butter
⅓ cup honey
1 teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Stir oats, chocolate chips, flax meal, peanut butter, honey, vanilla extract, and salt together in a bowl. Roll into 24 balls and refrigerate until firm, at least 30 minutes.

1 large ripe banana, mashed
1 cup quick-cooking rolled oats
½ cup unsalted raw sunflower seeds
½ teaspoon ground cinnamon
½ cup nonfat dry milk powder
½ cup chopped pitted dates
½ cup raisins
½ cup chopped walnuts
½ cup chopped dried apricots
½ cup toasted wheat germ
⅓ cup pure maple syrup
¼ cup whole-wheat pastry flour

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly oil a 9x13-inch baking dish.
  • Mix the eggs, banana, oats, sunflower seeds, cinnamon, milk powder, dates, raisins, walnuts, apricots, wheat germ, maple syrup, and whole-wheat pastry flour together in a large bowl until thoroughly combined; spread the mixture evenly into the prepared baking dish.
  • Bake in the preheated oven for 20 minutes; set aside to cool. Cut into 9 bars and wrap with plastic to store.

This recipe was inspired by the Super Energy Bars made by the coffee roastery down the street - they're my absolute favorite for a work-day pick me up! This is the 2nd version... it's a recipe in progress. The original used oatmeal instead of flour and no applesauce - it was tasty, but more like granola than bars. I'll keep adjusting and updating the recipe!

2 cups whole wheat flour
1 cup unsweetened flaked coconut
1/2 cup sesame seeds
1/2 cup pumpkin seeds
1/2 cup sunflower seeds
1/2 cup flax seed
3/4 cup raisins
1/2 cup dark chocolate chips
1 1/2 cups natural-style peanut butter
1 cup applesauce
1/4 cup agave nectar (or substitute with 1/2 cup honey)
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350.
  • Mix all dry ingredients together.
  • Add peanut butter, honey, and vanilla - mix well. (I used my mixer - it's pretty dense).
  • Grease a 13x9 baking pan - spread mixture into pan (should be about an inch thick).
  • Bake for 15-20 minutes.
  • Cool and cut into squares. I'm going to refrigerate them (in the hopes they will hold together a little better).
  • Enjoy -- yummy & healthy!

3 ½ cups rolled oats
¾ cup sweetened dried cranberries (such as Craisins®)
⅔ cup sunflower seeds
½ cup white chocolate chips
½ cup toasted sesame seeds
½ cup oat bran
3 tablespoons flax seeds
1 tablespoon ground cinnamon
1 teaspoon salt
1 ½ cups creamy natural peanut butter
1 cup honey
5 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine oats, sweetened dried cranberries, sunflower seeds, white chocolate chips, sesame seeds, oat bran, flax seeds, cinnamon, and salt in a large bowl. Stir in peanut butter, honey, and oil. Press mixture firmly into a 9x13-inch baking pan.
  • Bake in the preheated oven until golden, 12 to 15 minutes. Remove from the oven and let cool for 5 minutes. Transfer to the refrigerator and chill for 10 minutes to set.
  • Slice chilled bars into 2x3-inch squares. Wrap in plastic wrap and store in the refrigerator.
