Steps:
- In a medium bowl, make the marinade. Rapidly whisk together all ingredients except the steak tips, until uniform and emulsified.
- Add the steak pieces and coat well in the marinade. Cover and marinate for at least 30 minutes. (If not making the steak tips right away, you can refrigerate in the marinade.)
- When you are ready to cook the steak tips appetizer, turn on the stovetop fan. Heat a heavy-bottom pan over medium-high to high heat. It's ready when a drop of water on it sizzles.
- Once the pan is hot, add a tablespoon of oil. Add the steak tips in a single layer. Cook without disturbing for 30 to 60 seconds, until the bottom is browned. Flip and cook for 30 to 60 more seconds, until the other side is browned.
- Serve with chimichurri sauce.

GARLIC BUTTER STEAK BITES
Cooking times will vary depending on the size you cut the steak bites, how you like your steak cooked, and how hot your skillet is. For the types of steak, use your favorite. Depending on the budget, we prefer ribeye, sirloin, tri-tip, and chuck shoulder steaks (aka London Broil steaks)

Steps:
- Trim off the large obvious piece of fat that runs along the side of the meat. Next, cut strips less than 1-inch wide. Rotate the meat and cut into small bite-sized pieces. If you see any more large chunks of fat, gristle or long silvery membrane, cut them off.Sprinkle generously with kosher salt and freshly ground pepper. Toss the meat around a bit to thoroughly coat with the seasonings. Next, turn on your ventilation fan overhead. Heat the skillet over medium high to high heat. As the pan heats, add about 2 tablespoons butter to the skillet. Allow the butter to melt, then brown, before you add the meat.Place some of the meat in the pan in a single layer. It should sizzle loudly when it hits the pan - if it doesn't, the pan isn't hot enough. Don't stir or disrupt the meat for 30-45 seconds. You want it to sizzle and brown on one side. Scoop as many steak bites as you can with your spatula and flip them over. Repeat until all the meat is turned. Cook for an additional 30 to 45 seconds-just long enough to sear the outside of the meat but NOT cook the inside.Remove the meat to a clean plate. Add a little more butter to the pan and repeat the cooking process with the next batch just as before. Lastly, when all the meat is nicely browned and removed to the plate, pour all that browned/blackened butter all over the meat. And enjoy!

Steps:
- Preheat the Air Fryer to 390° (or 400 if yours will go to that.)
- Cut the meat into 3/4" cubes, and toss the meat with 1 tablespoon of olive oil then sprinkle the seasoning salt over the mean. Set aside.
- Place the butter and grated garlic in a microwave-safe dish.
- Bring a pot of water to boil, and boil the potatoes for 5- 7 minutes to blanch the potatoes so they are just partially cooked.
- Drain the water away and toss with the remaining tablespoon of olive oil.
- Spray the bottom of the air fryer just before you are ready to add in the steak and potatoes with spray oil to prevent the meat from sticking.
- Add the steak first, then place the potatoes on top. Cook for 10 minutes, shaking at 5 minutes. If you want your meat more rare remove the meat, and let it rest while the potatoes continue to cook for 10 minutes.
- If you want your beef to finish more towards medium you will leave the meat in for about 14 minutes.
- The best way to get the meat to the temperature you desire is to use a thermometer to test it.
- Once done pull the meat and potatoes out and let the meat rest for 5 minutes. While the meat is resting place the butter/garlic dish in the microwave for 30 seconds to melt it.
- Once the meat has fully rested, plate up and drizzle a little butter over the top. Sprinkle fresh parsley over the top and serve.

- In a large skillet, turn the heat on to med/high and wait for the pan to get hot. Add the Tablespoon of oil and then the cut up meat. Spread the meat on to the bottom of the pan. All the pieces of meat should be touching the bottom of the pan. (This will ensure all the meat gets cooked evenly.
- Using tongs, lift one piece of the meat. If it is caramel colored, it's time to turn all the pieces of meat. It should only take ~2-3 minutes on each side. Stir the steak bites. Salt and pepper again to your preference. You will want to cook the steak bites on a high heat so you get the caramel color without overcooking the meat.

- Cut beef into ¾" cubes and trim away any excess fat or gristle. Season steak cubes lightly with salt and pepper. Remember, the sauce will also contain the salt from Worcestershire sauce.
- Heat a large heavy-bottom skillet, preferably cast iron, over medium-high heat and allow it to become very hot. Add 1 Tbsp butter and swirl the pan to melt butter and coat the bottom of pan. Immediately scatter half of seasoned steak cubes evenly across the bottom of pan and allow it to cook, undisturbed, for about 1 minute before stirring to cook on other sides.
- Continue cooking, stirring occasionally for 2–3 minutes or until browned on most sides then transfer to a plate. If you prefer your meat well done, just leave it in the pan a bit longer until cooked through. Add second batch of meat and cook in same manner, adding a bit more butter if necessary.
- Once all meat has been removed from skillet, return skillet to heat and add red wine and Worcestershire sauce. Allow liquid to bubble and reduce until only about 1 Tbsp remains. Remove from heat and add remaining ½ tsp butter and swirl or stir quickly to melt and emulsify butter into sauce, which will thicken slightly and make it nice and glossy.

- Place some steak in frying pan – only until you have a single layer of steak. Don’t add all of it at once - work in batches so that you’re cooking single layers until all the steak is cooked. Fry each batch for about 4-5 minutes until thoroughly cooked. As each batch is cooked, place in a serving dish.
- Once all the steak is cooked and in the serving dish, use the same frying pan to prepare the butter mixture. Place butter, garlic, and Italian seasoning into frying pan over medium-high heat and cook until melted and garlic is slightly browning (no more than 2 minutes).
