MEDITERRANEAN PESTO PASTA SALAD RECIPE
This easy Mediterranean pesto pasta salad recipe comes together in minutes and is perfect to go along with that summer BBQ! It's loaded with lots of delicious ingredients, like basil pesto, black olives, sun-dried tomatoes, artichokes and feta. It's sure to disappear fast!

Steps:
- Cook pasta according to package instructions (a little more than al dente as pasta will firm up as it cools). Drain well and toss with olive oil (to prevent noodles from sticking together) and spread out onto a baking sheet to cool while you're preparing remainder of ingredients. OR, in a pinch, drain, rinse with cold water and drain again.
- Place cooked pasta in a large bowl, stir in pesto (start with 3/4 cup). Then stir in red wine vinegar, salt, black pepper, crushed red pepper flakes, sun-dried tomatoes, olives, marinated artichoke hearts and chives. Note: if you want things more saucy, stir in remaining 1/4 cup of basil pesto.
- Stir in arugula.
- Finally, stir in feta. Serve and enjoy!

- Blend until smooth.
- Make adjustments to spices as necessary.
- Toss with olives and pasta.

- Serve with a sprinkle of cheese on top.

Steps:
- Bring a large pot of lightly salted water to a boil.
- Add pasta and cook for 8 to 10 minutes or until al dente.
- Drain and pour pasta into a large dish.
- Stir in the celery and tomatoes.
- In a separate bowl, whisk together the salad dressing and mayonnaise, then pour this mixture over the salad and toss again, to coat.
- Cover and chill until ready to serve.
- Enjoy!

- 1. Cook the pasta in a large pot of salted water, until al dente, according to instructions on the package. Once cooked, drain and rinse with cold water. Shake out any excess water. 2. Place pasta in a large bowl and stir in the pesto and Italian dressing. Add the cooked chicken and add to the bowl along with the baby spinach. Fold in the tomatoes, mozzarella, and Parmesan cheese. Season to taste with salt and pepper. Add olive oil or more Italian dressing if the mixture seems dry. 3. Cover and refrigerate until ready to serve. Before serving give it a stir. 4. Keeps in the fridge for up to 5 days.

- Cook the fusilli in a large pot of boiling salted water until fully cooked, 10 to 12 minutes (you don't want al dente pasta here). Drain and toss into a bowl with the olive oil. Cool to room temperature.
