15-Minute Lentil Soup image

This is a fast, hearty soup for dinner; vegetarians can use vegetable broth.

1 teaspoon extra-virgin olive oil
1/2 small onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
1 garlic clove, minced
Coarse salt and ground pepper
14.5 ounces low-sodium vegetable or chicken broth
3/4 cup cooked lentils (from a 15-ounce can), rinsed and drained
2 teaspoons red-wine vinegar

Steps:

  • In a medium saucepan, heat oil over medium. Add onion, carrot, celery, and garlic; season with salt and pepper and cook, stirring occasionally, until onion softens, 3 to 5 minutes. Add broth; bring to a boil and cook 5 minutes. Add lentils and cook until soup thickens slightly, 3 to 5 minutes. Stir in vinegar and season with salt and pepper.

  • Brown Sausage: Press “Saute” button to “Sauté More” function to heat up Instant Pot. Wait until “HOT” appears on the screen (~8mins). Add 2 tbsp (30g) ghee or unsalted butter in Instant Pot. Add in sliced sausages, then saute for 5 minutes.
  • Saute Onions & Garlic: Add in diced onion and shallot, then saute for 3 minutes. Add in minced garlic, 1 tsp (2.7g) ground cumin, and 2 bay leaves, then saute for another minute.
  • Deglaze: Pour in ½ cup (125ml) unsalted stock, then deglaze by scrubbing all the flavorful brown bits off the bottom of the pot. Give it a quick mix.
  • Pressure Cook Lentils: Add in 2 cups (400g) green lentils, diced carrots, diced celery, 1 tbsp (15ml) regular soy sauce, and 1 tbsp (15ml) fish sauce. Pour in 3½ cups (875ml) unsalted stock, then give it a quick mix. Layer 14 oz (400g) crushed tomatoes on top of the other ingredients in Instant Pot - do not mix!With Venting Knob in Venting Position, close the lid, then turn Venting Knob to Sealing Position. Pressure Cook at High Pressure 10 minutes + Natural Release 10 minutes. Open the lid carefully.

  • Rinse the lentils and add them to a medium pot along with the 2 cups of water over medium-high heat. Bring to the boil then reduce the heat and gently simmer for 30-40 minutes or until the lentils are cooked.
  • Meanwhile, cut the roasted vegetables into small chunks and them to a salad bowl along with the sun-dried tomatoes and chopped parsley.
  • When the lentils are done (tender, but not mushy), drain them and rinse with cold water, then drain them well again. Add the lentils to the salad bowl and toss well.
  • Add the lemon juice and the olive oil (you may need to add more depending on your taste preferences). Add salt & pepper to taste, toss to combine.

  • Place a large pot over medium heat. Add fat along with the onion and bell pepper. Sauté for 5-7 minutes, until the onion becomes translucent. Add garlic cloves and sauté for another 3 minutes.
  • Add salt, chili powder, cumin, smoked paprika, and cayenne pepper. Then add the diced tomatoes, tomato paste, beef broth, and lentils. Mix to combined, cover and let come a low boil for 10 minutes.
  • While the soup comes to a boil, place a small pan over medium heat and add the 1/4 cup avocado oil. Once hot, add the strips of tortillas and let cook in the oil for 10-15 seconds, until they begin to brown. Remove them from the oil with a slotted spoon and place on a paper towel then sprinkle with salt.
  • Once the soup is done cooking, top it with tortilla crisps, cream, cilantro, green onions, and a lime wedge.
