SUPER EASY FRUIT COCKTAIL COBBLER CAKE



Super Easy Fruit Cocktail Cobbler Cake image

This is a super quick, super easy dessert to make. Three ingredients and two minutes of prep time is all it takes. Doesn't get any easier. I've used other items instead of fruit cocktail like canned pears, canned blueberries or canned cherries. I've also sprinkled coconut on top of the cake before baking which adds great flavor. Serve plain, with Cool Whip or your favorite ice cream.

Number Of Ingredients 3

2 (15 ounce) cans fruit cocktail (I use Del Monte Carb Clever to cut down on some of the sugar)
1 (18 ounce) box yellow cake mix
1/2 cup unsalted butter, melted

Steps:

  • Pre-heat oven to 350 degrees.
  • Melt one stick of butter in a microwave safe dish for 1 minute 40 seconds on 50% power.
  • Pour entire contents of fruit cocktail cans (juice and all) into a 8 X 11 glass pan that has been sprayed with cooking spray. Spread fruit cocktail evenly on bottom of pan.
  • Sprinkle box of yellow cake mix, evenly, over top of fruit cocktail. Do NOT mix cake mix and fruit cocktail. Use the back of a spoon to smooth out cake mix.
  • Drizzle melted butter over top of cake mix. (Cake mix does not need to be completely covered in butter).
  • (Optional - sprinkle a small amount coconut on top of the cake before baking, photo shows it with coconut).
  • Bake on 350 degrees for 45 minutes.

1 (15 ounce) can fruit cocktail, I used cherry fruit cocktail
1/4 cup self-rising flour
1/4 cup milk
1/4 cup white sugar
1/4 cup butter or 1/4 cup margarine

Steps:

  • Preheat oven to 325°.
  • Dump entire can of fruit into small casserole dish.
  • Add flour, milk and sugar evenly to fruit. DO NOT STIR IT.
  • Dot entire surface with butter.
  • Bake until golden brown. About 45-50 minutes.

2 stick margarine
2 c milk
2 c sugar
2 c bisquick (or self-rising flour)
2 c fresh fruit or fruit pie filling
THIS IS A DOUBLE RECIPE. CUT ALL AMOUNTS IN HALF FOR REGULAR RECIPE FOR 8X8 PAN.

Steps:

  • 1. Melt margarine in microwave.
  • 2. Add milk, flour and sugar; use wisk to blend all ingredients well
  • 3. Spray 9x13 baking dish with baking spray.
  • 4. Put 2 cups of fruit or (pie filling, if desired) in bottom of dish.
  • 5. Pour milk mixture over fruit.
  • 6. Bake at 350 degrees for 45 minutes to an hour. (Less time for single recipe.)

2 tsp. finely grated lemon zest
1/4 cup fresh lemon juice
1 cup sugar, divided
3/4 tsp. kosher salt, divided
1/2 cup (1 stick) unsalted butter
1 cup all-purpose flour
1 1⁄2 tsp. baking powder
1 cup whole milk
1 tsp. vanilla extract
Vanilla ice cream or whipped cream (for serving; optional)

Steps:

  • Toss peaches, lemon zest, lemon juice, 1/4 cup sugar, and 1/4 tsp. salt in a large bowl. Let sit, stirring occasionally, until saucy, about 15 minutes.
  • Preheat oven to 350°F. Place butter in a 13x9" glass or ceramic baking dish and heat in oven until melted, 8-10 minutes. Remove pan from oven.
  • Meanwhile, whisk flour, baking powder, and remaining 3/4 cup sugar and 1/2 tsp. salt in another large bowl. Add milk and vanilla and whisk until batter is smooth with no lumps. Pour evenly over melted butter in baking dish (do not mix). Spoon fruit mixture and 3 Tbsp. of the accumulated juices evenly over batter.
  • Bake cobbler, rotating pan halfway through, until batter is puffed and lightly golden across the surface and browned around the edges, 40-45 minutes. Let cool 10 minutes.

Steps:

  • Start by preheating your oven to 400 degrees F.
  • Line a baking sheet with foil. Set aside.
  • In a large mixing bowl, combine flour, 1/2 cup sugar, salt, and baking powder. Whisk to combine.
  • Next, you want to add the butter to the flour mixture and stir lightly to combine.
  • Add boiling water to the flour-butter mixture to melt the butter, then stir to combine. Set aside.
  • In a separate mixing bowl, combine the cold water and cornstarch. Mix well. Add the blackberries, the remaining 1/2 cup sugar, vanilla, and cinnamon. Stir well.
  • In a 10-inch cast-iron skillet (or 8-by-8-inch baking dish), place the blackberry filling mixture. Cook over medium-high heat, stirring frequently, until bubbly and the berries begin to soften (about 6 to 8 minutes). Remove the pan from the heat.
  • By large spoonfuls, drop the batter onto the hot blackberry filling.
  • Place the skillet (or baking pan) on the prepared baking sheet, and bake for about 25 minutes or until golden brown.
  • Finally, Remove the cobbler and allow it to cool for about 15 to 20 minutes before serving.
