EASY CHOCOLATE BROWNIES
Recipe video above. These are my "go to" brownies, the one I have been making for years that's super easy and outrageously chocolatey. The best fudgey chocolatey brownies made without fuss, in one bowl in 10 minutes. These are not the cakey kind, they're soft fudgey kind. Super rich and moist!

Steps:
- Preheat oven to 180°C/350°F (160°C fan forced).
- Spray a 20cm/8" square tin with oil and line with baking/parchment paper with overhang (Note 2).
- Place butter and chocolate chips in a heatproof bowl, microwave in 30 second bursts (takes me 1m 30 sec) until melted. Stir until smooth.
- Add sugar and vanilla, mix, then add eggs and mix well until smooth and molten.
- Add flour, cocoa and salt and stir until smooth. Stir in chopped chocolate, pour into pan.
- Bake 24 minutes for really gooey in the centre, 28 minutes for fudgey but still very moist (my favourie, shown in video & photos), 32 minutes for moist fudge-cake-like. (See in post for toothpick testphotos).
- If you didn't use the extra chocolate for stirring in, reduce cook time by 2 minutes.
- Rest for 10 minutes before lifting out of the pan. Allow to cool for at least 20 minutes before cutting. Store in an airtight container for 4 days (bet they don't last that long!) or freeze for 3 months.

- *The recipe can be poured into any flat container. For the chocolate bar shape, I used this chocolate candy mold. Homemade Chocolate Bars: Gently warm oil if not already melted. Combine all ingredients in a bowl. Stir until it gets thick. Pour into any flat container or candy molds, or smush between layers of wax paper or in ziploc bags. SUPER EASY CHOCOLATE CHIP CARAMEL BARS
A coworker shared this recipe with me. I used to make something similar from scratch. This is so much simpler and just as satisfying! I actually used a 15x10 inch stoneware baking pan when I made this and used two packages of cookie dough. One package should be enough for a 13x9 inch pan.

Steps:
- Preheat oven to 350 degrees.
- Press cookie dough evenly into greased 13x9 inch pan.
- Bake 15-18 minutes or until light brown.
- Spread caramel evenly over top of cookie base while still hot.
- Sprinkle chips on top of caramel.
- Allow chips to soften and carefully spread.
- Cool, then refrigerate to set chocolate.
- Cut into bars.

- In a pan, heat the coconut oil, maple and almond milk. Switch off heat once it starts to bubble.
- Add the chocolate and mix. Let sit for 2 minute and then whisk until melted and smooth.
- Add the vanilla and salt and mix in.
- Pulse the pumpkin, chia, flax and hemp in a blender to make a coarse meal.
- Add the seed mixture and sesame seeds to the melted chocolate. Mix to combine.
- Add protein powder if using and mix.
- Spread on parchment using a spatula. Chill until set. slice and keep refrigerated for weeks.
- Or wrap individually and carry.

SUPER EASY CHOCOLATE BARS
From a Better Homes & Gardens booklet titled 20 Most-Requested Recipes - Cookies from 2006. These were definitely super easy to prepare and are pretty tasty too. I cut them into rounds with various sizes of biscuit cutters for a holiday cookie tray. Also easy to cut as the filling is fairly firm.

- Preheat oven to 350°.
- For CRUST, in large bowl, beat Butter with an electric mixer on medium to high speed for 30 seconds. Add Sugar and Salt; beat until combined.
- Add Flour; beat on low speed until combined. Press two-thirds of the crust mixture into the bottom of an ungreased 13x9x2-inch baking pan.
- For FILLING, in medium saucepan, combine Sweetened Condensed Milk and Chocolate Chips. Cook and stir over low heat until chocolate is melted. Remove from heat; stir in Nuts and Vanilla.
- Spread filling over unbaked crust. Sprinkle with remaining crust mixture.
- Bake for 30-35 minutes or until golden. Cool in pan on wire rack. Cut into bars.
- NOTE (as written in booklet): To cut professional-looking bars with nice even sides, let the baked mixture cool completely so the block has time to set up. For softer bars, refrigerate the baked block for a short time before cutting.
