A simple Buckeye recipe for deliciously decadent peanut butter chocolate candies.

2 cups creamy peanut butter (not "natural" peanut butter) ((475g))
½ cup salted butter (softened (113g))
2 Tablespoons brown sugar* (packed)
1 ¼ teaspoon vanilla extract
3 ¼ cups powdered sugar ((405g))
12 oz dark chocolate melting wafers ((340g))

Steps:

  • Combine peanut butter and butter in the bowl of a stand mixer and beat until well-combined.
  • Add brown sugar and vanilla extract. Stir well.
  • Gradually add powdered sugar until completely combined. Scoop into Tablespoon-sized balls and roll with the palms of your hand until smooth and round.**
  • Place on wax-paper lined cookie sheet and freeze for 15-20 minutes.
  • While peanut butter balls are chilling, prepare your chocolate according to package instructions. Pour into a deep dish (I use a wide cup).
  • Remove peanut butter balls from freezer, spear the top of each peanut butter ball with a toothpick and, holding the toothpick, dip each buckeye ball into the melted chocolate.
  • Return to cookie sheet and remove toothpick. Use the pads of your fingers to smooth over the toothpick mark.
  • Allow chocolate to harden before eating and enjoying.
  • Buckeye balls are best kept refrigerated.

An easy buckeye balls recipe using simple ingredients like peanut butter, pure maple syrup, almond flour and dark chocolate. Less than eight ingredients to make this easy classic recipe.

1 cup all-natural creamy peanut butter (just peanuts, nothing added)
1/4 cup pure maple syrup
1/2 tsp vanilla
1 cup + 2 TBSP Bob's Red Mill Super Fine Almond Flour
1/4 tsp salt (if using unsalted peanut butter)
8 ounces dark chocolate (equal to about 1 heaping cup chips)
1 tsp coconut oil (optional)

Steps:

  • In medium bowl combine peanut butter with maple syrup and vanilla extract until smooth. Add in Super Fine Almond Flour and salt, combining until dough forms (use hands at end as needed). You should have a soft cookie dough-like texture.
  • Using small cookie scoop (about 1 heaping tablespoon), scoop dough onto parchment lined baking sheet. Roll dough ball until smooth and place back on the baking sheet. Place in freezer for 20 minutes. After 20 minutes, roll again getting the balls really smooth, then place back in fridge while you melt chocolate.
  • Meanwhile, melt chocolate over low heat, stirring until smooth and fully melted. If you want a smoother chocolate, add coconut oil. Transfer chocolate to a heat proof small deep bowl (if possible - this will allow you to get a good dip in without messing with the dough ball too much).
  • Using a toothpick, dip peanut butter balls into melted chocolate and set back onto parchment paper baking sheet. Option to gently smooth over toothpick hole if you'd like.
  • Place cookie sheet in fridge until chocolate has fully set, about 15 minutes or so.
  • Buckeyes can be stored at room temperature or in fridge, in airtight container.

1 cup powdered sugar
10 ounces dark chocolate melting wafers ((or chocolate chips))

Steps:

  • In a small mixing bowl, mix together the softened butter, creamy peanut butter, and powdered sugar.
  • Take about a tablespoonful of the peanut butter mixture and begin to roll it between your hands. Shape it into as round of a ball as you can, and place it on a baking sheet lined with wax paper. Continue rolling the rest of the dough into balls.
  • Add toothpicks, for dipping, to each ball.
  • Chill the peanut butter balls in the fridge or freezer for about 30 minutes.
  • Add the chocolate to a microwave-safe measuring cup or bowl; and melt, starting at 30 seconds, then stirring every 15-20 seconds, 'til melted and smooth.
  • Remove the peanut butter balls from the freezer, and using the inserted toothpicks, dip every single peanut butter ball, partially immersing each one into the melted chocolate.
  • Chill the chocolate covered peanut butter balls in the fridge or freezer 'til set, probably about 15-20 minutes.
  • Then remove all the toothpicks and cover up the holes with your finger (optional step).
  • Store the buckeyes in a wax paper lined airtight container or festive Christmas tin in the fridge.

4 cups powdered sugar
3 cups chocolate chips (semi-sweet)
1 tablespoon shortening (or coconut oil)

Steps:

  • Combine peanut butter, butter and vanilla with a mixer on medium until fluffy.
  • Mix in powdered sugar a little bit at a time until incorporated. Chill mixture 30 minutes.
  • Roll into balls and place on a parchment lined pan. Chill mixture 30 minutes.
  • Combine chocolate chips and shortening in a small bowl. Microwave at 50% power for 1 minute. Stir and continue microwaving in 30 second increments just until melted.
  • Place a toothpick into each peanut butter ball and dip in chocolate leaving a little bit of the peanut butter peeking out the top.
  • Place on a parchment lined pan and chill.

This recipe is so good that I double it whenever I make it. Since it is peanut butter balls dipped in chocolate it is almost like candy. Real buckeyes are nuts that grow on trees and are related to the horse chestnut.

1 ½ cups peanut butter
1 cup butter, softened
½ teaspoon vanilla extract
6 cups confectioners' sugar
4 cups semisweet chocolate chips

Steps:

  • In a large bowl, mix together the peanut butter, butter, vanilla and confectioners' sugar. The dough will look dry. Roll into 1 inch balls and place on a waxed paper-lined cookie sheet.
  • Press a toothpick into the top of each ball (to be used later as the handle for dipping) and chill in freezer until firm, about 30 minutes.
  • Melt chocolate chips in a double boiler or in a bowl set over a pan of barely simmering water. Stir frequently until smooth.
  • Dip frozen peanut butter balls in chocolate holding onto the toothpick. Leave a small portion of peanut butter showing at the top to make them look like Buckeyes. Put back on the cookie sheet and refrigerate until serving.

All you need are four easy-to-find ingredients and a decent sweet tooth - we know you've got it all. It's never not the time to throw together this quick and easy dessert that's perfect for entertaining or even just for yourself!

½ cup melted butter, melted
1 ½ cups peanut butter
2 ½ cups powdered sugar
1 cup chocolate chips, enough for dipping

Steps:

  • Mix butter, peanut butter, and powdered sugar until well blended. More or less powdered sugar can be used to make mixture more or less dry.
  • Make 1 inch balls and freeze for about 20 minutes or until firm.
  • Microwave chocolate chips for 60 seconds, stopping every 15 seconds to check and stir. Adding some vegetable shortening can make the chocolate thinner and easier work with.
  • Remove balls from freezer and dip most of the way into the chocolate, coating all but a small circle on top. Using a toothpick for this works well but simply dipping it in and pulling it out with a fork also works. Place completed buckeyes on wax paper and allow to harden. Refrigerate if needed.

1 1/2 cups creamy peanut butter
1 cup butter (softened)
1/2 tsp vanilla extract
6 cups powdered sugar
4 cups semisweet chocolate chips

Steps:

  • Mix together your peanut butter, softened butter, vanilla and powdered sugar, in a large bowl. Roll into 1" balls and place on a cookie sheet, lined with wax paper. Press a toothpick into the top of each ball and chill in freezer for a minimum of 30 minutes, or until firm.
  • Just before removing from freezer, melt chocolate chips in a small sauce pan over lowest heat. Stir frequently until smooth.
  • Using your toothpick, dip each frozen peanut butter ball in chocolate, leaving a small portion of peanut butter showing at the top. Place on cookie sheet and remove toothpick. You may smooth over the hole left from the toothpick with your fingertip. Refrigerate until ready to serve.

2 cups creamy peanut butter
1 cup butter
4 1/2 cups powdered sugar
1/2 slab paraffin wax
12 ounces semi-sweet chocolate chips

Steps:

  • melt butter on low in a saucepan and then add powdered sugar. Pour mixture into a large mixing bowl and add peanutbutter. Chill until firm, them roll into balls. I use a melon baller for perfectly sized balls. Chill again until firm. While peanutbutter is chilling, melt paraffin and chocolate chips in a double boiler. (I grate paraffin and it makes it melt much faster). When peanutbutter balls are firm again, dip into chocolate using toothpicks or uncooked spaghetti! Store in airtight container with layers seperated by wax or parchment paper.

  • In a medium bowl, mix peanut butter and protein powder. You want it to be the consistency of cookie dough and not sticky at all. If it's sticky, add a bit more protein powder. Mix until combined and place in freezer for 30 minutes.
  • Remove bowl from freezer and line a cookie sheet with parchment paper. Roll into balls (mine made 24, but you pick how big you'd like them) and place on parchment covered cookie sheet. Stick a toothpick in the tops of each of the balls and place back in the freezer for another 30 minutes.
  • Add chocolate chips and coconut oil to a microwave-safe bowl. Melt in microwave in increments of 30 seconds; stir after the first 30 seconds and place back in for a second time. Remove and stir; it should be melted at this point. Be careful not to over heat.
  • Hold the toothpick of each ball and dip each of the frozen balls into the chocolate and cover 3/4 of the balls as show in images. Place back on parchment covered cookie sheet to dry. Once all of the balls are covered, place sheet back in the freezer for 15 minutes to harden.
