OLD FASHIONED CRISPY FRIED CHICKEN WINGS
This is a simple recipe for old fashioned crispy fried chicken wings. The brine gives these wings SO much flavor and makes tender, juicy wings that are perfect comfort food.

Steps:
- Wash the chicken under cool water, then place it in large bowl or container.
- Combine 4 cups cold water, 1 tbsp salt, and 2 tbsp sugar.
- Stir until the salt and sugar dissolve.
- Pour the brine ( sugar/salt/water) into the bowl or container with the chicken.
- Make sure that the chicken is covered with the brine.
- Cover the bowl/container, then place in the refrigerator for about 4 hours.
- Drain the brine from the bowl, but do not rinse the chicken.
- Season the chicken with the poultry seasoning, garlic powder, onion powder, and smoked paprika.
- Combine the all purpose flour, cornstarch, and 1/2 tsp salt.
- Pour the flour mixture into a large freezer bag, then toss in the chicken wings.
- Shake the bag, until the chicken is well coated with flour.
- Remove the chicken from the bag, and shake off any excess flour.
- Pour the oil into a large skillet, and let it heat up over medium heat for about 10 minutes.
- Carefully add in the chicken, and fry until golden brown.
- Place the chicken on a paper towel lined plate.
- Serve and enjoy!

- Pre-heat oven to 450 degrees F (232 degrees Celsius)
- If using frozen wings, thaw them first. An easy way to thaw wings is to place them in a large bowl and fill with water and this should get them thawed quicker. Drain well. Wash and dry your mid-section chicken wings. It is really important to get your wings EXTRA dry. We use paper towels to do this. Being vigilant about the drying process, makes for an extra crispy wing ding. In a sealable plastic bag, add your chicken wings, olive oil, seasoned salt, paprika, garlic powder and pepper. Shake well to make sure the marinade is evenly distributed among the wings. Place marinating chicken wings in the refrigerator on a plate (in case of leakage) to chill for at least 4 hours.
- Place chicken wings on a greased pan. (I have to emphasise that whole greased pan thing so do it well as they do like to stick. In addition when you go to turn them be careful so you don't rip off the delicious crispy skin as this is the best part.) I like to put my wings on the pan with skin side down first. If your family/friends like their wings spicy, then you can add a little sprinkle of Kick n Chicken spice or dried red pepper flakes to add a little punch. If you like them mild, like me, then these are just perfect as is.
- Turn the wings after about 25-30 minutes of baking. Bake for another 10-15 minutes or until the wings are super crispy on the top. Remove from oven.
- Serve wing dings hot out of the oven with your favorite beer or rootbeer for the kids. Enjoy!

- Preheat oven to 325 degrees F (165 degrees C). Line a jelly roll pan with aluminum foil and lightly brush with 1 teaspoon oil.
- Place wings in a single layer on the prepared pan, skin-side up, with a little space between each wing. Brush the top of each wing with the 1/3 cup oil. Brush hot sauce over the oil layer.
- Bake in the preheated oven, basting with pan juices a few times, until wings are browned, 1 1/2 to 1 3/4 hours. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Remove pan from oven and soak up excess grease with paper towels. Spread barbeque sauce over top side of wings.
- Return wings to oven and bake for 5 minutes. Spread a second layer of barbeque sauce over wings; bake for 5 minutes more.

- For the wings: Preheat your oven to 450 degrees F. Line a rimmed baking sheet with foil and brush the foil with the oil.
- Pat the wings dry with paper towels, then sprinkle with the baking powder and toss to evenly coat in a large mixing bowl. Spread the wings evenly on the prepared baking sheet. Bake until golden brown, crispy and cooked through, 25 to 30 minutes, flipping halfway through.
- For the dry rub: Combine the brown sugar, salt, black pepper, granulated sugar, paprika, chili powder, garlic powder, onion powder, cumin, cayenne and celery seeds in a small bowl.
- Remove the wings from the oven and add to another large mixing bowl. Season well with some of the rub, and then toss to coat. (Reserve the remaining rub for another use.) Serve immediately.

- Mix Parmesan cheese, bread crumbs, garlic powder, onion powder, black pepper, and salt in a bowl.
