PECAN PRALINE AMISH SUGAR COOKIES

- In a large mixing bowl, beat the butter, oil, and sugars until combined.
- Beat in eggs, vanilla, and caramel extract.
- In a large bowl, whisk together flour, baking soda, and cream of tartar.
- Gradually add flour mixture to the butter mixture, beating until just combined after each addition. Do not overmix.
- Line baking sheets with parchment paper or silicone baking mats.
- Drop dough by small teaspoonfuls onto baking sheets.
- Bake at 375 for 8-11 minutes, or until edges and bottoms are lightly browned.
- Remove to wire racks to cool.
- In a large saucepan over medium heat, melt the butter.
- Add brown sugar, vanilla, and caramel extract, whisking to combine.
- Bring to a simmer and cook until sugar is dissolved, stirring frequently, about 3 minutes.
- Add heavy cream.
- Bring to a boil, stirring constantly, then remove from heat.
- Cool for 3 minutes.
- Whisk or beat in 2 1/2 cups powdered sugar.
- Add additional powdered sugar, as needed, to achieve a thick, but spreadable consistency. Frosting sets quickly, but you can microwave it for 7-8 seconds (that's it) to thin it back out for spreading, as needed.
- Spread icing over cookies, sprinkle with pecan halves or chopped pecans, and allow to set.
PRALINE CRUNCH SNACK MIX RECIPE
Steps:
- Preheat the oven to 250ºF. Lightly coat a baking sheet or roasting pan with cooking spray.
- In a large bowl, combine cereal and pecans.
- In a medium saucepan over medium-high heat, combine brown sugar, corn syrup, and butter. Bring to a boil, stirring occasionally. Remove from the heat and stir in vanilla and baking soda. Pour over cereal mixture, tossing gently to coat evenly.
- Pour cereal mixture in the pan and spread out evenly. Bake for 1 hour, stirring every 15 minutes.
- Pour onto wax or parchment paper to cool. Break into pieces.

Steps:
- Prepare a muffin tin by filling with cupcake liners; set aside.
- Add all ingredients to a large pot over medium-high heat. Stir consistently as you bring to a boil.
- Use a candy thermometer to check the temperature - when it reads 235-240°F remove pan from heat. (This should take about 10 minutes or so).
- Use wooden spoon to vigorously stir the mixture, so that it thickens as it cools and starts to have a cloudier appearance. This should take anywhere from 2-5 minutes.
- While the mixture is still hot, use a cookie scoop to portion out the praline mixture into your muffin tin. You want to make sure to cover the bottom of each cupcake liner.
- Allow to cool completely until firm.
- Remove the cupcake liner before serving.

- 1. Heat oven to 250 degrees. Combine cereal and pecans in 13" x 9" pan. Set aside.
- 2. Combine corn syrup, brown, sugar, and butter in sauce pan. Cooke over medium to medium high heat until boiling. Remove from heat adn stir in vanilla and baking soda. Stir. Pour over cereal and stir to coat evenly.

- 1. Combine corn syrup, brown sugar and butter in microwave save bowl. Microwave on high for 1 1/2 minutes. Stir and microwave another 1/2 to 1 1/2 minutes (I did 1/2 only in new microwave) or until boiling.
- 2. Add vanilla (or other flavor) and baking soda and stir thoroughly. It will begin to foam. Pour mixture over pecans. Stir until coated evenly.
- 3. Spread on baking sheet lined with silpat or wax paper and bake at 250 degrees for 1 hour. Stir every 20 minutes. Cool before storing in container. Pecans will stick together but easily break apart into crunch size pieces.

- In a heavy saucepan, combine the sugars, water, honey and cinnamon. Bring to a boil over medium heat; do not stir. Cook over medium heat until a candy thermometer reads 240° (soft-ball stage). EASY CREAMY PECAN PRALINES
Steps:
- Gather the ingredients.
- Lay an 18-inch sheet of waxed paper or parchment paper on the countertop.
- Cut the butter into small pieces. Place the pieces of butter on a plate and put the plate in the freezer while you heat the ingredients.
- In a heavy medium saucepan, add the granulated sugar, brown sugar, and evaporated milk.
- Place the pan over medium heat, whisk to blend, and cook until the mixture reaches the soft-ball stage or 235 F when measured with a candy thermometer.
- Immediately remove the pan from the burner and stir in the frozen butter with a wooden spoon.
- Add the pecans and vanilla and continue stirring with a wooden spoon until the mixture is no longer shiny and thickens but is not too stiff. The candy should spread slightly when you spoon it onto the paper.
- Use a tablespoon to spoon mounds of the candy onto the waxed paper or parchment, making sure that there are pecans in each praline.
- Let the candy stand at room temperature until firm, about 30 minutes.

PRALINE PECAN CRUNCH SNACK MIX
In our family, we call this "Crunchy-Crunchy." My mother-in-law makes a big batch of this every Christmas. We receive it in the big box of gifts and my youngest is very excited to see "Grandma's Crunchy-Crunchy" snack mix. I sometimes make it myself, but it's more special to receive it from Grandma, you know? It is great for gift giving in a nice air-tight plastic container.
