- In a large soup kettle or Dutch oven, cook the sausage and beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes or until heated through.

SUPER DUPER CHILI
This is from a fall cookbook, it said it was submitted by Elizabeth Mays, Nunnelly, Tennessee. I have made it before and it is really good. I thought I'd post it here to share it and just in case I lost the book I'd have it here. Top with some sour cream, some white onions and shredded cheese. I should add that I replace the pork sausage for Hillshire Farm cocktail franks.

- Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned.
- Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, and salt.
- Add in tomatoes and both cans of beans.
- Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
- Taste for seasonings and adjust as you need to. Top with onions, cheese, and sour cream.
CHUCK'S SUPER CHILI
This chili is slightly sweet with a touch of heat; the wine gives it a different taste. Everyone in my family loves this chili. I've won a couple of work chili cook-offs with this recipe and done well in some larger cook-offs as well.

Steps:
- Heat a large skillet over medium-high heat and stir in Italian sausage and ground sirloin. Cook and stir until meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
- Transfer meat to a large Dutch oven; place over medium-high heat. Stir in chopped onion; add red, yellow, and green bell peppers, garlic, and jalapeno peppers. Cook and stir until onion is translucent, about 5 minutes.
- Mix in chili powder, brown sugar, cumin, tomato paste, oregano, salt, black pepper, and bay leaves. Cook and stir until fragrant, about 3 minutes more.
- Stirring constantly, pour in wine, chopped tomatoes and their juice, kidney beans, tomato sauce, and chopped chipotle chiles in sauce. Bring to a boil. Cover, reduce heat to low, and simmer, stirring occasionally, for 1 hour.
- Uncover and simmer, stirring occasionally, until thickened, about 30 minutes. Discard bay leaves before serving.

CROCK POT CHILI
As a mama of 5 with 3-4 kids at dinner every night and a hungry Army hubby (and occasionally 1 or 2 extra soldiers), quick and easy is ESSENTIAL !! I was raised in the south growing up, and it wasn't winter without a pot of Chili, soup or dumplings (and often) !! Nowadays, my crock pot is my lifeline. So, I adapted my mama's Chili recipe to fit my 7 oz. crock pot and feeds us for several days. It's pretty quick and very easy. You can keep it warming on the low setting while you're at work, too.

- 1. Combine cans & seasoning mix in crock pot and mix well. Start crock pot so that these ingredients can be warming. 2. Brown hamburger & chopped onions (for taste). 3. Drain hamburger & add to crock pot. 4. Mix well. 5. Warm in crock pot until desired temperature is reached (generally 3-4 hours). 6. Top with shredded cheese, sour cream & chopped onions. Serve with Fritos or Tostitos scoops.
