Categories     Desserts

Time 22m

Number Of Ingredients 10

1/2 cup unsweetened cocoa powder
1 cup white granulated sugar
1/2 cup melted butter
3 tablespoons vegetable oil
1 egg
2 teaspoons pure vanilla extract
1 1/3 cups all purpose flour (or plain flour)
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup semi sweet chocolate chips, ((add more if desired))

Steps:

  • Preheat oven to 350°F (175°C). Line 2 cookie sheets or baking trays with parchment paper (baking paper).
  • In a medium-sized bowl, mix together the cocoa powder, white sugar, butter and vegetable oil. Beat in egg and vanilla until fully incorporated.
  • Add the flour, baking powder, and salt; stir the dry ingredients first before mixing them through the wet ingredients until a dough forms (do not over beat). Fold in the chocolate chips.
  • Scoop out 1-2 tablespoonful of dough with a cookie scoop (or small ice cream scoop), and place onto prepared baking sheets. Press them down as thick or thin as you want your cookies to come out.

Time 3h27m

Number Of Ingredients 10

1 cup all-purpose flour (spooned and leveled)
2/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
10 tablespoons unsalted butter (softened (1 stick plus 2 tablespoons))
3/4 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla
1 cup chocolate chips

Steps:

  • Add the egg and vanilla and continue mixing until combined. Turn off the mixer and scrape down the sides of the bowl.

  • Cover the bowl with cling film and chill in the refrigerator for at least 3 hours or up to 48.

  • Bake cookies for 11-13 minutes until the tops are just set (or 8-10 minutes for smaller cookies). Remove from oven and let cool on the tray for 10 minutes before transferring to a wire rack to continue cooling. • Place the cold butter in the bowl of your electric stand mixer and beat until the butter forms a ball or lumb of butter. Add in the sugars and beat until combined. Add in each egg, one at a time, beating until combined. Beat in the vanilla extract. The batter may look curdled or lumpy at this time. Slowly add in the flour with the mixer on low speed. Beat until it is just combined – even before it all gets stirred in. Fold in the chopped dark chocolate.
  • Separate the dough into 10 or 12 equal balls. Take each ball and pull it apart, then press a small handful of chocolate chips and raspberries into one of the dough pieces. Cover it with the other half of the dough, forming a ball around the chocolate and raspberries and covering them completely. Place all the dough balls on a baking sheet and refrigerate for 1 hour.
  • Preheat the oven to 375 degrees F. Bake about 4 dough balls at a time – you want 2 inches on all sides between each piece of dough. Bake for 18 to 20 minutes, or until just slightly set. Let the cookies cool slightly before topping.

  • Preheat the oven to 350˚ F. Line baking sheets with parchment paper or silicone baking mats. In the bowl of an electric mixer, combine the butter and sugar. Beat together on medium-high speed until light and fluffy, 2-3 minutes. Because the butter is cold, it does take some time for the butter and sugar come together. Once well combined, blend in the eggs one at a time, scraping down the bowl as needed. Mix in the cocoa powder until well blended.
  • Add 1 1/4 cups of the flour, salt and baking powder to the bowl and mix on low speed just mixed. Add in remaining cup of flour and chocolate chips and mix until just combined, but do not over mix. Dough will be thick.
  • Scoop dough with a standard size levered ice cream scoop (or spoon out about 1/3 cup for each cookie). Place on the prepared baking sheets, a few inches apart.
  • Bake 13-15 minutes or until edges start to look fully cooked and the top of cookies does not depress if lightly touched. Let cool on the baking sheets 5-10 minutes, then transfer to a wire rack to cool completely. Store tightly covered.

  • Melt the chocolate and butter. Break up the chocolate and place into a large heat proof bowl. Cube the butter and add to the chocolate. Build a bain marie by setting the bowl over a pan of water. The water level needs to be shallow enough so that it doesn’t touch the base of the bowl. Set the bain marie on the hob over a medium heat. Allow the chocolate and butter to gently melt. Stir with a spatula regularly. Once completely melted, remove the bowl from the pan and sit onto a cloth for a couple of minutes.
  • Make the cookie dough. Lightly beat the two eggs and egg yolk together in a cup. Add to the melted chocolate mixture with the sugars and vanilla extract. Stir well with a wooden spoon until combined ensuring there are no lumps of sugar. Sieve the flour, cocoa powder andcornflour into the batter. Mix together well, checking the bottom of the mixture to ensure there are no pockets of flour. Leave the batter for 2 or 3 minutes to allow it to firm up a slightly.
