QUICK AND EASY CORN FRITTERS

Quick and Easy Corn Fritters image

Celebrate summer with a quick and easy recipe for corn fritters that can be made with fresh or frozen corn kernels.

Provided by Kelly Senyei

Time 15m

Number Of Ingredients 9

3 cups corn kernels (See Kelly's Note)
1 cup all-purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
2 large eggs, lightly beaten
3/4 cup heavy cream
Vegetable oil, for frying
Sliced scallions, for serving
Sour cream or garlic aioli, for serving

Steps:

  • In a large bowl, stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Stir in the eggs and heavy cream until the batter is well-combined.
  • Line a plate with paper towels. Coat the bottom of a large sauté pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.
  • Garnish the corn fritters with scallions and serve them with sour cream or garlic aioli for dipping.

CREAMED CORN FRITTERS

Creamed Corn Fritters image

Make these creamed corn fritters in a jiffy with canned creamed and canned sweet corn kernels. It's a simple snack that kids and adults will love. Fluffy and light, these are great to serve at brunch, with a salad, or as an appetizer for dinners.

Provided by Harriet

Categories     Mains     Snacks

Number Of Ingredients 11

190 grams (6.7 ounces) plain flour
1 ¾ level teaspoon baking powder
½ level teaspoon coriander powder
¼ level teaspoon cumin powder
1 x 400 gram (14 ounces) canned corn kernels (drained
1 x 400 gram (14 ounces) canned creamed corn
60 ml (1/4 cup) buttermilk
2 large eggs (beaten)
15 grams fresh chives (chopped (about 3 heaped tablespoons))
2 teaspoons salt or to taste
½ cup oil for frying

Steps:

  • Place the flour, baking powder, coriander, and cumin into a large mixing bowl. Use a spoon or whisk to mix the dry ingredients until well combined.
  • Make a well in the center of the flour, add the corn, milk, eggs, and chives.
  • Stir until the ingredients are well combined and there are no lumps.
  • Season to taste with salt and pepper.
  • Heat the oil in a frying pan until hot. The oil is ready when you drop a little of the batter into the oil and it starts to bubble around the edges.
  • Drop heaped tablespoons of the batter into the pan, spaced about 2 cm (0.7 inches) apart, flatten the tops of the fritters with the back of a spoon. See note 2
  • Fry for about 2 minutes on each side or until light and golden on both sides and cooked through. Lower the heat, if the fritters are browning too quickly to avoid burning.
  • When cooked remove from the pan and drain on absorbent paper.
  • Best eaten hot or warm.

EXTRA CRISPY CORN FRITTERS

Extra Crispy Corn Fritters image

Recipe video above. Sweet pops of fresh corn on the inside, very crispy on the outside. These heavenly fritters are light on batter, heavy on the corn - just the way they should be! Makes a lovely meal for 2 with a leafy green salad on the side, or a starter for 4.

Provided by Nagi

Categories     Breakfast     Mains     Starter

Number Of Ingredients 13

1/4 cup flour (, plain / all purpose)
1/4 cup cornflour / cornstarch
1/4 tsp baking soda ((or 3/4 tsp baking powder))
1 egg
2 tbsp milk ((any type))
2 cups fresh corn kernels (, raw (2 cobs) (canned or frozen also fine - Note 1))
1/2 cup parmesan (, finely grated)
3/4 cup green onions (, sliced)
1/2 cup coriander/cilantro (, roughly chopped (sub more green onion))
1/2 cup vegetable oil
Oil spray
Avocado sauce
Sour cream, ketchup ((don't judge until you've tried it!))

Steps:

  • Preheat oven to 120°C / 250°F and set a wire rack on a baking tray.
  • Place flour, cornflour and baking soda in a bowl, mix to combine.
  • Add egg and milk, mix until incorporated (batter will be lumpy and thick).
  • Add corn, parmesan, green onions and coriander. Mix until all the corn is evenly coated in batter.
  • Add enough oil into the skillet so it just covers the base. Heat over medium high heat.
  • Spray the underside of a spatula with oil (so batter won't stick when you flatten).
  • Place 1/4 cup batter into skillet (ice cream scooper with lever is handy), then flatten to 1cm thick. Repeat with 2 or 3 more, but don't crowd the skillet.
  • Cook 3 minutes until deep golden and crisp, then flip and cook the other side for 2 - 3 minutes.
  • Transfer to rack and keep warm in oven. Repeat with remaining fritters, using more oil as necessary.
  • Serve with sauce of choice for dunking!

CORN FRITTERS

Corn Fritters image

These easy Corn Fritters made from fresh sweet corn take only 25 minutes to cook from scratch. Make these as an appetizer or for an afternoon snack!

Provided by Kate

Categories     Appetizer     Lunch

Time 25m

Number Of Ingredients 8

3 cups corn kernels ((thawed, if using frozen, or 2 cans of corn, or 3 large ears of corn if using fresh))
1 jalapeño (seeds removed and finely diced (optional, skip this if you don't want any spice))
2 eggs
1 cup white whole wheat flour ((or all purpose flour))
2 tablespoons cilantro leaves (diced (or use any herb you like))
½ teaspoon salt (or more to taste)
2-4 tablespoons Olive oil for frying
Optional: Lime juice and extra cilantro for serving

Steps:

  • Mash the corn kernels in a large bowl using a potato masher or a mojito muddler until most corn kernels are broken and some juice comes out. You can also pulse the corn in a food processor for a few seconds just to break them - be careful not to over-process and turn them into creamed corn.
  • Add the rest of the ingredients (jalapeno through salt) and mix well. I just used the same mojito muddler for mixing everything together - no need to get a whisk or another utensil dirty!
  • Heat 1-2 tablespoons of olive oil in a pan. Use a heaping tablespoon or a melon baller to add the corn batter to the pan. Cook for about 3 minutes over medium heat, or until golden brown. Carefully flip and cook for another 3 minutes, or until the corn fritters are golden brown and cooked through.Serve with some fresh cilantro and a squeeze of lime juice.

SUPER QUICK CORN FRITTERS

Super Quick Corn Fritters image

This is the way my Mom made her corn fritters. I recently tried the recipe for myself & it still tasted as good as I remember!

Provided by RitaBean

Categories     Lunch/Snacks

Time 15m

Yield 12-15 2-3 per person, 5-6 serving(s)

Number Of Ingredients 6

1 1/2 cups pancake mix (I use Krusteaz brand)
1 (14 ounce) can creamed corn
2 eggs, beaten
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup frozen corn kernels, thawed (optional)

Steps:

  • Combine all ingredients in a mixing bowl.
  • In a large skillet, heat vegetable oil that is approximately 1/2 deep.
  • When ready, drop batter into hot oil by approximately 1 Tablespoon per (these will puff up right away). When they begin to brown around the edges, flip & cook for another 2-3 minutes. This usually takes me 2-3 batches to complete.
  • Remove from skillet & drain on paper towels. Serve while hot & crispy.
  • I like them best w/out powdered sugar (which is optional after frying) & use these as a side dish to a warm, hearty soup but they're also good on they're own, as a snack food. Enjoy!

CORN FRITTERS - IMMACULATE BITES
2019-05-22 Corn fritters are like fried cakes studded with corn kernels and held together by a thick batter. On the other hand, Hush Puppies are made entirely with cornmeal (or a mixture of cornmeal PLUS flour) and not with actual corn kernels. Most of the time they are deep-fried taking a round bite-sized shape instead of a patty form like the corn fritters.

  • Remove husk from corn and using a sharp knife, cut the kernels from the cob from top to bottom. It’s best to use a bundt pan to do so.
  • Microwave corn in bowl for about 5 -7 minutes. Or boil corn first, before removing from husk. Let it cool.
  • In a medium bowl, mix together all the dry ingredients: corn kernels, cornmeal, green onion, bell pepper, jalapeno, flour, minced garlic, cilantro, paprika , salt and pepper.
  • Then gently pour in milk. You might have to add about a tablespoon or more to form a thick batter.
