An extra tiny small batch recipe for extra chocolatey fudgy brownies.

1 ounce dark chocolate (chopped)
2 tbsp butter
1/2 tsp cocoa powder
2 tbsp tightly packed brown sugar
2 tbsp white sugar
1/2 large egg (see notes)
1/4 tsp vanilla
2 tbsp all purpose flour
tiny pinch of salt

Steps:

  • Heat the oven to 350°F. Lightly grease and line a mini loaf pan. I used a small 5.5 inch square pan but these will definitely work in a mini loaf pan. Set aside.
  • In a bowl, over a double boiler on medium to medium low heat, melt together the chocolate, butter, and cocoa, stirring with a spatula until melted and smooth. Set aside to cool.
  • In a medium bowl, whisk together the sugars, egg, and vanilla until lightly pale. Whisk in the slightly cooled chocolate butter mix.
  • Use a spatula to gently mix in the flour and salt, barely incorporating it and being careful not to over mix. One to two flour streaks are okay.
  • Scoop into the prepared pan and spread out. Bake for 20-24 minutes or until a toothpick in the middle comes out clean. Cool on a wire rack before slicing and enjoying!

1/4 teaspoon salt
1/4 cup cocoa
1/2 cup butter, softened
2 eggs
1 teaspoon vanilla
1/2 cup nuts, chopped (I like pecans)

Steps:

  • Preheat oven to 350 degrees.
  • Grease a square 8x8 pan.
  • Sift flour with sugar, salt, and cocoa.
  • Add Butter, eggs, and vanilla.
  • Use spoon and beat 100 strokes per minute for 3 minutes by hand or 2 minutes on medium speed with mixer.
  • Stir in nuts until evenly mixed through.
  • Pour into pan and spread out evenly.
  • Bake 20 to 22 minutes.
  • Cool and then cut.

¼ cup cut into 4 pieces salted butter
½ cup granulated sugar
1 large egg
½ tsp vanilla extract
¼ cup scoop and level to measure all-purpose flour
3 tbsp unsweetened cocoa powder
¼ cup or 3 tbsp mini chocolate chips chocolate chip

Steps:

  • Preheat the oven to 300 degrees F. Spray an 8x4-inch bread pan with non-stick cooking spray (or grease with some butter).
  • Place the butter in a microwave-safe bowl, cover, and heat in the microwave for about 30 seconds or more, until melted.
  • Let cool slightly while measuring out the remaining ingredients.
  • Mix in the sugar, then mix in the egg and vanilla extract.
  • Add the flour and cocoa powder, and mix just until combined. If adding chocolate chips, then add them once the dry ingredients are almost blended in.
  • Pour into the prepared baking dish and spread into an even layer. Bake in the preheated oven for about 19 to 23 minutes until set.
  • Let cool for about 15 to 20 minutes before cutting and serving.
