1 cup chopped onions
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. each black pepper and garlic powder
1 cup instant white rice, uncooked
1/2 cup PHILADELPHIA Chive & Onion Cream Cheese Spread
1-1/2 cups KRAFT Shredded Sharp Cheddar Cheese, divided
1 can (14.5 oz.) fat-free reduced-sodium chicken broth
3 cups cut-up fresh broccoli (1-1/2- to 2-inch pieces)

Steps:

  • Heat oil in large nonstick skillet on medium-high heat. Add onions; cook and stir 4 to 5 min. or until crisp-tender. Add chicken, pepper and garlic powder; cook 4 to 5 min. or until evenly browned, stirring frequently.
  • Add rice, cream cheese spread and 1/2 cup shredded cheese; mix well. Gradually stir in chicken broth. Bring to boil, stirring constantly.
  • Stir in broccoli; cover. Simmer on medium-low heat 10 to 12 min. or until broccoli is crisp-tender and chicken is done. Top with remaining shredded cheese; cook, covered, 2 to 3 min. or until cheese is melted.

My friend Christy and I were watching some movies one night and at intermission, decided it was dinner time. Her little boy, Damian was quite the picky tyke and we knew that feeding him would be what we based our meal on. Well, this was something we'd been meaning to try, so we gave it a go. Four adult and two little thumbs up! Easy, one large skillet, and not a lot of dishes to wash. It was also quick. This is something to throw together after working in the field all day too.

1 lb boneless chicken meat
1 (10 ounce) can cream of mushroom soup, undiluted
2 cups frozen broccoli, floweretts thawed
1/4 teaspoon paprika
1/4 teaspoon black pepper
2 cups Minute Rice, uncooked
1 (4 ounce) can mushroom pieces, chopped very fine and drained
1 1/2 cups water

Steps:

  • Heat a bit of oil in a large and fry the chicken until done. Shred or cut into bite-sized pieces, if desired. Remove from skillet and set aside.
  • Add the can of soup, water, paprika, and pepper. Bring to a boil. Add the broccoli, mushrooms, and rice inches Reduce heat to low and add chicken back in the skillet.
  • Cover and cook until the rice is done, anywhere from 5-10 minutes. Let rest a few minutes.

1 Tbsp. oil
1 whole chicken (3 lb.), cut up
3-1/2 cups water
2 chicken bouillon cubes
1-1/2 cups long-grain white rice, uncooked
3 cups fresh broccoli florets
1/2 lb. (8 oz.) VELVEETA, cut up

Steps:

  • Heat oil in large skillet on medium heat. Add chicken; cook 5 to 7 min. on each side or until browned on both sides. Remove chicken from skillet, reserving drippings in skillet.
  • Stir water into drippings in skillet. Add bouillon cubes. Bring to boil. Stir in rice. Top with chicken; cover. Reduce heat to medium-low; simmer 10 min. Add broccoli; cook an additional 10 min. or until chicken is cooked through (180°F). Remove chicken from skillet; cover to keep warm.
  • Add VELVEETA to ingredients remaining in skillet; mix lightly. Cook until VELVEETA is completely melted and mixture is well blended, stirring frequently. Return chicken to skillet; cover. Let stand 5 min. before serving.

Cheesy Chicken Broccoli Rice is an easy dinner recipe that is made in one pot on the stove. With only 6 simple ingredients like chicken, broccoli, rice, chicken broth, and cheddar cheese it can be on the table in just 30 minutes.

2 tablespoons olive oil
3 boneless, skinless chicken breasts ((cut into small, bite-sized pieces))
1 teaspoon salt
½ teaspoon pepper
1 cup uncooked basmati rice OR long-grain rice
2 ½ cups chicken broth
1 bag (12 oz) frozen steamable broccoli ((about 2 cups chopped broccoli))
2 cups shredded cheddar cheese

Steps:

  • In a 12-inch skillet pan (make sure it has a lid) over medium-high heat, add the olive oil, chicken, salt, and pepper.Cook 4-6 minutes, stirring frequently, until chicken is mostly non-pink in the middle. Chicken should be white on the outside. Drain the excess liquid and oil from the chicken.
  • Add rice and chicken broth. Bring to a boil. Once boiling, cover with lid, and reduce heat to medium-low. Simmer for 15 minutes or until water is absorbed and rice is cooked.
  • While rice and chicken is simmering, cook the microwaveable broccoli in the microwave following the instructions on package. Once done, chop up the broccoli into smaller pieces, if wanted.
  • When rice is done cooking, add broccoli and 1 cup of the cheese into the skillet pan. Stir together. Top with the remaining 1 cup shredded cheese and cover with the lid. Let cook for about 2 more minutes or until cheese is melted.
  • Serve immediately.

1 lb boneless skinless chicken breast (cut in small bite size pieces)
1 cup frozen chopped broccoli (thawed)
1 (6 7/8 ounce) package chicken rice-a-roni (rice-a-roni works best)
3 tablespoons margarine
1 tablespoon seasoning salt
1 teaspoon pepper
1 teaspoon oregano

Steps:

  • In small bowl, combine all spices; set aside.
  • In large skillet over medium heat, melt margarine.
  • Add chicken.
  • Sprinkle spice mix over chicken.
  • Stir to coat.
  • Saute chicken until lightly browned.
  • Do not drain.
  • In same skillet as chicken is in, cook rice according to package directions.
  • When adding water, also add broccoli.
  • Cover and turn heat to low.
  • Simmer for 15 minutes, or until water is absorbed.
  • Enjoy.
