SUPER EASY CHOCOLATE CUPCAKES
An easy chocolate cupcake that will cure any chocolate lover's craving. I find that, instead of using frosting, a bit of chocolate syrup on the top works best!

- Preheat oven to 350 degrees F (175 degrees C). Grease two 12 cup muffin pans or line with 18 paper baking cups.
- In a medium bowl, beat the shortening and sugar with an electric mixer until light and fluffy. Mix in the eggs, one at a time, then stir in vanilla, instant coffee and cayenne pepper. Combine the flour, cocoa, baking powder, baking soda and salt; stir into the batter, alternating with the water, just until blended. Spoon the batter into the prepared cups, dividing evenly.
- Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter and frost as desired.

SUPER BOWL CUPCAKES
I found this recipe in the newspaper and just had to try it. These cupcakes are so moist, and they are not sickening sweet like most chocolate cake is. The Stout really tones down the sweetness and allows for the frosting to accent the cupcake. Toppings are an option if you need that extra sweet or salty kick. I like them...

- 1. Preheat oven to 350°, spray 24 muffin cups or 48 mini muffin cups w/ non-stick spray or use paper liners.
- 2. In a large bowl, mix together the beer, sour cream, oil, eggs and cake mix. Mix well until smooth. Spoon mixture into prepared muffin cups and bake for 18-20 mins for regular or 12-14 mins for mini's or until toothpick inserted in center comes out clean. Allow to cool 5 mins then remove to wire rack to completely cool.
- 3. Meanwhile, prepare the frosting. In large bowl combine the butter and vanilla, beat well. Add sugar in 1 cup intervals until incorporated. Lastly add the Whiskey and beat til smooth and light. Frost cupcakes with desired amount of frosting. Keep any unused frosting in fridge. Bring leftover frosting to room temp and mix well before using.
- 4. Add toppings if desired and serve immediately. Crumble up bacon befor adding on top.
CABERNET CHOCOLATE CAKE WITH STRAWBERRIES
This is a very romantic cake. Great for Valentine's or anniversary. Or for any wine and chocolate lover. I make it as a bundt cake and actually only use half of the glaze as I don't like too much getting in my way when it comes to chocolate cake. (I eat the rest of the glaze on the left over strawberries) Also, I have used skim milk(!)instead of cream in the glaze and it turned out fine. Great cupcakes too.

- Preheat oven to 350.
- Grease and lightly flour cake pan(s).
- Mix eggs and mayo with electric mixer until smooth.
- Add wine and beat until combined.
- Add cake mix, salt and vanilla and beat for 3 minutes.
- Pour into pan(s) and bake according to box directions, but check 5-10 minute early as this cake tends to bake "fast".
- When cake is almost cool make glaze as follows:.
- Melt chocolate chips in microwave or double boiler being careful not to burn. If microwaving, start with about 45 sec., stir and continue in 10 sec. increments., stirring after each.
- Whisk in butter, cream, salt and vanilla one at a time.
- Cool slightly, then drizzle over cake.
- Arrange strawberries whole or sliced, whatever looks pretty to you, over and around the cake and drizzle a bit more chocolate over them if you like. The glaze and berries are a good combination on their own! Dust with powdered sugar if desired.

- Preheat the oven to 350. Spray a mini muffin tin pan with cooking spray and set aside.
- Mix the flour, sugar, cocoa powder, baking powder, baking soda and salt in a large bowl until well combined.
- Make a well in the center and add the applesauce, milk and vanilla. Stir until just combined.
- Toss the chocolate chips with the extra flour (this helps keep the from sinking in the batter and sticking to the bottom of the muffin tins). Fold the chocolate chips into the batter.
- Fill your mini muffin tins. Each muffin cup should be about 3/4 full.
- Bake at 350 for 14-16 minutes, until done.
- Let cool completely in pan before turning out. (Otherwise the chocolate chips can stick to the muffin pan instead of to the cupcakes. Sad.)

- Preheat oven to 350°F (180°C)
- Cream the butter and sugar until fluffy. Beat in 4 eggs, one at a time.
- In a separate bowl, mix the flour, cocoa powder, and baking soda. Alternate mixing half of the dry ingredients and buttermilk into the egg mixture.
- Line the bottom of a 9×13 (22x33 cm) glass dish with parchment paper, and grease. Pour in batter, and bake for 22-25 minutes.
- For the filling, mix the marshmallow fluff, butter, powdered sugar, and vanilla. Set a little aside, and color the rest.
- Cool completely, and with a 2-3 inch (5-7 c m) cookie cutter or biscuit cutter, cut 12 circles into the cake.
- Cut each cake in half horizontally, and scoop out a little cake out of each side. Fill, and stack the cake with the scooped sides in the middle.
- For the frosting, bring the cream and sugar to a boil, and pour over the chocolate chips and butter. Stir until there are no longer lumps.
- Spread the frosting over the top and sides of each cake. Let dry, flip, and cover the bottom with frosting.
- Pipe a football design on the top of the cake with the filling you set aside.

I got these recipe ingredients from Chef Bruce at the Red Rooster Cafe in New Braunfels, TX. I serve this sauce with fresh blackberries from my dad's garden. Layer in a wine glass, sweetened whipped cream, berries, sauce, then more whipped cream. Top with a berry and sprinkle with a little powdered sugar. So good!
