SUNSHINE SALAD DRESSING
This creamy honey-mustard salad dressing recipe is lightened up with Greek yogurt. No mayo here! It's so easy to whisk this dressing together. Recipe yields almost 1 1/2 cups and keeps well for 10 to 14 days.

- In a 2-cup liquid measuring cup or bowl, combine all of the ingredients as listed. Whisk until blended. Taste, and season with additional pepper if necessary.
- This dressing is intentionally bold, but if it tastes too tart for your liking, whisk in another tablespoon of honey.
- Store leftover salad dressing in the refrigerator, covered, for 10 to 14 days.

WEIGHT WATCHERS SUNSHINE SALAD
Yummy low points dessert. Very simple. 1 cup is 3 pts. I usually drain fruit juices into pudding mix first and then blend fruit in, it is just easier for me. You may also want to try this with SF FF Banana Cream Pudding.

- Drain pineapple and oranges, reserving juices. In a large bowl, combine pudding mix with reserved fruit juices. Fold in pineapple, oranges and strawberries; chill for at least 2 hours. Add bananas just before serving.

GRANDMA'S SUNSHINE SALAD
I don't know where Grandma got this recipe. It, and many like it, were popular back in the 1950's and 60's. It may have originated with the Jello Company. Every church supper and family gathering had a similar dish and everyone had their variations. This was one of my Grandma's favorites.

Steps:
- 1. Drain pineapple and set the pineapple aside for now. To the pineapple juice, add the lemon juice and enough cold water to equal one cup. Dissolve the jello with boiling water. Stir the pineapple juice mixture into the dissolved jello.
- 2. Pour the jello into a mold or a small square baking dish. Place it in the refrigerator and chill until it begins to thicken (about 45 minutes to 1 hour).
- 3. Add the reserved pineapple, shredded carrots, pecans and salt to the jello. Stir very well to combine the ingredients. Pour into a mold and chill until set (4 hours or overnight). To serve, cut into squares and top with a small dollop of mayonnaise (if desired).

SUNSHINE SALAD
This is a really good Jello Salad! This is a recipe out of our family cookbook that my cousin Vicki put together as a labor of love for her mom (dad's sister) for her 71st birthday in 1997. (Times are approximate, as I haven't timed how long this takes to make).

Steps:
- Drain pineapple, reserving juice; set aside.
- Dissolve Jello in 2 c hot water.
- Add 2 c cold water.
- Pour into 9 x 13 inch pan.
- When almost congealed, add one can of drained crushed pineapple.
- Add sliced bananas and miniature marshmallows; chill.
- In small saucepan, cook pineapple juice with 1/2 c sugar, 1 T cornstarch, and well-beaten egg.
- Cook until thick enough to spread; cool.
- Then add cream cheese and whip together.
- Spread on congealed Jello.
- Top with Cool Whip.
- Sprinkled with flaked coconut if desired.

- To cook the quinoa: Combine the rinsed quinoa and the water in a small saucepan. Bring the mixture to a boil over medium-high heat, then decrease the heat to maintain a gentle simmer. Cook until the quinoa has absorbed all of the water, about 12 to 15 minutes, reducing heat as time goes on to maintain a gentle simmer. Remove from heat, cover, and let the quinoa rest for 5 minutes, to give it time to fluff up.
- Meanwhile, toast the pepitas in a small skillet over medium heat, stirring frequently, until fragrant and making little popping noises, about 5 minutes. Set aside to cool.
- To make sure the onion flavor doesn't overwhelm the salad, rinse the sliced onion under running water, then let it drain well.
- In a large serving bowl (seriously, use your biggest bowl!), combine the shredded vegetables, drained onion and cilantro. Add the cooled quinoa and pepitas. Drizzle the dressing on top and toss to mix.
- Let the slaw rest for 20 minutes before serving (this is key to great flavor), then season to taste with salt, and stir in more dressing if desired. This slaw is best the day it's made, but it keeps well in the refrigerator, covered, for up to 4 days.
