- Drain citrus salad, reserving 1/4 cup juice. In a large bowl, combine the brown sugar, flour and reserved juice. Stir in citrus salad and oranges. Divide among six 6-oz. ramekins or custard cups; dot with butter., In a small bowl, combine the flour, 2 tablespoons sugar, baking powder and salt; cut in butter until mixture resembles coarse crumbs. Stir in egg and milk. Drop by spoonfuls over fruit mixture. Combine cinnamon and remaining sugar; sprinkle over tops., Bake at 425° for 15-18 minutes or until filling is bubbly and a toothpick inserted in topping comes out clean. Top each with a pecan half. Serve with cream if desired.

- Start by heating your oven to 350°F and placing the butter into the bottom of the dutch oven and placing this into the oven. Allow the butter to melt in the dutch oven. When it's melted, remove from the oven.
- Peel the peaches! You can do this easily by bringing a large pot of water to a boil and preparing an ice bath. When the water is boiling, gently lower the peaches into the pot and boil for 1 minute before removing the peaches and putting them into the ice bath. The skin should now easily peel off the flesh.
- Once the peaches have been peeled, cut into slices about ⅓" thick and place in a large bowl. Add the honey, cornstarch, vanilla, cinnamon, and ginger to the bowl and stir to combine.
- In a separate bowl, mix together all the dry ingredients. Then whisk in the milk and slowly pour the batter over the melted butter. DON'T STIR. Next, gently spoon the peaches and juice over the top of the batter. Then bake for 50-60 minutes or until the topping is golden brown on the edges and a toothpick inserted in the middle comes out clean. The topping is going to naturally rise up over the peaches so you have a beautiful cobbler on top of the fruit. Serve with whipped cream, ice cream, or even a dash of heavy cream and enjoy!

- In a large pot, combine plums and 1 1/2 cups granulated sugar. Leave over medium-low heat stirring occasionally, until the fruit release juices and becomes very tender, 12-15 minutes. Meanwhile, place a small place in the refrigerator to chill. You'll use this later to check the doneness of the jam.
- Puree plum mixture in pot, using an immersion blender (be careful of splashing), or remove from the pot and puree in a blender or food processor until relatively smooth. Return puree to the pot if you removed it, and cook over medium-low heat, stirring occasionally, until the mixture thickens and reduces by about half, about 10 minutes. You should end up with about 3 1/2 cups of plum jam. You can test the doneness by spooning a small amount of the jam onto the chilled plate, returning to the refrigerator and letting it sit for 2 minutes. It should keep a clean line when you run your finger through it.
- In a small bowl, whisk the remaining 1/3 cup granulated sugar with the cornstarch to combine. Whisk sugar-cornstarch mixture into the jam and cook, stirring occasionally until it simmers. Simmer for 1 minute, stirring well to prevent scorching. Stir in the vanilla extract and cool plum mixture to room temperature.
- Heat oven to 350 degrees and line a 9 x 13 inch pan with parchment paper with overhang on all sides. In a large bowl, combine oats, flour, whole wheat flour, brown sugar, salt and cinnamon. Add melted butter and stir until the mixture forms streusel-like crumbs. (I used a round pie pan and an 8 x 8-inch square pan, dividing layers between the two and baked them for 35 minutes.)
