Very easy and oh so good. Our family's favorite outside of Southern fried! Serve with rice and a fresh green vegetable for a complete meal.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Rinse the chicken pieces and place them, single layer and skin side up, in a 9x13 inch baking dish.
- Mix the soy sauce, ketchup, corn syrup and garlic powder in a small bowl. Baste the chicken with the sauce, reserving some sauce for basting during baking. Bake uncovered in the preheated oven, basting approximately every 15 minutes, for 1 hour (or until chicken is done and juices run clear).

Steps:
- Combine curry powder, 1/2 teaspoon salt and the pepper; rub over both sides of chicken. In a skillet, combine orange juice, rice, water, brown sugar, mustard and remaining salt. Add chicken pieces; bring to a boil. Reduce heat; cover and simmer until chicken juices run clear, 20-25 minutes. , Remove from the heat and let stand, covered, until all liquid is absorbed, about 5 minutes. Sprinkle with parsley.

- 1. Combine curry powder, 1/2 tsp. salt and pepper. Sprinkle over chicken and set aside.
- 2. In a 10" skillet, combine orange juice, water, rice, brown sugar, dry mustard and rest of salt; mix well.
- 3. Arrange chicken pieces over the rice mixture. Bring to a boil. Cover and simmer for 20 minutes and chicken is cooked through. Remove from heat and let stand until liquid is absorbed. Garnish with fresh parsley and serve.
SUNSHINE CHICKEN CRUNCHSTICKS
Steps:
- In a medium bowl, mix together bread crumbs, sunflower seeds, salt, paprika, cayenne pepper, white pepper and black pepper. In shallow dish, place egg. Dip chicken, one piece at a time, first in egg, and then roll in bread crumb mixture to coat. Place chicken in baking pan and drizzle with melted butter. Bake in 375 F oven 25 minutes or to an internal temperature of 180 F. Garnish with the red pepper strips and parsley. Serve Spicy mustard Yogurt Sauce in separate bowl.

- Preheat the oven to 190°C, fan 170°C, gas 5. Cut a deep slit into the side of each chicken breast. You want to create a pocket into which you can stuff the filling, but don't cut all the way through to the other side.
- In a bowl, combine the tomatoes with the lemon zest, basil, ricotta and seasoning. Stuff each chicken breast with a quarter of the ricotta mixture – being careful not to overfill them, as you need to seal them shut.
- Thread a cocktail stick back and forth between the open sides of each chicken breast to 'sew' it shut. This stops the ricotta mixture from escaping as it cooks. Wrap each chicken breast in sliced pancetta.
- Place the stuffed chicken breasts in a deep, lightly greased roasting tin (or line with baking paper). Cover with foil and bake for 25 minutes, removing the foil for the last 5 minutes, until the chicken is cooked through.
