You don't need an expert to tell you that watermelon is just about the most refreshing thing you could possibly eat in the middle of summer. Luckily, there are many worthy and refreshing things to do with watermelon that are somewhere between simple slicing and full-blown cooking.

1 pound watermelon
2 tablespoons sugar
2 tablespoons lime juice

Steps:

  • Cut the watermelon into small chunks (discarding the rind), and put them in a blender with the sugar and lime juice. Process until smooth, adding enough water (or fruit juice) so that the mixture liquefies. Pour into popsicle molds, and freeze.

These watermelon popsicles are SO easy and refreshing! I have no doubt you'll love them as much as we do. Plus, they're 100% fruit!

3 heaping cups cubed watermelon
1 heaping cup strawberries (fresh or frozen)
zest and juice of 1 lime

Steps:

  • Place all ingredients in a blender and puree until completely smooth.
  • Pour into popsicle molds and freeze 3-4 hours, or until very solid.
  • To remove popsicles from the mold, remove the lid and run each well of the popsicle mold under cold water for a few seconds. Gently wiggle the popsicle stick side to side to help loosen the popsicle from the mold. (If it's not budging, just run it under cold water for a few more seconds and try again)
  • Store frozen popsicles in an airtight freezer-safe bag for up to 2 weeks.

1/2 cup fresh raspberry (or frozen unsweetened raspberries, thawed)
6 tablespoons sugar
1 tablespoon fresh lemon juice
2 teaspoons fresh lemon juice
1 tablespoon light corn syrup (or for adults, creme de cassis- black currant flavored liqueur)

Steps:

  • Combine all ingredients in blender; puree until smooth. Strain into 2-cup glass measuring cup, pressing on solids to extract as much liquid as possible. Pour puree into Popsicle molds, dividing equally. Freeze overnight. (Can be prepared 1 week ahead. Keep frozen.).
