CUCUMBER SUNOMONO
A Japanese recipe for cucumbers marinated in vinegar, sugar, salt and ginger. Delicious and simple!

Steps:
- Cut cucumbers in half lengthwise and scoop out any large seeds. Slice crosswise into very thin slices.
- In a small bowl combine vinegar, sugar, salt and ginger. Mix well. Place cucumbers inside of the bowl, stir so that cucumbers are coated with the mixture. Refrigerate the bowl of cucumbers for at least 1 hour before serving.

This is an easy-peasy vinegared cucumber salad that I first had at a genuinely healthy fast-food chain here called Tokyo Joe's. Yummy, and oh, so healthy.

Steps:
- Place cucumbers in bowl with salt, mix thoroughly.
- Add shredded carrot and black sesame seeds.
- In a separate small container, dissolve raw sugar in lemon juice, add rice wine vinegar.
- Pour into bowl with cucumbers, carrots and sesame seed, mix well.
- Chill briefly in refrigerator, mix again before serving.

- Finely grind the peanuts in a food processor using the pulsing button. You want them to be very fine but be careful not to go too far and turn them into peanut butter!
- Thinly slice the cucumbers on the diagonal. If you would like to remove part of the peel first, you can run a zesting tool down the sides, or simply run the tines of a fork down the sides to create a decorative edge.
- Put the cucumbers in a bowl and toss with enough dressing to coat thoroughly, you may not need all of it. Toss with the crushed peanuts, sprinkle with chile flakes,and top with cilantro leaves. Serve immediately or chill until ready to serve. I like to serve this within a few hours of making, but it will keep overnight.
