Makes six 6 ounce balls for 6 individual small pizzas.
5 cups (22 1/2 oz) unbleached all-purpose flour
1 3/4 teaspoons salt
1 teaspoon dry yeast
1 3/4 plus 2 tablespoons cool water ((65F))
Topping:
1 pound fresh mozzarella
1 can ((15 oz) crushed tomatoes)
10-12 fresh basil leaves torn
1 tsp dried oregano
Optional - freshly ground black pepper and grated ((shredded) parmesan cheese)

Steps:

  • In the bowl of a stand mixer (or a large metal bowl) stir all ingredients together until well combined. If using a stand mixer fit it with the hook attachment and mix on low for 4 minutes. The flour should form a coarse ball. Let the dough rest for 5 minutes , then mix on medium for 2 more minutes, or until the dough clears the sides of the bowl and sticks just a little to the bottom. If the dough is too soft and sticky mix in some flour, if it is too stiff add some more water.
  • Transfer the dough to a floured surface, dust the top with flour and working from four corners fold the dough into a ball. Place in a bowl, that has been brushed with olive oil and cover with plastic wrap. Let it sit at room temperature for 1 hour, to double its size. Then punch a hole in the dough, reshape, place in a bowl and refrigerate for at least 2 hours. Remove dough from the fridge 2 hours before using. (The instructions might sound a little confusing, but the idea is that the dough expands and the gluten in it relaxes). Divide dough into 6 parts. Form 6 balls and brush them with olive oil.
  • Position an oven rack at the lower third of the oven and place pizza stone on it. Heat oven to 450F. Never place cold pizza stone in a hot oven, because it will crack. (If pizza stone is not available, brush pizza pan with some olive oil).
  • Stretch and shape pizza dough into circles, that will fit the pizza stone. Transfer to a well floured pizza peel (we don't want pizza to stick to stone). Spread crushed tomatoes into an even layer and top with mozzarella cheese slices.
  • Using a pizza peel transfer pizza to the pizza stone. (If using a pizza pan place pizza in the pan and place pan directly on the rack). Bake pizza until edges of the crust turn golden and cheese starts bubbling or for 10-15 minutes.
  • Sprinkle with some thorn basil and dried oregano, (you can add grated parmesan cheese), cut and enjoy!

When I was going to school at ASU, I was manager of a pizza and pasta joint called Sunnys. Since then the ownership has changed and last time I was there the pizza was awful but in its hey day watch out... My mom makes great dough but mine lacks so I buy a doughball for a buck down the street it's your option. Also the recipe shows for pepperoni but go nuts. Just remember, if you are using fresh spinach put it on under the cheese or it will burn.

1 (18 ounce) basic pizza dough (Ball)
1 cup mozzarella cheese (Shredded)
1 cup pepperoni
1 cup flour
1 cup cornmeal
1 dash olive oil
1 cup pizza sauce (Prepared)
1 cup canned stewed tomatoes
1/2 cup tomato paste
1 tablespoon oregano
1 tablespoon basil

Steps:

  • Rub handful of cornmeal on stone.
  • Put stone in oven, heat to 450.
  • Rub flour/cornmeal onto large surface to roll pie.
  • Roll out dough using pin or can or whatever.
  • Transfer to pizza peel letting dough hang over sides.
  • For Sauce, mix all sauce items in blender.
  • Refrigerate allowing to thicken.
  • With wooden spoon apply sauce to cover dough.
  • Add Cheese liberally, Add toppings.
  • Pull dough edges over to make crust
  • Sauce should be inside crust.
  • Turn heat down to 425 and transfer to stone.
  • Cook 13 minutes pushing down crust twice
  • Crust should be firm to touch.
  • Remove and let stand 5 minutes.
  • Cut into slices.

3 1/2 cups flour

  • Dough:.
  • 1. Mix Water and Yeast until dissolved.
  • 2. Let it sit for 5 minutes.
  • 3. Mix in Olive Oil, Flour, Salt and Sugar.
  • 4. Coat lightly with Olive Oil.
  • 5. Let rise for about 30 minutes.
  • Pizza:
  • 1. Spread the pizza out to fit the pan.
  • 2. Spread the tomato sauce on the dough.
  • 3. Sprinkle as much Mozarella cheese as you want over the sauce.
  • 4. Add any other ingredients you may want, ham, sausage or pepperoni.
  • Multiple veggies, etc.
  • 5. Put in preheated oven of 450 degrees.
  • 6. Bake for 10-15 Minutes.

Just a few simple ingredients are needed to make a homemade delicious BBQ Chicken Pizza from scratch. It's perfect for game day or a weeknight dinner!

1 pizza dough/crust (10-12 inch)
1 cup cooked cubed or shredded chicken (I grilled thin chicken cutlets and cut into small cubes)
¾ cup spicy bbq sauce
½ cup shredded Colby Monterey Jack Cheese
¼ small red onion (thinly sliced)
1 tablespoon chopped fresh cilantro leaves (garnish)

Steps:

  • Preheat your oven to the highest possible temperature (mine goes up to 550°F). If you're using a pizza stone, place it in the oven to preheat as well.
  • In a small bowl, combine the cooked chicken with half the bbq sauce.
  • Sprinkle the pizza peel with semolina to prevent the dough from sticking, then shape/stretch your dough gently with your hands into a 10 or 12-inch circle (don't use a rolling pin). Before adding any toppings, make sure that the pizza can slide off onto the pizza stone easily. If not, just lift it up gently and sprinkle with more semolina. Don't push the dough too hard, and start working it from the center. Leave the edges puffed up for a great pizza shape and bubbles.
  • Spread the remaining bbq sauce, add the chicken and spread it evenly. Top with shredded cheese and sliced onion.
  • Brush the edges of the pizza with olive oil and bake in the preheated oven for 4-5 minutes. Switch on the broiler and bake for 3-5 more minutes, keeping an eye on the pizza as it bubbles and browns.
  • Remove from the oven, allow to cool for 5-10 minutes. Garnish with chopped fresh cilantro. Slice and serve.

3 cups self-rising flour, plus more for rolling
2 cups plain Greek yogurt
1 heaping tablespoon garlic and herb seasoning blend
1 cup pizza sauce, BBQ sauce, pesto or Alfredo sauce
2 cups shredded mozzarella
3 toppings such as pepperoni, cooked sausage, garlic, onions and peppers, chopped rotisserie chicken, ham, pineapple, olives, etc.

Steps:

  • Preheat the oven to 400 degrees F.
  • For the dough: In a stand mixer with the paddle attachment, add the flour, yogurt and seasoning blend and mix until combined and tacky. Scrape off the dough from the paddle and replace the paddle with the kneading (dough hook) attachment. Sprinkle in a bit more flour and knead on medium until a ball forms. On a floured surface, roll out the dough to a big thin circle or divide the dough in half to make 2 pizzas.
  • For the toppings: Place the pizza on a baking sheet or pizza stone. Leaving a 1-inch border around the edge of the dough, top the pizza evenly with the sauce and cheese, then the selected toppings. Bake until the edges are golden brown, 8 to 12 minutes.
