S.O.S. (CREAMY HAMBURGER GRAVY) +VIDEO
S.O.S. also known as Creamy Hamburger Gravy is an old-school meal. This is a classic, simple and tasty meal that is reminiscent of military cooking!

Steps:
- In a medium sauce pan over medium high heat, brown the ground beef. Season with a little salt and pepper. Drain excess grease and set aside.
- Melt butter in the same sauce pan. Add flour and whisk until butter/flour mixture is bubbly.
- Add milk, salt, and pepper. Whisk continuously until thick and bubbly.
- Add cooked ground beef back in and stir.
- Taste and adjust seasoning as needed (I usually like a bit more pepper). If necessary, add a little more milk until it reaches your desired consistency.
- Serve over toast.

CREAMED BEEF FOR SOS
A Recipe that is always requested from my kids when they come and visit. I spent 20 years of my 28 years in the Air Force in the dining hall. I think I have perfected SOS (Creamed Beef).Very simple and quick. Serve over toast (Shingles) or biscuits or hashed brown potatoes. I know leaving the grease in is not real healthy but it really makes it tasty. If you use anything other then HAMBURGER or drain the grease it will not turn out.

My dad was in the Marine Corps and remembers eating this dish often. It's a simple recipe consisting of ground beef mixed with milk, margarine and beef broth. It's also good using ground sausage. Serve this dish over toast.

SUNNY'S COPYCAT SWEET AND SOUR BRUSSELS SPROUTS
This is my favorite copycat Brussels sprouts recipe, inspired by Chef Andrew Whitney at Dell 'Anima in New York City.

- Make the sauce. In a saucepan with straight sides on medium heat, add the balsamic vinegar, honey, rosemary, liquid smoke, a pinch of salt and a hefty grind of black pepper. Stir and cook on medium-low until it reduces and thickens into a sauce, about 20 minutes.
- Saute the veggies. In your largest pan on medium-high heat, add the oil and the Brussels, minus the reserved stray leaves. Cook the Brussels until they are a deep golden to dark caramelized color on most of the surface, 15 to 20 minutes. Season with salt and add the onions to the pan. Toss to cook, wilt and caramelize, keeping the pan hot, until the onions are lightly browned, 10 to 15 minutes. Add the reserved leaves and cook, tossing, until they become golden as well.
- Finish and serve. Add the pepitas and dried cherries to the pan and toss everything to combine and warm. Add the sauce and toss again. Season the pan with salt and serve.

- Melt butter in a large skillet over medium-high heat. Add ground beef and maple sausage, and cook until no longer pink. Gradually mix in flour, while stirring continuously, until the mixture is thick and pasty. You may not need all of the flour. Slowly whisk in the milk using a fork so that lumps do not form. Stir in bouillon. Continue cooking and stirring constantly until the mixture reaches your desired consistency. The longer it cooks, the thicker it will get.
- Toast slices of white bread, and top with the meat gravy. Garnish with a little fresh parsley, and serve.

MOM'S SOS (CREAMED BEEF ON TOAST)
My dad use to make this all the time. He called it shit on shingle and even though my mom disliked swearing she also referred to it as shit on shingle. I like this better than chipped beef. It is so easy and delicious.
